EASY TURKEY SHEPHERD'S PIE WITH VEGETABLES



Easy Turkey Shepherd's Pie with Vegetables image

This easy shepherd's pie is a hearty, delicious and quick dish perfect for a weeknight family dinner. Made with lean ground turkey as well as a generous amount of vegetables, this recipe is proof that great comfort food can also be healthy.

1½ pounds potatoes (peeled weight)
¼ cup+2 tsp milk
1 tablespoon butter
⅓ cup cheddar cheese (coarsely grated)
1.1 pounds ground turkey (approx. 7% fat)
1 onion (finely chopped)
1 celery stalk (small, finely chopped)
2 garlic cloves (finely chopped)
2 tablespoons olive oil
3 tablespoons white wine
2 medium carrots (peeled, diced)
2 tablespoons tomato puree
1½ tablespoons Worcestershire sauce
1 teaspoon dried thyme
1¼ cups chicken stock (hot)
¾ cup frozen peas
⅔ cup corn (from a can)
1 tablespoon flour
Sea salt and pepper to taste

Steps:

  • Peel and boil the potatoes in salted water, drain well, add the butter and milk and mash until smooth. Set aside.
  • While you are waiting for the potatoes to cook prepare the rest of the ingredients. In a pan heat up 2 tablespoons of oil, add the onion, garlic and celery and fry for 3 minutes until softened stirring often. Add the wine and cook for another minute.
  • Add the ground turkey and cook for 3 minutes mashing with a fork and breaking up the larger pieces. Add the cubed carrots, stock, Worcestershire sauce, thyme, tomato puree and pepper to taste, stir, cover and cook gently for 15 minutes stirring occasionally. In the meantime preheat the oven to 400 F/ 200 C/ gas mark 6.
  • Add the frozen peas and corn and scatter over the flour. Stir until the sauce thickens and starts bubbling. Remove from the heat and adjust the seasoning if needed.
  • Transfer the mixture into your casserole dish. Top with the mashed potatoes, scatter over the cheese and bake on the top oven shelf for 20-25 minutes until golden. Remove form the oven and serve.

2 tablespoons olive oil
3 shallots, minced (or some onions and garlic)
16 ounces fresh mushrooms, sliced
6 carrots, peeled and chopped (about 2 cups)
fresh herbs to taste (I used 1 sprig of rosemary, thyme, and a bay leaf)
2 tablespoons tomato paste
2 tablespoons flour
1/2 cup red wine
1-2 cups veggie broth
1 teaspoon salt (more or less to taste)
2 cups frozen peas
6 Yukon gold potatoes (about 2 pounds)
1/2 cup full fat Greek yogurt
1/4 cup butter or olive oil
salt to taste

Steps:

  • Make the mashed potatoes: Peel the potatoes. Boil them until fork tender (you want them to mash easily). Drain, mash, and mix in yogurt and butter. Season to taste. (You can also use the Instant Pot method which is quick and easy! That's what I do.)
  • In a large oven-safe pot, heat the oil over medium heat. Add shallots and sauté until fragrant. Add mushrooms, carrots, and whole herbs (you will pull the herbs out later). Sauté until carrots are softened.
  • Add tomato paste and flour to the pot and stir. Pour in the red wine (sizzzzle) and scrape all the browned bits off the bottom of the pan. Let the wine cook out for a minute or two. Slowly add the broth, stirring it in until a gravy starts to form. Season with salt. Simmer over low heat to get it thickened even further.
  • Remove the herbs. Stir in the peas, spread the mashed potatoes on top (brush with butter to be extra awesome), and bake for 15 minutes at 350. I finished mine on the broil setting for a few minutes to get it nice and brown on top.
  • Scoop up a hearty serving and live your best cozy life.

