2 packages (20 oz each) lean ground turkey
1 large onion, chopped (about 1 cup)
2 medium carrots, chopped (about 1 cup)
1 can (28 oz) Muir Glen™ organic diced tomatoes, undrained
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 jar (8 1/4 oz) mole
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1/2 cup sour cream
1/4 cup crumbled cotija (white Mexican) cheese

Steps:

  • In 12-inch nonstick skillet, cook turkey over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain.
  • Spray 4- to 5-quart slow cooker with cooking spray. In cooker, mix turkey and remaining ingredients except sour cream and cheese.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Stir well before serving. Top each serving with dollop of sour cream and sprinkle of cheese.

6 to 8 turkey thighs (3/4 pound each)
1/2 large white onion
2 stalks celery, quartered
1 large bunch cilantro (about 1 cup sprigs)
2 whole cloves
4 allspice berries
1/4 star anise pod (break off a point)
5 black peppercorns
Kosher salt
4 medium tomatillos, husked
2 medium tomatoes
4 cloves garlic, unpeeled
1/2 large white onion
3/4 cup vegetable oil or lard
8 dried ancho chiles, stemmed and seeded (seeds reserved)
8 dried pasilla chiles, stemmed and seeded
1 corn tortilla, plus more for serving (optional)
1/2 cup raw almonds, chopped
1/2 cup raisins
1/2 cup pepitas (hulled pumpkin seeds)
4 tablespoons sesame seeds, plus more for topping
5 allspice berries
5 black peppercorns
2 whole cloves
Kosher salt
6 ounces sweet Mexican drinking chocolate, chopped
Cooked rice, for serving
1/4 star anise pod (break off a point)
1 1-inch piece cinnamon stick

Steps:

  • Make the turkey: Put the turkey, onion, celery, cilantro sprigs, cloves, allspice, star anise, peppercorns and 1 teaspoon salt in a large pot; add cold water to cover. Bring to a simmer over medium-high heat, then reduce the heat to medium low and simmer until very tender, about 1 hour, 30 minutes. Remove the turkey with tongs and transfer to a plate to cool slightly. Strain the broth through a fine-mesh sieve into a large measuring cup or bowl. You should have about 8 cups broth; if you have more, simmer until reduced to 8 cups. Skim the fat off the surface. Remove the turkey skin; refrigerate the meat until ready to use. (The turkey and broth can be made 1 day ahead; cover and refrigerate.)
  • Make the mole: Preheat the broiler. Put the tomatillos, tomatoes, garlic and onion on a rimmed baking sheet. Broil, turning, until charred, about 10 minutes. Transfer to a bowl to cool. Remove the skins from the tomatoes and garlic.
  • Heat 1/4 cup vegetable oil in a large skillet over medium-high heat. Fry the ancho and pasilla chiles in batches, turning, until softened, 30 to 45 seconds; transfer to a bowl. Fry the tortilla in the hot oil, turning, until browned, 4 minutes; add to the bowl with the chiles. Cover with water and soak 30 minutes, then drain. Add the chiles and tortilla to the bowl with the tomatillo mixture and set aside.
  • Meanwhile, discard the oil in the skillet and wipe clean. Heat another 1/4 cup vegetable oil in the same skillet over medium-high heat. Add the almonds and fry, stirring, until golden, 3 minutes. Add the raisins and stir until plump, 30 seconds; transfer to a bowl using a slotted spoon. Add the pepitas and fry, stirring, until they begin to pop, 2 minutes; transfer to the bowl with the almonds.
  • Discard the oil in the skillet and wipe clean. Heat the skillet over medium heat. Add the sesame seeds and toast, stirring, until golden, about 3 minutes; transfer to a clean bowl to cool. Add 1 heaping tablespoon of the ancho chile seeds, the allspice, peppercorns, cloves, star anise and cinnamon stick to the skillet and toast, stirring, 2 minutes; transfer to the bowl with the sesame seeds and let cool. Grind the sesame-spice mixture in a spice grinder to make a fine powder.
  • Put the fried almonds, raisins, pepitas, sesame-spice powder, 1/4 teaspoon salt and 2 cups of the reserved turkey broth in a blender and blend until smooth; transfer to a bowl. Working in batches, blend the broiled vegetables, fried chiles and tortilla, 1 teaspoon salt and 2 cups turkey broth until smooth.
  • Heat the remaining 1/4 cup vegetable oil in a large Dutch oven over medium-high heat. Add the pureed chile mixture and cook, stirring frequently, until slightly thickened, about 5 minutes (be careful-the mixture will spatter). Stir in the ground almond mixture and 2 cups turkey broth; bring to a simmer over medium-low heat. Stir in the chocolate until melted. Add the turkey thighs and simmer until heated through, about 30 minutes. The mole should be the consistency of gravy; thin with more broth, if necessary. Season with salt. Serve with rice and tortillas.

