Instant Pot Turkey Chili With White Beans image

Instant Pot Turkey Chili With White Beans gives you the big, bold flavor you crave with a fraction of the fat. This recipe makes a WW (formerly Weight Watchers) friendly meal.

Provided by Deborah T

Categories     Soup

Time 1h5m

Number Of Ingredients 15

15 ounces of dry Great Northern beans, rinsed
16 ounce package of 99% fat-free ground turkey
28 ounce can of canned tomato sauce
15 ounce can of reduced sodium chicken broth
1 jalapeno pepper, finely chopped, seeded and ribs removed
1 medium to large yellow sweet onion, chopped
10 ounce can of diced tomatoes with green chiles (Rotel is one brand name)
3 1/2 teaspoons of chili powder
3 1/2 teaspoons of garlic powder
2 teaspoons of salt
2 teaspoons of onion powder
3 teaspoons of black pepper
2 teaspoons on ground cumin
2 teaspoons of smoky paprika
1/2 teaspoon of cayenne pepper

Steps:

  • Put the turkey into the inner liner of your Instant Pot. Set it to the browning cycle. Use a fork or spatula to break up the turkey as it cooks. Use a turkey baster to remove excess fat that cooks out. If you use 99% lean meat, as recommended, you will have very little fat to pull out of the pot.
  • Add in all the remaining ingredients, stir.
  • Close the lid and steam valve, as stated in the unit's instruction manual.
  • Set the Instant Pot to the bean/chili mode, and press the "more" button to set the chili to run for a full forty minutes (to ensure the beans cook fully).
  • When the timer chirps, release the steam. Remove the lid and stir the ingredients.

Time 1h5m

Number Of Ingredients 21

3 poblano chili peppers
2 tbsp olive oil
1 tbsp tomato paste
1½ tsp cumin
1½ tsp dried oregano
1½ tsp chili powder
1 tsp smoked paprika
⅛ tsp cayenne pepper
1 large white onion (diced)
1 red bell pepper (diced)
1 tsp kosher salt
fresh cracked black pepper
4 cloves garlic (minced)
4 oz Simply Organic Spicy (or mild) Guacamole Mix Sauce (or salsa verde)
3 cup cooked turkey meat* (cubed or shredded)
2 cans cannellini beans (15 oz cans) (or other white beans)
1 can pumpkin puree (15 oz can) (not pie mix)
3½ cups chicken stock
1 bay leaf
⅓ cup half-and-half
2 tbsp corn meal (or masa)

Steps:

  • Begin by roasting the poblanos: set your oven to broil and place a rack about 6 inches below the broiler element. Place clean poblanos on a sheet pan and into the oven. Broil them for a couple minutes on each side, using tongs to flip them over. Keep an eye on them as it doesn't take long to char the skin.
  • Once charred all over, transfer them to a bowl and cover with cling film or a silicone cover so they steam for about 10 minutes. You should then be able to peel away the skin quite easily. Remove the stem and the seeds and discard. Chop the peppers and set aside.
  • Place a soup pot or dutch oven over medium heat. Add olive oil. Add tomato paste, cumin, oregano, chili powder, paprika, and cayenne and sauté for a minute or two until the spices are toasted and fragrant.
  • Add the onion, bell pepper and kosher salt (and more olive oil if needed). Cook until the vegetables start to become tender, then add the garlic and poblano. Sauté for another couple minutes.
  • Add the guacamole mix, turkey, beans, pumpkin, chicken stock and bay leaf. Mix well and bring to a boil, then reduce heat and simmer for 20 minutes.
  • In a small measuring cup, add cornmeal (or masa) to half-and-half and whisk with a fork. Add this to the chili at the end of the 20 minutes. Stir well and continue to simmer until the chili thickens, about 3-5 more minutes.
  • Remove the bay leaf. Serve with your favorite garnishes.

TURKEY CHILI WITH WHITE BEANS

Turkey Chili With White Beans image

I was never much of a fan of the traditional hamburger and kidney bean chilis. Then I found this recipe and this chili is now the only one I make. It was originally from Bon Appetit but I've modified it to our tastes. I would never have thought that cocoa powder or cinnamon would go into a Chili recipe but I think that's what makes this chili so good. This chili can be prepared ahead of time and reheated in the microwave. And like most chilis tastes better once the flavors have a chance to blend.

