- Heat oil in a large saucepan over medium-high heat. Add turkey, bell peppers, onion, celery and garlic; cook until meat is brown, using a wooden spoon to break up meat as it cooks. Drain, if needed.

- Heat 1 tablespoon olive oil in a large pot over medium heat. Saute onion, carrot, and celery for 10 minutes. Add garlic and cook for an additional 2 minutes. Remove with a slotted spoon and set aside.
- Heat remaining olive oil in the pan and add ground turkey. Cook and stir until browned and crumbly, 5 to 7 minutes. Add the vegetables back in. Add brushed tomatoes, broth, and uncooked rice. Season with chili powder, Worcestershire, oregano, garlic-pepper seasoning, paprika, cumin, and pepper; bring to a boil. Cover and lower heat to a simmer. Let simmer for 1 hour.

- On 6 or 8 quart Instant Pot, press Sauté and let appliance preheat until display says Hot.
- Swirl a bit of oil to coat, add ground turkey and cook for 4 minutes, breaking into small pieces with spatula often. Meat doesn't have to cook through.
- If you see bottom of the pot has stuck browned bits of meat, add 1/2 cup broth and deglaze the pot. If not - then it's fine. My 6 quart Instant Pot runs hotter than 8 quart.
- Press Cancel and add remaining 1/2 cup (if deglazed) or 1 cup broth.
- Add onion, garlic, bell pepper, corn, beans, chili powder, cumin, oregano, paprika, salt, diced tomatoes and tomato paste. Do not stir to avoid Burn.
- Close the lid, set pressure vent to Sealing and press Pressure Cook on High or Manual for 15 minutes.
- After release pressure using Quick Release by turning pressure valve to Venting position, which takes 2-3 minutes. Open the lid, stir and serve hot with your favourite toppings.

- In medium stock pot over medium heat, add oil, onions and peppers and saute until translucent. Add the garlic, tomatoes and ground beef. Cook until meat is browned.
- Add rice to mixture and cook over low heat for 3 minutes, coating rice with the oils from the pan. Add beans, chicken stock, water and seasonings, bring to a simmer, then cover and cook on low for 20 minutes.
- Fluff with fork and garnish with green onions.

- Cook wild rice according to package directions..
- Meanwhile, heat oil over medium heat in a large pot.
- Add onion and saute for 3-4 minutes, until softened. Add garlic and saute an additional minute, until fragrant.

- Chop up all vegetables.
- Saute ground turkey in the pot sprayed with Pam.
- Spice turkey with season salt, pepper, cumin, garlic, and a little chili powder. Begin to brown.

This is not a traditional chili and has no connection with any Mexican or Texas recipe. It was devised simply as an experiment and turned out to be delicious.

- Cover the turkey pieces with water and add the onion stuck with cloves, the celery, parsley, and peppers. Bring to a boil. Reduce the heat, skim off any scum which may rise to the top, and cover the pot. Simmer until the turkey is tender but not falling from the bones. Remove the turkey pieces and cool until they can be handled. Remove the meat from the bones in good-size pieces.
- Reduce the broth by half over a brisk flame. You should have about 4 cups broth. Strain and adjust the salt. Add the chili powder, the green chiles,and the ground nuts and simmer until the mixture is thickened, smooth and well blended in flavor. You may find you may wish to add additional chili powder. Sauté the onion, garlic, and green peppers in the olive oil. Add to the sauce and cook for 5 minutes. Add the turkey meat and cook thoroughly. Add the olives and blanched almonds and reheat for 3 minutes.
- Serve with rice or polenta and crisp French bread. A radish and cucumber salad with a vinaigrette sauce is good with this. Tortillas are excellent with the chili if you don't serve polenta and French bread. Drink beer.
