These healthy and delicious turkey lettuce boats are quick and easy to make and full of so much flavour. They make a great appetiser for when you're cooking for friends and family or an equally satisfying lunch. They're delicious, light and a great low carbohydrate recipe. We've served ours with a dash of Greek yoghurt and some pumpkin seeds on top.

1 teaspoon olive oil
450 g turkey, lean, mince
2 gem lettuce, baby
2 garlic cloves
1 teaspoon mild chili powder
1 teaspoon ground cumin
1 teaspoon paprika
100 g tomatoes, chopped
60 ml chicken broth
1/2 avocado
1 tomatoes
2 spring onions
2 tablespoons Greek yogurt
1 tablespoon pumpkin seeds

Steps:

  • Heat the olive oil in a frying pan.
  • Crush the garlic cloves, then add into the pan along with the turkey mince and cook over a medium-high heat until the mince has whitened, gently breaking it up as you cook. (Approximately 5 minutes).
  • Add in the mild chilli powder, cumin, paprika, chopped tomatoes and chicken broth then stir until well combined. Once boiling - reduce the heat to a gentle simmer and leave for 5 minutes.
  • Meanwhile chop the avocado, tomato and spring onion into small chunks and peal the leaves from the lettuce.
  • Once the mince is ready, add 1 tablespoon of mince to each lettuce leaf, then top with avocado, tomato, spring onion, Greek yoghurt and pumpkin seeds to serve.

12 ounces ground turkey
2 teaspoons vegetable oil
8 ounces white mushrooms, chopped
3 scallions, chopped
2 cloves garlic, minced
One 6-ounce can water chestnuts, chopped
1/4 cup soy sauce
1 tablespoon brown sugar
1 tablespoon rice wine vinegar
3 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard or spicy mustard
1 tablespoon Sriracha sauce
1/2 teaspoon sesame oil
8 to 12 large iceberg lettuce leaves, cleaned and dry
Shredded carrots, for serving
Bean sprouts, for serving
Chopped fresh cilantro, for serving

Steps:

  • For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, scallions, garlic and water chestnuts, and cook until the mushrooms soften. In a small bowl, mix the soy sauce, brown sugar and vinegar, pour over the turkey mixture and cook 1 minute. Remove from the heat.
  • For the drizzling sauce: In a small bowl, whisk together the soy sauce, vinegar, honey, mustard, Sriracha, sesame oil and 1/4 cup water.
  • Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.

1¼ lb. fat-free lean ground turkey
1 Tbsp olive oil
1 clove garlic, minced
1/8 tsp. ground ginger
4 green onions, thinly sliced
1 (8 oz) can sliced water chestnuts, drained and coarsely chopped
3 Tbsp hoisin sauce
2 Tbsp lower-sodium soy sauce (green top)
1 Tbsp rice vinegar
2 tsp. roasted red chili paste
Pinch of salt
12 Boston lettuce leaves

Steps:

  • Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add turkey, garlic and ginger to the pan and cook for about 6 minutes or until turkey is browned. Stir to crumble.
  • Combine turkey mixture, onions and chopped water chestnuts in a large bowl, stirring well, and set aside.
  • Meanwhile in a small bowl, whisk together hoisin, soy sauce, rice vinegar and roasted red chili paste and drizzle over the turkey mixture. Toss to coat completely.
  • Add about ¼ cup turkey mixture to each lettuce leaf, serve and enjoy!

2 green onions ((chopped))
1 clove garlic ((minced))
3 Tablespoons hoisin sauce
2 Tablespoons low sodium soy sauce
1 Tablespoon rice wine vinegar
2 teaspoons red chili paste
12 butter lettuce leaves ((Boston and Iceberg lettuce will also work!))

Steps:

  • In a medium-sized skillet over medium-high heat, add the ground turkey. Cook and crumble until it is almost cooked throughout. Add carrots, mushrooms, water chestnuts, green onions, and garlic. Continue to cook for 1-2 minutes until turkey is cooked and veggies are tender.
  • Add the hoisin sauce, soy sauce, rice wine vinegar, and chili paste. Stir and let simmer for 1-2 minutes. Serve on butter lettuce leaves.

1 tbsp vegetable or sunflower oil
500g turkey mince (preferably breast)
2 carrots , finely chopped
225g can water chestnuts , drained and finely chopped
200g green beans , finely chopped
2cm piece ginger , peeled and grated
2 garlic cloves , crushed
3 tbsp soy sauce
2 iceberg lettuces , halved and leaves separated
6 tbsp sticky plum sauce or sweet chilli sauce , to serve

Steps:

  • In a large wok or frying pan, heat the oil and fry the turkey mince until browned and cooked through. Transfer to a bowl and set aside.
  • Tip the carrots, water chestnuts and beans into the pan and stir-fry for 2 mins. Add the ginger and garlic, drizzle over the soy and stir-fry for 1-2 mins more. Add the mince and stir-fry until hot. Season to taste.
  • To serve, pile the turkey and veg into lettuce leaf 'cups' and drizzle over the plum or chilli sauce.

A copycat recipe from Damn Delicious with very few changes . So easy to fix at home, I was amazed ! This smells so great cooking that is it a good thing it is ready in less than 10 minutes. Instead of Butter Lettuce leaves, I use Large Romaine leaves that you can easily load and enjoy ! I serve with brown rice , which helps you make sure you get every little bit of this awesome filling.

1 lb ground turkey

1/4 cup hoisin sauce

  • Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes. Stir in diced chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
  • To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.