3 large potatoes, peeled
2 tablespoons butter, room temperature
¼ cup warm milk
1 tablespoon olive oil
1 onion, chopped
1 pound ground turkey
1 large carrot, shredded
1 (4.5 ounce) can sliced mushrooms
1 tablespoon chopped fresh parsley
¼ teaspoon dried thyme
1 clove garlic, minced
1 teaspoon chicken bouillon powder
1 tablespoon all-purpose flour
salt to taste
ground black pepper to taste

Steps:

  • Boil potatoes until tender, 15 to 20 minutes. While potatoes are cooking, gather other ingredients.
  • Mash potatoes with butter and milk. Season with salt and pepper to taste. Set aside.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a skillet over medium heat; stir in onion. Saute onion until it has softened and turned translucent, about 5 minutes. Stir in ground turkey, carrot, mushrooms, parsley, thyme, garlic, and chicken bouillon. Cook and stir until meat is broken up and cooked through. Add salt and pepper to taste. Stir in flour and cook for 1 minute more.
  • Transfer meat mixture to a deep dish pie pan or casserole dish. Spread mashed potatoes over meat, and swirl with a fork.
  • Bake in preheated oven until tops of mashed potatoes are lightly browned, about 30 minutes.

1 teaspoon salt and pepper
1 -2 medium carrot
1 medium turnip
1 small parsnip
1 large potato
2 tablespoons butter
2 tablespoons low-fat milk
1 teaspoon olive oil
1 lb ground turkey or 1 lb ground chicken
1 small onion, finely diced
2 garlic cloves, minced
2 tablespoons all-purpose flour
1 cup prepared broth
1 teaspoon Worcestershire sauce
8 ounces frozen mixed vegetables
1/3 cup parmesan cheese, for topping

Steps:

  • Peel and chop turnip, carrots, parsnip and potato.
  • Cover above vegetables in a pot with cold water, bring to boil.
  • Add salt to taste, boil 12-14 minutes until tender.
  • Drain, then return vegetables to pot over high.
  • Mash vegetables until mixture is dry and most of remaining liquid has evaporated, 3 to 4 min.
  • Mash in butter and milk. Keep warm.
  • Use a food processor for an even, smooth blend of vegetables.
  • Heat a large non-stick frying pan over medium.
  • Add oil, then onion and garlic. Cook until onion softens, 3 to 4 min.
  • Add the turkey. Cook, stirring often to break up meat, until no pink remains, about 5 minute Season.
  • Sprinkle flour over meat mixture and stir, Add tomato sauce, broth and Worcestershire. Boil, then reduce heat to medium-low.
  • Simmer, stirring occasionally, until mixture thickens, 8 to 10 min.
  • Stir in frozen mixed vegetables until warmed through, about 2 min.
  • Divide mixture into ramekins or a single 9x9 casserole dish.
  • Top meat with root vegetable mash, sprinkle parmesan cheese over top.
  • Cook at 350 degrees for 35 minutes or until bubbly and topping has browned.

1 yellow onion, chopped
1 clove garlic, minced
2 pounds dark and white meat ground turkey, 85% lean
1 1/2 teaspoons kosher salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1 cup leftover gravy
1/2 cup frozen corn, thawed
1/2 cup frozen baby lima beans, thawed
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
4 cups mashed potatoes
1 cup shredded Monterrey Jack cheese
2 large eggs, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the vegetable oil in a large cast-iron skillet over medium-high heat until very hot. Add the onions and cook until just starting to soften, about 4 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the ground turkey and then sprinkle in the salt, paprika and garlic powder. Cook, breaking up clumps of the turkey with a wooden spoon, until brown, about 6 minutes. Add the gravy, corn, lima beans, parsley, Worcestershire sauce and hot sauce. Reduce the heat to a simmer; simmer for about 3 minutes.
  • While the filling simmers, stir together the potatoes, cheese and eggs in a large bowl, making sure it is thoroughly mixed. Layer the potatoes on top of the filling in the skillet. Bake the shepherd's pie until bubbling and golden brown, 30 to 45 minutes.

For an all-in-one meal in single servings, you can divide the filling among four 9-ounce ramekins before topping it with the mashed potatoes. Bake on a baking sheet until the filling is bubbly around the edges and the potatoes are lightly browned, about 15 minutes.

