SPAGHETTI WITH QUICK TURKEY CHILI

Steps:
- Bring a large pot of salted water to a boil. Meanwhile, heat the olive oil in a large nonstick skillet over medium heat. Add the scallion whites and garlic and cook, stirring, until soft, 1 to 2 minutes. Add the tomato paste and chili powder and cook, stirring frequently, until the mixture is brick red, 2 to 3 minutes. Add the turkey and stir, breaking up the meat, until almost cooked through, about 4 minutes. Add the chicken broth, beans and ketchup; bring to a simmer and cook until the chili is slightly thickened but still soupy, 12 to 15 minutes. Stir in the scallion greens and hot sauce.
- Meanwhile, add the pasta to the boiling water and cook as the label directs, then drain. Divide among bowls and top with the chili, cheese and sour cream.

- Prepare the pasta according to package directions, drain.
- Spray a 13 x 9 inch pan with cooking spray; set aside.
- Preheat oven to 350 degrees.
- Cook the meat and onion in a large sillet; drain.
- Add the chili powder, undrained tomatoes, tomato sauce, salsa and chilies to the meat mixture.
- Cook an additional 5 minutes; add the cooked pasta to the mixture; mixing well.
- Pour into prepared dish, top with cheese and bake in preheated oven for 20 minutes or until bubbly and cheese has thoroughly melted.

- In a large pot, heat olive oil. Saute onion and bell peppers unti onions become translucent and peppers soften. Add the turkey and crumble. If there is excess fat, drain. Add chili powder, grill season, cumin, and Worcestershire. Add beer and deglaze the pan, scraping up the drippings and cooking off the alcohol. Add the tomato and barbecue sauces. Simmer for ten minutes. Spoon into bowls and top with cheese and other garnishes.

TRADITIONAL CHILI WITH GROUND TURKEY
A traditional style chili that can be made with ground turkey or ground beef. I have made this recipe with ground beef and ground turkey, and they both have a similar flavor. Delicious with sweet corn bread and shredded Cheddar cheese. After the initial cooking on the stove, you can easily transfer this to a slow cooker.

- Heat olive oil in a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the onion, green and red bell peppers, and jalapeno peppers. Cook and stir until the onion is softened and translucent, about 8 minutes. - Heat the canola oil in a large pot or Dutch oven over medium heat. Add the onion and a pinch of kosher salt and saute, stirring with a wooden spoon, for about 2 minutes, or until translucent. Add the garlic and bell pepper and saute for 1 minute. Add the chili powder, cumin, and cayenne and cook for at least 1 minute so that they bloom.
- Add the tomato paste and cook for 1 or 2 minutes to deepen its flavor.
- Add the turkey and switch tools from a wooden spoon to a whisk. Cook the turkey, breaking up any large chunks with the whisk as you cook, for 5 minutes, or until browned.
- Add the tomatoes, 3 cups of the stock, and the cocoa powder and bring to a simmer, whisking to make sure the cocoa powder is thoroughly dissolved and combined. Add the beans and bring the chili to a simmer.
- Cover the pot with a lid or foil and cook the chili for 1 hour. Taste the chili after 1 hour and adjust the seasoning. If the chili is too thick for your liking, add a bit more chicken stock.
- Serve in deep bowls topped with sour cream, sliced scallions, and grated Cheddar, if desired.

- In a large pot over medium heat saute the onion, garlic and ground turkey until turkey is browned.
- Add tomatoes, pepper, cumin, chili powder, oregano, cinnamon, brown sugar and cayenne pepper.
- Saute for 5 more minutes.
- Add black beans, corn and chicken broth to the pot.
- Puree cannellini beans in a blender or food processor.
- Add puree to the pot.
- Stir well and simmer for 10 minutes.
- If the turkey mixture seems dry when browning, add a splash of olive oil.
- The spice measurements are approximate.
- If you want more or less heat, adjust the cayenne and the hot sauce.
- If desired, garnish with sour cream, shredded cheese or green onions.
