CHIPOTLE TURKEY MEATLOAF
If you like it even more spicy, replace the hot sauce with some additional chopped chipotle in adobo. Makes really good sandwiches the next day. Adapted from Cooking Lite.

- Preheat oven to 350°F.
- In a large bowl, combine chopped chile, onion, and next 14 ingredients - stirring to combine.
- Place turkey mixture in a 9x5-inch loaf pan coated with cooking spray.
- Bake, uncovered, at 350°F for 30 minutes.
- For topping, combine 1/4 cup tomato sauce, ketchup, and hot sauce or chipotle in a small bowl; brush mixture evenly over meatloaf.
- Cover and bake an additional 30 minutes or until thermometer registers 160°F.
- Let stand 10 minutes before slicing.

CHIPOTLE ( TURKEY ) MEATLOAF
From Cooking Light December 2005. It calls for 2 pounds of ground turkey. I made this for my husband using 1/2 turkey and 1/2 lean beef since he doesn't like turkey loaves - it gave it the flavor of beef while still lightening it up. He loved it.

Steps:
- Preheat oven to 350.
- Chop chile. Combine chile, adobo sauce, onion, and next 14 ingredients (through ground turkey breast) in a large bowl, stirring to combine.
- Place turkey mixture in a 9 x 5-inch loaf pan coated with cooking spray.
- Bake, uncovered, for 30 minutes.
- While loaf bakes, combine sauce ingredients in a small bowl; brush over meat loaf.
- Cover and bake an additional 30 minutes or until thermometer registers 160°.

TURKEY MEATLOAF WITH CHIPOTLE SAUCE AND CARMELIZED ONIONS
Steps:
- 1. Preheat oven to 400°F. Spray x 4 1/2 x 2 1/3-inch loaf pan with non-stick spray. 2. Toss bread bread crumbs with milk in large bowl. Let stand until bread absorbs broth and softens, about 10 minutes. 3. Saute shallots two minutes, then add mushrooms. Saute about five minutes until liquid is absorbed and add garlic; saute an additional minute. 4. Stir in fresh herbs, coarse salt, pepper, and 3 tablespoons of Maple Chipotle Grill Sauce. 5. In a large bowl, combine turkey; mix beaten egg into bread crumb mix and add to turkey; mix just until blended. Mix in mushroom and herb mix; blend well. Transfer to loaf pan coated with non-stick spray. Bake until thermometer inserted into center registers 170°F, about 55 minutes. Let rest 10 minutes before serving. 6. While meatloaf is resting, carmelize red onions by slowly sauteeing in 1 tablespoon olive oil and 1 tablespoon butter. 7. Top meatloaf with carmelized onions and serve.

- Preheat oven to 350 degrees.
- Place panko and milk in a large bowl; stir until well combined. Let stand 5 minutes.
- Add turkey, onions, eggs, 1/4 cup ketchup, parsley, mustard, salt, sage, and pepper to breadcrumb mixture. Gently mix until well combined. Transfer mixture to a 9 3/4-inch-by-5 3/4-inch loaf pan. Brush top with remaining 2 tablespoons ketchup.
- Transfer meatloaf to oven and bake, draining any accumulated juices as necessary, until it reaches 165 degrees on an instant-read thermometer, 1 1/2 to 1 3/4 hours. Serve immediately or use to prepare sandwiches.
MEATLOAF WITH CARAMELIZED ONIONS
I couldn't find a recipe on this site (or elsewhere) for basic meatloaf with caramelized onions in the mix-not meatloaf with a topping of caramelized onions or "stuffed". Because I wanted the caramelized onions to take center stage, for that reason, you won't find any tomato sauce, mushrooms, no cheese, no strips of bacon on top, etc. in this recipe. The recipe was found on lifeisaplate.com and modified to my specifications. You can substitute other types of ground meat or use other meat in combination: turkey, chicken, buffalo, turkey, etc. Use any preferable binder of your choice, for example-finely ground breadcrumbs, almond or walnut meal, masa harina, rice flour. Brown rice was the binder I chose and it was ground to medium-coarse consistency (similar to cornmeal). The recipe was cut in half because I like meatloaf on the small size and save the larger size when I am need of a doorstop.

- Melt the butter in a large pan on medium-low heat. Add the onions and sugar; cook until brown and sweet-approximately 20-30 minutes. Lower the heat if the onions are browning too quickly.
- In a large mixing bowl, combine the meatloaf ingredients with the caramelized onions (including all those browned bits at the bottom of the pan!); Do not overmix.
- Transfer the meatloaf mixture to an oiled or parchment-lined loaf pan. (I used a large soup spoon, patting the mixture down and into the corners of the pan. Use the back of the spoon to smooth the top of the loaf.) If desired, lightly sprinkle the top of the loaf with dried parsley.
- Bake at 375 for 45-60 minutes or until the meatloaf is not longer pink in the center.
- Servings are estimated. Cooking time includes caramelizing the onions.
