- In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
- In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
- When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
- Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.

These oatmeal cookies are the best I've ever eaten! They're extremely chewy and packed full of warm cinnamon and raisins. To preserve their texture, store any leftovers in an airtight container for up to a week-if they last that long!

- Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the honey or agave. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Chill the cookie dough for 30 minutes.
- Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat.
- Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly. Bake at 325°F for 11-14 minutes (see Notes!). Cool on the pan for 10 minutes before transferring to a wire rack.
LOWER FAT OATMEAL MOLASSES COOKIES
These are really good low-fat cookies. They have a good consistency and flavor. I have made them so many times and my family loves them.

- Cream margarine; gradually add sugar, beating at medium speed of an electric mixer until well blended.
- Add molasses, egg and vanilla; beat well.
- Combine flour and next 5 ingredients in a medium bowl, stirring mixture well.
- Gradually add flour mixture to creamed mixture, mixing well to combine.
- Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray.
- Bake at 350 for 12-13 minutes or until very lightly browned.
- Cool slightly on cookie sheets.
- Remove from cookie sheets and cool completely on wire racks.

- In a medium bowl, combine the raisins, water, egg whites, and molasses.
- Stir until well mixed.
- Add the sugar, brown sugar, and vanilla.
- Stir to combine.
- In a small bowl, combine the flour, nonfat dry milk powder, baking powder, and cinnamon.
- Mix well.
- Slowly add the flour mixture to the raisin mixture.
- Stir in oats.
- On a baking sheet coated with nonstick cooking spray, drop batter by teaspoonfuls.
- Leave 2 inches between each cookie. They do spread a little bit.
- Bake at 350° for 8-10 minutes or until edges are light golden-brown (I baked mine for 7.5 minutes to keep them very chewy! Yum!).
- Remove cookies from oven when they are done.
- Place cookies on a wire rack to allow them to cool.
- Enjoy without guilt!
LOW-CAL LOW-FAT OATMEAL CARROT COOKIES

- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
- In a large bowl, cream together the butter and sugar. Beat in the egg, followed by the carrots and vanilla. Using your hands, stir in the flour mixture and the oats until just combined, adding the milk 1 tablespoon at a time until fully combined. This will be really really sticky, don't worry!
- Drop tablespoonfuls of the dough onto the prepared baking sheet, flattening each cookie slightly. Bake for about 8-10 minutes.
- Let cool on sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
- Store in an airtight container.