2 cloves garlic, minced
1 carrot, finely diced
1 small onion, chopped
8 ounces ground turkey
1/2 teaspoon finely chopped fresh thyme

1 cup low-sodium chicken broth or stock
2 teaspoons all-purpose flour
1/2 cup frozen peas, thawed
Kosher salt and freshly ground black pepper
1 pound red-skinned potatoes, cubed
1/2 cup warm 2% milk
1/3 cup shredded sharp Cheddar
1 scallion, chopped
Freshly ground black pepper
Nonstick cooking spray

Steps:

  • Preheat the oven to 425 degrees F. Heat the oil in a medium ovenproof skillet over medium-high heat. Add the garlic, carrots and onions; cook until tender and beginning to brown, about 5 minutes. Add the turkey and thyme, and continue to cook, breaking the turkey up with a spoon, until the turkey is cooked through and lightly browned. Stir in the ketchup and cook until lightly caramelized. Stir the broth and flour together in a small bowl until smooth, and then pour into the skillet. Cook until thickened, about 2 minutes. Stir in the peas and season with 1/4 teaspoon salt.
  • Meanwhile, place the potatoes in a medium pot and cover with cold salted water. Bring to a boil, lower the heat and simmer until tender when pierced with a knife. Drain the potatoes and return to the pot over low heat. Stir the potatoes for a couple of minutes to dry them out. Add the milk, cheese and scallions, and mash until smooth. Season with salt and pepper.
  • Swirl the mashed potatoes over the filling. Lightly mist with nonstick cooking spray and bake until the potatoes are lightly browned and the turkey filling is bubbly around the edges, 10 to 15 minutes.

4 potatoes, cut into chunks
½ head cauliflower, separated into florets
2 cups chicken broth
salt and ground black pepper to taste
1 tablespoon olive oil
½ onion, chopped
3 carrots, shredded
1 ½ pounds ground turkey
1 ½ cups frozen peas
2 tablespoons low-sodium Worcestershire sauce

Steps:

  • Place the potatoes and cauliflower into a pot, then pour in the chicken broth. Add water to nearly cover the vegetables; bring to a boil. Reduce heat to low, and simmer until the potatoes and cauliflower are tender, about 20 minutes. Drain the potatoes and cauliflower, but keep about 1/2 cup of the cooking liquid. Separate the cooked potatoes into a large bowl. Transfer the cauliflower into a blender or food processor along with about 1/4 cup of the cooking liquid, and pulse until the cauliflower is thoroughly pureed. Spoon the blended cauliflower into the bowl with the potatoes, and mash together until the cauliflower and potatoes form a smooth, white mixture. Season the mixture with salt and black pepper. For a softer topping, stir in a few more spoonfuls of the cooking liquid.
  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x12-inch baking dish with cooking spray.
  • Heat the olive oil in a large skillet over medium heat, and cook the onion and carrots until the onion is translucent, about 5 minutes; stir in the ground turkey, and cook until the meat is no longer pink, breaking it up into small chunks as it cooks. Stir in peas and Worcestershire sauce, then cook until the meat has begun to brown, about 10 more minutes. If the filling mixture starts to look dried out, stir in a few spoonfuls of the cauliflower cooking liquid to keep it moist. Place the filling into the prepared baking dish, then smooth it out into an even layer. Top the filling with the mashed potato and cauliflower mixture, and spread with a fork, leaving little peaks and swirls in the topping.
  • Bake the pie in the preheated oven until the filling is bubbling, about 25 minutes. Turn on the oven's broiler, and broil the pie about 6 inches from the heat source until the mashed topping has browned, about 10 more minutes.

It's a versatile dish that I've made with frozen and/or fresh cauliflower and subsidized with a potato or two. The key here is just to not boil the cauliflower.

2 heads cauliflower, stemmed and chopped
¼ cup Greek yogurt
1 (14.5 ounce) can chicken broth, or as needed

2 (1.25 ounce) packages beefy onion soup mix
2 tablespoons all-purpose flour
¼ cup water, or as needed
2 (8 ounce) bags frozen corn

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a large skillet over medium heat. Add cauliflower and saute, stirring often to prevent it from getting too brown, until soft enough to mash with a fork, 8 to 10 minutes. Transfer to a large bowl, add Greek yogurt, and mash with a fork. Pour in chicken broth a little at a time, continuing to mash until fluffy and smooth. Season with salt and pepper.
  • Cook ground turkey and garlic in a large nonstick skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in soup mix and flour until combined, then slowly add water and stir until creamy but not runny. Simmer until thickened, 2 to 3 minutes.
  • Spread turkey mixture in the bottom of a 9x13-inch casserole dish. Layer with frozen corn, cauliflower mixture, and Cheddar cheese.
  • Bake in the preheated oven for 15 minutes. Sprinkle with french-fried onions and bake until browned, about 5 minutes more. Remove from the oven and allow to sit for a few minutes before serving.