TURKEY WHITE BEAN CHILI

Turkey White Bean Chili image

Turkey white bean chili is an easy way to satisfy a comfort food craving. In this recipe, ground turkey, white beans vegetables and spices come together to make a delicious chili.

Provided by Elizabeth

Categories     Main Course

Time 1h20m

Number Of Ingredients 13

1 tablespoon Chili Powder
1 teaspoon Salt
½ teaspoon Garlic Powder
½ teaspoon Ground Cumin
¼ teaspoon Black Pepper
Pinch Cayenne Pepper (optional)
1 tablespoon Oil (use a flavorless oil with a high smoke point (we use canola oil))
1 Medium Onion (finely diced (use yellow or white))
3-4 Garlic Cloves (minced)
1 Pound Ground Turkey (we used 85/15 but 97/3 will also work well)
2 cups Chicken Broth
14 - 14.5 ounce can Diced Tomatoes
15 - 16 ounce can Cannellini Beans ((white kidney beans) drained and rinsed)

Steps:

  • Prepare a seasoning mix: add the chili powder, salt, garlic powder, cumin, black pepper and cayenne pepper (if using) to a small bowl. Stir to combine well.
  • Heat the oil in a large pot over medium heat. Add the onions and cook 4-5 minutes, stirring frequently.
  • Add the garlic and cook 1 minute, stirring frequently.
  • Raise the heat to medium-high and immediately add the ground turkey and sprinkle with the prepared seasoning mix. Stir well to combine the turkey with the onions and spices.
  • Arrange the turkey into a layer and cook for 3 minutes.
  • Stir well and break-up any large pieces. Arrange it into a layer again, cook for another 2-3 minutes, or until browned and any liquid rendered has cooked away.
  • Add the diced tomatoes, white beans and chicken broth to the pot. Stir well.
  • Bring the liquid to a boil (it will take about 4-5 minutes to start boiling), then lower the heat to medium-low, cover and simmer the chili for 30 minutes. Stir occasionally.
  • Uncover the pot and cook for an additional 10-20 minutes or until the chili thickens and is saucy, not soupy. How long this will take depends on how much liquid is left after the initial cooking time. Keep an eye on it and stir it often, especially as it starts to thicken, to prevent sticking on the bottom.
  • Taste the chili and add salt if needed. As a reference we did not add extra to ours.

  • Bring broth to a simmer in a large Dutch oven or other heavy pot. Meanwhile, remove and discard stems from ancho, guajillo, and pasilla chiles. Tear flesh into a few pieces, letting seeds fall out. Transfer to a blender. Add hot broth and cover blender; let sit until chiles are softened, 25–30 minutes. Add chipotle chiles and blend on high speed until smooth, about 1 minute; set aside.
  • Heat 2 Tbsp. oil in same pot over medium-high. Season turkey all over with salt. Add half of turkey to pot and smash down with a wooden spoon to flatten against surface of pot and break into smaller clumps. Cook, undisturbed, until underside is browned, top side is no longer pink, and most of the liquid is cooked off, 8–10 minutes. Using a slotted spoon, transfer to a plate. Repeat with another 2 Tbsp. oil and remaining turkey.
  • Heat remaining 2 Tbsp. oil in same pot over medium. Add onions and garlic; season with salt and stir to combine. Cover pot and cook, stirring occasionally, until onions are translucent, very soft, and starting to brown around the edges, 10–12 minutes. Add cumin and oregano and cook, stirring frequently, until fragrant and sizzling, about 1 minute. Add tomato paste and cook, stirring to coat vegetables, until paste darkens slightly, about 1 minute. Add cider, cinnamon, and bay leaves and scrape up any brown bits stuck to bottom of pot (if you’re not using cider, skip this step and increase water in next step to 5 cups). Bring to a lively simmer and cook, stirring occasionally, until liquid is mostly reduced, about 5 minutes.
  • Add reserved chile purée, beans, and maple syrup. Add 4 cups water to blender, swish around to loosen any remaining purée, then pour into pot; season with salt. Bring to a boil, reduce heat to medium-low, and gently simmer, partially covered and stirring occasionally, until liquid is thickened and very flavorful, about 1 hour. Add turkey and simmer until flavors have melded, about 30 minutes longer.
