1 small eggplant, cut into 1/4-inch-thick rounds
1 small zucchini, cut into 1/4-inch-thick rounds
Kosher salt
3 tablespoons extra-virgin olive oil
4 turkey cutlets (about 1 1/4 pounds)
All-purpose flour, for dredging
2 tablespoons unsalted butter
2 plum tomatoes, chopped
1/2 cup dry white wine
1/4 cup roughly chopped fresh basil
4 thin slices fresh mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • Preheat the broiler. Season the eggplant and zucchini with salt. Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat. Add the eggplant in one layer and cook until browned, about 2 minutes per side. Transfer to paper towels. Add another 1 tablespoon olive oil, then repeat with the zucchini.
  • Season the turkey with salt and dredge lightly in flour. Heat the remaining 1 tablespoon olive oil in the skillet, then add the turkey and cook until browned, about 2 minutes per side. Transfer to a plate.
  • Heat 1 tablespoon butter in the skillet. Add the tomatoes; when they sizzle, add the wine and bring to a boil. Add 1/4 teaspoon salt. Return the turkey to the skillet; arrange the eggplant, zucchini and basil on the cutlets and spoon the tomatoes on top. Top with the mozzarella and parmesan. Cut the remaining 1 tablespoon butter into pieces and add to the skillet. Simmer until the turkey is cooked through, about 3 minutes. Transfer to the broiler; cook about 1 minute.

1/2 cup marinated sun-dried tomatoes packed in olive oil
4 ounces Parmigiano-Reggiano, shredded

Steps:

  • For the pesto aioli: Blend the parsley, basil, walnuts, pepper, garlic, egg, lemon zest and juice in a blender, then slowly drizzle in oil to make an aioli.
  • Finish aioli with shredded Parmesan and taste for seasoning (salt and pepper).
  • For the sandwich: Butter the rosemary-garlic bread generously. Top 4 pieces of bread (butter-side out) with half of the Cheddar, 4 tablespoons pesto aioli, the turkey, sun-dried tomatoes and the remaining Cheddar; close sandwiches with the remaining pieces of bread.
  • Heat a heavy griddle to 325 to 350 degrees F.
  • Sprinkle the Parmesan on the griddle in the shape of the bread, then immediately place the sandwich on the cheese. Use a griddle press or heavy weight (like another cast-iron pan) to press down and cook until the cheese is melty, 2 1/2 minutes per side . (If the Parmesan-crusted side does not release easily from the griddle with a spatula, give it another minute, then flip.) Slice on a bias and enjoy!

8 slices cheese, such as provolone or mozzarella
8 slices sandwich bread
1/2 cup marinara sauce
1/3 cup grated Parmesan cheese (about 1 ounce)
1/4 pound thinly sliced turkey breast
Unsalted butter, room temperature, for grilling

Steps:

  • Heat a medium nonstick skillet or a griddle over medium heat. Working on a clean surface, place a slice of cheese on top of each of 4 bread slices. Spread 1 to 2 tablespoons of marinara sauce over the cheese; sprinkle evenly with Parmesan. Layer each with turkey and a final slice of cheese. Top each sandwich with another bread slice, and lightly butter outsides.
  • Working in batches, grill sandwiches until bread is golden brown on the bottom, about 3 minutes. Using a spatula, turn sandwiches, and grill until other side is golden brown and cheese is melted, about 3 minutes more. Slice in half, and serve warm.

1/4 cup olive oil
1/2 teaspoon kosher salt
1/4 cup store-bought pesto
8 slices pullman white bread
1/4 cup marinara sauce
8 slices sliced mozzarella or provolone
8 thin slices smoked turkey
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
  • Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
  • Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.

1 cup Italian seasoned dry bread crumbs
¼ cup all-purpose flour

1 (17.5 ounce) package JENNIE-O TURKEY STORE® Turkey Breast Slices
3 tablespoons olive oil, or as needed
3 cloves garlic, peeled, halved
1 ½ cups prepared spaghetti sauce or spicy spaghetti sauce
1 ½ cups mozzarella cheese
¼ cup grated Parmesan cheese
1 tablespoon Chopped fresh basil

Steps:

  • Heat oven to 350 degrees. Beat together eggs and milk in a shallow pie plate or dish; place bread crumbs in another pie plate. Combine flour, salt and pepper in a plastic or paper bag. Add turkey slices to bag one at a time; shake to coat lightly with seasoned flour. Dip in egg mixture, letting excess drip off; roll in crumbs to coat lightly.
  • Heat 2 tablespoons oil in a large non-stick skillet over medium heat. Add garlic cloves; cook 1 minute. Push garlic to edges of skillet.
