Stuffed to the max with sliced turkey, crispy bacon, and cranberry sauce, this Bacon and Turkey Panini is very juicy and loaded with melted, gooey cheese!

4 slices bread ((rye, pumpernickel, or sourdough))
4 teaspoons butter
8 slices cooked bacon
1/2 cup cranberry sauce
8 ounces turkey breast, (sliced 1/4 inch thick)
8 slices cheese ((mozzarella, provolone, harvarti, brie, or cheddar, etc.))

Steps:

  • Butter two slices of bread and place them butter side down on a cutting board.
  • Next, add a layer of cheese to both slices.
  • Follow the cheese layer with slices of cooked bacon, sliced turkey, and then dollops of cranberry sauce.
  • Add another layer of cheese.
  • Top each sandwich with another slice of buttered bread. This time, the buttered side should be facing up.
  • Cook according to instructions in the notes section below.

12 slices sourdough bread, 1/2-inch thick
3 tablespoons butter, softened
3/4 lb deli turkey, thinly sliced
12 slices bacon, crisply cooked and broken in half
1 large tomatoes, sliced
6 slices colby-monterey jack cheese
1/4 cup ranch salad dressing
1 small avocado, mashed

Steps:

  • Spread one side of each bread slice with butter. Place 6 bread slices butter sides down; top with turkey, bacon, tomato, cheese and dressing. Top with remaining bread slices, butter sides up.
  • Cover and cook sandwiches in 12 inch skillet over medium heat 4 to 5 minutes, turning once, until bread is crisp and cheese is melted.

While the ingredients matter, and the candied bacon really adds a whole other level to your panini, the secret is in the mayo on the outside of the bread for the ultimate crust!

1 lb thick cut bacon
1/2 cup brown sugar
1/2 tsp cayenne (optional)
8 slices bread (I love Trader Joe's San Fran bread)
1/2-1 lb sliced turkey
1 tomato sliced
4-8 slices pepper jack cheese
1 avocado (sliced)
1/4 cup mayonnaise
mayo & mustard, optional, for sandwiches
lettuce, optional

Steps:

  • Prepare baking sheet with foil and place a cooling rack on top of the baking sheet; spray cooling rack lightly with cooking spray to prevent sticking. Set aside.
  • Coat bacon in brown sugar and line cooling rack with bacon slices.
  • Place in the cold oven set to 350. Bake for about 30 minutes or until the bacon reaches desired crispiness.
  • Allow to cool and harden at least 5 minutes before using.
  • Prepare bread by spreading mayonnaise on the outside of the slices.
  • Heat up panini maker; if using a grill pan, wait to heat the pan until your sandwiches are assembled.
  • Layer sandwiches with cheese on one side of the bread and make this the side you place down first. The cheese will stick to the bread making it easier to flip.
  • If you are using a grill pan, lightly spray the grill pay with cooking spray and place your sandwich(es) down on the pan; place a heavier pot on top to press the sandwich into the grill pan. If you are using a panini maker, place two sandwiches on the grill and gently close the top applying light pressure. (Do not press so hard that your fillings spill out.)
  • Monitor the bread for toastiness; remove from grill pan or panini maker when done.
  • Optional: I add lettuce and mayo/mustard to the inside of the bread on the slices without cheese once the paninis are done. Nobody likes hot lettuce!

8 slices white country bread (1/2-inch thick slices from round bread) or 8 slices sourdough bread (1/2-inch thick slices from round bread)
nonstick cooking spray
1/4 cup bottled mango chutney
8 ounces sliced turkey breast
1 small red onion, sliced
1 (12 ounce) jar roasted red peppers, drained
4 ounces jarlsberg cheese, sliced

Steps:

  • Heat a stovetop ridged grill pan, large nonstick skillet or electric contact grill.
  • Meanwhile, assemble paninis by laying bread on cutting board; coat with non-stick spray, turn over.
  • Spread 4 slices bread with 1 T chutney each.
  • Top remaining 4 slices bread with the turkey, onion, roasted peppers and cheese.
  • Cover with other slices bread, chutney side down.
  • Grill 4-5 minutes, turning once, until cheese melts.
  • Remove to cutting board and cut each panini in half crosswise.

This is my favorite sandwich! This also works well as a grilled wrap. YUMMM! Cruchy, creamy, and warm with just a little bite to it. I freeze small portions of minced/ pureed chipotle peppers in adobo so that I have them on hand for chipotle recipes and don't waste a whole can when I just need 1-2 peppers. 8 slices sourdough bread
1/4-1/2 cup mayonnaise
1 -2 tablespoon chipotle chile in adobo, pureed
8 slices cooked bacon
1/2 onion, thinly sliced
1 tomatoes, thinly sliced
1 lb sliced deli turkey or 1 lb chopped cooked turkey
4 slices monterey jack cheese
1/4 cup olive oil (or less)

Steps:

  • Preheat a panini grill (If you co not have a panini grill this can be done in a skillet or on your outdoor grill).
  • Stir together mayonnaise and chipotle chile sauce in a small bowl.
  • Stir half of the chipotle sauce in with the turkey.
  • Spread one side of each slice of sourdough with remaining chipotle sauce. Layer bottom halves with equal amounts turkey, onion, bacon, tomato and cheese. Top with remaining bread slices, forming 4 sandwiches.
  • Gently press sandwiches together with your hand. Brush both outer sides of sandwiches with olive oil; you will probably not use an entire 1/4 cup of olive oil.
  • Grill paninis about 5 minutes in the preheated grill, or until bread is golden brown and cheese is melted. Or heat them over medium-low heat, covered, in a large skillet for about 4 minutes on each side, until bread is toasted on both sides and sandwich is heated throughout.

This is one of my favorite sandwiches to make, I whipped it up one day when I was trying to use up leftover ingredients. My family raved! It's also excellent as a vegetarian sandwich if you leave out the turkey and bacon.

8 slices bacon
1 tablespoon butter
2 cloves garlic, minced
½ red onion, thinly sliced
3 cups fresh spinach leaves
½ cup reduced-fat mayonnaise
2 chipotle peppers in adobo sauce, minced
1 teaspoon adobo sauce from chipotle peppers
8 (4 inch) pieces focaccia bread
4 slices provolone cheese
½ pound sliced deli turkey meat

Steps:

  • Preheat a panini press according to manufacturer's instructions.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Meanwhile, melt the butter in a large skillet over medium heat. Cook and stir the garlic and onion until the onion has softened and turned translucent, about 10 minutes. Stir in the spinach and cook until wilted, about 3 minutes more.
  • While the onions and spinach are cooking, stir together the mayonnaise, minced chipotle peppers, and adobo sauce in a small bowl. Spread the mayonnaise over 4 slices of focaccia bread. Place a slice of cheese onto the 4 slices, then divide the turkey among the sandwiches. Place 2 strips of bacon onto each sandwich and top with the spinach mixture. Place the remaining slices of bread onto the sandwiches.
  • Cook the sandwiches in the preheated panini grill according to manufacturer's directions until crispy and golden brown, about 5 minutes.
