Steps:
- Heat oven to 425ºF.
- Whisk eggs, dressing and milk until blended.
- Spray large ovenproof skillet with cooking spray. Add potatoes, fresh vegetables and sausage; cook on medium-high heat 3 min. or until heated through, stirring frequently.
- Add egg mixture; mix well. Cook on low heat (without stirring) 4 min. or until edge is set. Place in oven.
- Bake 15 min. or until knife inserted in center comes out clean, topping with cheese after 10 min.

- Preheat the broiler.
- Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
- In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs

- In a large cast-iron or other ovenproof skillet, cook sausage over medium heat until no longer pink. Remove and set aside. In the same skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. , In the drippings, saute potatoes and onion until tender. In a large bowl, whisk the eggs, parsley, salt and pepper. Return sausage and bacon to the skillet; top with egg mixture. , Cover and cook over low heat until eggs are almost set, 8-10 minutes. TURKEY SAUSAGE AND PEPPER SKILLET

- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch-thick diagonal slices; they will not be completely cooked at this point.
- Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on the vegetables. Mix in garlic and cook for 1 minute.
- Return sausage, and any accumulated juices, to the skillet. Season with crushed red pepper, salt and pepper and reduce heat to medium. Stir to combine and continue cooking until sausage is no longer pink in the center, about 2 minutes more.

ITALIAN SAUSAGE FRITTATA
This can be served for breakfast, brunch, lunch or dinner. It's a fairly simple recipe with ingredients that are easily found in the grocery store! I personally use the Spicy Turkey Italian Sausages when making this recipe although it calls for mild.

Steps:
- Preheat oven to 350 degrees.
- Brown sausage in sauce pan and drain.
- Spread evenly over bottom of 9 x 13 baking dish.
- Sauté mushrooms and garlic in butter until almost all liquid is absorbed (you can add a few dashes of white wine at this stage if you prefer.
- Spread mushrooms over sausage.
- Layer swiss chard and cheese over mushrooms.
- In bowl beat the eggs, milk and Dijon mustard and pour evenly over all.
- Place in oven on middle rack, bake uncovered for 1 hour, (or until middle is firm to touch).
- Remove from the oven, cover loosely with foil, and let stand 15-18 minutes. Divide and cut into serving sizes.
- Top with green onions or sour cream (or both) if you desire.

TURKEY SAUSAGE AND VEGETABLE FRITTATA SANDWICH
Steps:
- Cut bread horizontally in half. Cut out soft insides, leaving 1/2-inch-thick shells. Brush inside of bread shells with 1 tablespoon olive oil.
- Crumble sausage into large non-stick broilerproof skillet. Sauté over medium heat until brown, about 5 minutes. Transfer sausage to bowl. Add onion, zucchini, bell pepper, tomato and garlic to skillet and sauté until vegetables are tender and liquid evaporates, about 9 minutes. Mix in basil. Cool briefly.
- Preheat broiler. Beat eggs in large bowl to blend. Season with salt and pepper. Mix in sausage, then vegetable mixture. Heat remaining 2 tablespoons oil in same skillet over medium heat. Pour in egg mixture. Cover and cook until almost set, occasionally lifting edges to allow uncooked eggs to flow underneath, about 7 minutes.
- Sprinkle top of frittata with Parmesan. Broil until eggs are set in center and golden brown, about 3 minutes. Run spatula around edge of skillet to loosen frittata and slide into bottom shell of bread over, pressing to fit. Press top half of bread over. Cut into wedges and serve or wrap in foil and serve within 1 hour.

Delicious for brunch or a quick week-night dinner, this frittata with sausage, potatoes, and Parmesan cheese is topped with chopped tomato and sliced green onion.
