1 14.5 ounce can no-salt-added diced tomatoes
2 tablespoon no-salt-added tomato paste
1 tablespoon balsamic vinegar
2 cloves garlic, halved
1 teaspoon Italian seasoning, crushed
0.25 teaspoon crushed red pepper
0.25 teaspoon salt
1 egg, lightly beaten
0.667 cup soft whole grain or whole wheat bread crumbs*
12 ounce uncooked ground turkey breast
1 medium red sweet pepper, cut into thin strips
1 small sweet onion, cut into thin wedges
2 teaspoon olive oil
4 whole grain or whole wheat hot dog buns, toasted
1 ounce thinly sliced mozzarella cheese

Steps:

  • Preheat oven to 400°F. Coat a 15x10x1-inch baking pan with nonstick cooking spray; set aside. In a blender or food processor combine undrained diced tomatoes, tomato paste, vinegar, garlic, Italian seasoning, crushed red pepper and salt. Cover and blend or process until smooth.
  • In a large bowl combine the egg, 1/4 cup of the sauce, and bread crumbs. Add turkey and mix until combined. Form mixture into twelve 2-inch meatballs. Place meatballs in prepared baking pan. Bake about 15 minutes or until no longer pink (165°F).
  • Meanwhile, in a large skillet cook sweet pepper and onion in hot oil over medium heat about 8 minutes or until very tender, stirring occasionally. Stir in remaining sauce. Heat through. Add meatballs and stir gently to coat with sauce.
  • Increase oven temperature to broil. Broil split buns 4 to 5 inches from the heat for 1 minute. Line buns with cheese slices. Broil about 1 minute more or until cheese is melted and bread is toasted.
  • Place three meatballs in each bun. Top with sauce.

Turkey Meatballs:
2 pounds ground turkey
1 onion, grated
1 tablespoon minced garlic
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon fennel seeds
Salt and pepper, to taste
1 egg, lightly beaten (optional)
2 tablespoons olive oil
About 3 cups of your favorite tomato sauce
8 French rolls (each about 5 inches long and 3 inches wide); or 3 Italian breads (about 15 inches long and 3 inches wide), sliced into 3 pieces each, with the insides pulled out

Steps:

  • 1. Prepare the meatballs: Combine all the ingredients in a bowl. Form into 24 meatballs, about 1 1D2 inches in diameter.
  • 2. Heat 2 tablespoons oil in a 10-inch skillet over medium-high heat and cook the meatballs in batches, shaking the pan occasionally, for about 10 to 12 minutes or until browned and cooked through. Add more oil if necessary. Remove the meatballs to a paper towel to drain.
  • 3. Warm the tomato sauce over medium heat in another skillet. Add the meatballs and cook for 10 to 12 minutes, spooning sauce over them.
  • 4. To serve, spoon about 1/4 cup of tomato sauce into each roll, coating well; spoon 3 meatballs into each bread. Wrap the sandwiches in foil for the road.

Steps:

  • Make Tomato Sauce:
  • Purée tomatoes with their purée in a blender.
  • Heat oil in a large heavy pot over medium-high heat until it shimmers, then sauté onion until golden, 5 to 6 minutes. Add garlic and sauté 1 minute. Add tomato purée, sugar, and salt and simmer, uncovered, stirring occasionally, until thickened, 30 to 35 minutes.
  • Make Meatballs While Sauce Simmers:
  • Stir together bread crumbs and milk in a large bowl and let stand for 10 minutes.
  • Stir in eggs, cheese, garlic, parsley, oregano, and salt, then add turkey and blend with your hands until just combined well (do not overmix).
  • Form 1 1/2-tablespoon portions into meatballs and arrange on 2 well-oiled large, heavy, rimmed baking sheets.
  • Make Garlic Bread:
  • Stir together butter, oil, garlic, salt, cheese, parsley, and pepper in a bowl. Spread about 2 rounded teaspoons garlic butter onto both split sides of each bun. Arrange buns, buttered sides up, on a large baking sheet.
  • Broil Meatballs and Garlic Bread:
  • Preheat broiler.
  • Broil meatballs 3 to 4 inches from heat, turning over once, until golden and just cooked through (165°F on instant-read thermometer), 5 to 8 minutes.
  • Broil buns, buttered sides only, until golden, 30 seconds to 1 minute, watching closely (buns brown fast).
  • Assemble Heroes:
  • Spoon some sauce on each bun, then top with 4 meatballs (depending on size of buns), and drizzle with more sauce.

2 cups tomato sauce (recipe above)
1 pound perciatelli pasta
Salt and pepper to taste
Parmesan cheese-to serve on the side for grating

Steps:

  • Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.

2 to 3 teaspoons hot Madras curry powder (or regular curry powder mixed with 1/4 teaspoon cayenne)

Steps:

  • Preheat the broiler and line a baking sheet with foil. Combine the turkey, breadcrumbs, egg, 1/2 cup cilantro, grated onion, 2 teaspoons ginger and 1/2 teaspoon salt in a large bowl. Mix with your hands until just combined. Form into 20 meatballs (about 1 1/2 inches each); transfer to the prepared baking sheet. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion, bell pepper and a pinch of salt. Cook, stirring occasionally, until the vegetables are lightly browned and tender, about 5 minutes. Add the remaining 1 teaspoon ginger and the curry powder. Cook, stirring to coat, 1 minute. Add the tomatoes, 1 1/2 cups water and 1/4 teaspoon salt; bring to a simmer. Reduce the heat to low and cook until slightly thickened, about 3 minutes.
  • Meanwhile, broil the meatballs until lightly browned and just cooked through, about 5 minutes. Nestle the meatballs in the sauce. Cover and cook until the sauce is thickened, 7 minutes. 1 club size Italian rolls (about 5 inches long) or 1 French roll (about 5 inches long)
3 meatballs (leftover or frozen)
1/2 cup pizza sauce (or leftover Spaghetti sauce)
1/4 cup mozzarella cheese (you can also use sliced Provolone) or 1/4 cup pizza cheese (you can also use sliced Provolone)

Steps:

  • Slice roll as if making a sandwich but slice all the way through.
  • Place each half of the roll in the toaster.
  • While roll is toasting, heat up meatballs in sauce in the microwave.
  • When roll is toasted to your liking, place both halves on a micro safe plate, cut side up.
  • Spoon meatballs (I cut them in half) and sauce equally over each side and sprinkle with cheese.
  • Heat in microwave for about 10 seconds or until cheese starts to melt.
  • As neatly as possible put the sandwich together and press down slightly.
  • Allow to cool for a couple minutes and enjoy.
