This Grilled Turkey Cranberry Cream Cheese Sandwich is the perfect light meal after a decadent Thanksgiving or Christmas dinner. Creamy and tart on the inside, toasty on the outside. It's worth cooking chicken for all on its own!

2 slices bread
turkey or chicken (leftovers work great for this!)
cranberry sauce
Stuffing ((optional))
1 tbsp cream cheese ((softened))
1 tbsp mayo
1 tsp butter

Steps:

  • Spread a light coat of mayo on each slice of bread.
  • One one side, spread the softened cream cheese. On the other side pile on some stuffing (if you're using it) and press it down.
  • Spread cranberry sauce on top of the cream cheese. I like a lot, but you can use less if you want. Press sliced turkey or chicken onto stuffing.
  • Assemble sandwich. Heat a frying pan over medium-low heat and melt 1/2 a teaspoon of butter in it. Place sandwich on the melted butter and butter the top half.
  • Cook slowly until the bottom is golden brown, then flip and cook the other side until it's brown and the middle is warmed and deliciously melty.
  • Serve hot and enjoy! :)

4 large whole-wheat sandwich wrap
¼ cup sweetened dried cranberries (such as Craisins®), or to taste
12 slices turkey lunch meat
1 cup fresh spinach, or to taste

Steps:

  • Spread 1/4 of the cream cheese onto the middle of one side of each sandwich wrap. Sprinkle 1 tablespoon cranberries onto the cheese on each wrap. Arrange 3 slices turkey atop each wrap to cover most of the wrap. Spread 1/4 cup spinach atop the turkey.
  • Starting with one edge of a wrap, tightly roll the wrap around the fillings into a cylinder; cut into 1 1/4-inch slices and arrange onto a serving platter.

2 cups cooked turkey meat, shredded
1 to 1 1/2 cups mayonnaise
2 tablespoons coarse ground dijon mustard
1 celery rib, diced thinly
1/2 cup almonds, lightly toasted

For the sandwich:
1 cup whole cranberry sauce
4 ounces whipped cream cheese
Butter lettuce & Raddichio Lettuces
Microgreens (arugula, kale, red kale, etc.)
8 slices whole wheat bread

Steps:

  • In a medium mixing bowl, stir all ingredients for the salad together until thoroughly combined.
  • Spoon turkey salad onto the other 4 slices of bread. Top with lettuces and microgreens.
  • Spread 1 ounce of cream cheese on 4 slices of bread. Top with a few spoonfuls of cranberry sauce and place on top of the lettuces.

I think that my three favorite things about Thanksgiving are family time, the meal and LEFTOVERS! This is the perfect sandwich to refuel after shopping. I really liked the cream cheese addition. It really complements the turkey and cranberry.

2 slice bread
2 Tbsp cream cheese, softened
2 Tbsp cranberry sauce (I use my homemade cranberry relish)
1 Tbsp low-fat mayonnaise (optional--I usually omit it, but most of my family prefers it)
2 slice cooked turkey (great use of your leftover thanksgiving turkey)
1/2 tsp salt
1/2 tsp black pepper
1 romaine lettuce leaf

Steps:

  • 1. Lightly toast both slices of bread. Spread cream cheese on both halves while bread is still hot, so the cream cheese melts justly slightly. Add mayonnaise, if you wish.
  • 2. Spread cranberry sauce on both slices of toasted bread with cranberry sauce (or cranberry relish).
  • 3. Top one toasted slice with cooked turkey meat and season with salt and pepper. Then top with Romaine lettuce leaf. Place the other slice of bread over the Romaine lettuce. Cut the sandwich in half diagonally.
  • 4. Serve with re-heated leftover Thanksgiving stuffing or re-heated mashed potatoes and gravy.

1 1/2 cups white whole wheat flour
2 teaspoons baking powder
1/2 teaspoon Kosher salt
2 Tablespoons sugar
1/3 cup unsalted butter
1 1/2 cups lukewarm buttermilk
1 large egg
1 teaspoon vanilla extract
Leftover sliced turkey
Leftover Cranberry Sauce
Cream Cheese
Arugula
Powdered sugar, for dusting (optional)

Steps:

  • Heat your waffle iron to high heat.
  • Combine flour, baking powder, salt, and sugar in a medium bowl.
  • Melt the butter in the microwave in a large measuring cup. Add the buttermilk to the hot melted butter mixture and whisk together. Whisk in the egg and vanilla.
  • Add the wet ingredients to the dry ingredients and stir until just combined. The batter will be a little lumpy.
  • Pour batter into the heated waffle iron until it just covers the outside edges (always better to err on the side of too little batter rather than HUGE mess on your counter).
  • Remove waffles when they're browned and crispy on the outside and place in a single layer on a baking sheet. I got 6 waffles out of this batter, which will make 12 sandwiches. If you don't want that many sandwiches, you can wrap the extra waffles in saran wrap, place in a freezer safe bag, and save them for breakfast another day.
  • Preheat the oven to 300 degrees.
  • Break the waffles into fourths. Smear cream cheese all over one side of the waffles, then spread cranberry sauce on top of that. Place slices of turkey on the cranberry sauce followed by the arugula. Top with another quarter of a waffle, then place the sandwich back on the baking sheet.
  • Repeat with remaining sandwiches. Place the sandwiches in the preheated oven for about 10 minutes or until warmed through. Sprinkle with sifted powdered sugar, if desired, then serve.

2 Tbsp. chopped pecans
½ pound deli turkey, thinly sliced
1 cup baby spinach

  • Spread softened cream cheese over each tortilla, leaving ½ around all sides.. Top with cranberry sauce and spread using the back of a spoon or spatula. Again, stay away from the edges. Otherwise it will squish out when you roll your pinwheel sandwich.
  • Sprinkle chopped pecans over the cranberry sauce. Lay turkey slices and spinach on top, leaving ½ inch border.
  • To roll pinwheels, begin at one side and begin to roll. Make sure to hold the turkey in place as you roll or it may slide as you roll. I know, this sounds weird but once you start rolling, you'll be like, "Oh, that's what farm girl meant!"
  • Wrap the entire roll in plastic wrap and chill for 30 minutes before slicing into half inch rounds using a sharp knife.

6 tablespoons chilled whole berry or jellied cranberry sauce (may substitute with raspberry jam)

1/2 cup (about 12 pods) sugar snap peas (cut on a diagonal into 1-inch size pieces)

Steps:
