Steps:
- Line an 8x8-inch baking sheet with parchment paper, leaving a 2-inch overhang on two sides (which will make it easy to lift the bars out when it's time to slice them).
- Add the peanut butter and honey to a large heat-safe bowl. Warm in the microwave for 15-30 seconds, or until easy to stir. (This may not be necessary if you keep your peanut butter and honey at room temperature.) Stir together to combine.
- Add the cereal and vanilla, if using, to the bowl. Stir gently, but thoroughly, using a wooden spoon or spatula. It may take a minute or two to get the mixture evenly coated.
- Press mixture into the prepared baking pan, gently pressing evenly and into the corners.
- Chill for at least 20 minutes. Remove from the fridge, lift out using the parchment paper, and slice on a cutting board.
- Wrap each bar in plastic wrap (optional) and store in an airtight container in the fridge. Serve cold.

CEREAL BAR BITES
I use Nutragrain Cereal Bars for these delightful snacks. I know these bars probably aren't the healthiest, but this was a daily snack for me in high school when I played volleyball. While the other gals sat and ate a few snickers bars or something, I was munching these bites. These HAVE to be better for me than snickers bars! LOL Nutragrain bars are a soft, cereal bar. Ive never tried any other kind of bar except Nutragrain brand. My favorite bar flavors for this are mixed berry and strawberry!

1 MINUTE, NO BAKE, CEREAL BAR
My pantry is running very low on baking supplies, but I had a box of raisin-bran cereal that had too many raisins that I wanted to use up. So, I chose to adapt my other recipe: Recipe #357474 using what I had on hand. I think this turned out really nice and entirely different from the original version. I used peanut-hazelnut butter instead of peanut butter.

Steps:
- Add all the dry ingredients to a large bowl.
- In a separate (microwave safe) bowl, mix together the wet ingredients, then microwave them for about 20 to 30 seconds. This will make it easier to mix and add to the dry ingredients since it's really sticky!
- Pour wet ingredients into dry and mix! Keep mixing until the wet binding ingredients are as well distributed as possible.
- Put the mixture into a shallow pan and flatten it down. Place pan in fridge to let the bars chill/set.
- After about 30 minutes in the fridge (or you can wait until the next day - whatever works), cut them into bars, then wrap them up in foil and store back in the fridge (or in the freezer!) for easy grabbing and go-ing!