1 oz unsweetened baking chocolate, chopped
1 can (28 oz) diced tomatoes with Italian-style herbs, undrained
1 can (19 oz) red kidney beans, drained
plain fat-free yogurt, if desired

Steps:

  • Cook turkey, onion, bell pepper, chilies and garlic in 4-quart Dutch oven over medium heat 5 to 8 minutes, stirring occasionally, until turkey is no longer pink.
  • Stir in remaining ingredients except yogurt. Heat to boiling. Reduce heat; cover and simmer 30 minutes, stirring occasionally. Top each serving with yogurt.

Cocoa powder may seem a bit out of place in chili, but it has two jobs in this mole-inspired version: It adds depth of flavor and helps thicken the sauce. We suggest serving the chili with tortilla chips, but it would also be great with cornbread.

2 tablespoons vegetable oil
3 tablespoons tomato paste
3 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
3/4 pound ground turkey (preferably dark meat)
Kosher salt
One 28-ounce can fire-roasted diced tomatoes
2 3/4 cups low-sodium chicken broth, plus more for thinning the chili if needed
1/4 cup unsweetened cocoa powder
2 tablespoons red wine vinegar
1 tablespoon dried oregano
Two 15-ounce cans pinto beans, strained and rinsed
1 medium onion, chopped
2 cups crushed corn tortilla chips, plus whole for serving
3 cloves garlic, chopped
Sliced scallions, shredded Cheddar, sour cream and chopped pickled jalapeno, for serving

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add the tomato paste, chili powder, cumin and cayenne and cook, stirring, until the oil is brick-red and the mixture is dry, about 2 minutes. Add the ground turkey and 1 teaspoon salt and cook, stirring and breaking up into smaller pieces, until the mixture is combined (the turkey doesn't need to be cooked all the way through at this point). Transfer the mixture to the insert of a 6-quart slow cooker.
  • Add the tomatoes, chicken broth, cocoa powder, vinegar, oregano and 1 teaspoon salt to the skillet over medium-high heat and bring to a simmer, whisking. Cook for about 2 minutes. Add the tomato mixture, beans, onions, crushed tortilla chips and garlic to the insert and give the mixture a good stir. Cover and cook on low for 6 to 8 hours.
  • Add chicken broth to thin the chili, if necessary. Season with salt. Serve with scallions, Cheddar, sour cream, pickled jalapeno and tortilla chips.

1 lb turkey, ground (or cubed)
1 tablespoon vegetable oil (or any oil that you wish)
1 large onion, finally chopped
1 garlic clove, minced
1 (35 ounce) can whole tomatoes, chopped
1 medium tomatoes, fresh chopped (optional)
1 teaspoon cumin
1 teaspoon coriander
1 -3 tablespoon chili powder (depending on your taste)
1/2 teaspoon dried oregano
1/2 cinnamon stick (or 1/2 teaspoon cinnamon)
1 1/2 ounces unsweetened chocolate
1 tablespoon red wine vinegar
1 (11 ounce) can cannellini beans (optional)
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1/4 teaspoon ground red pepper, to taste (optional)
1/4 teaspoon jalapeno powder (optional)
1 tablespoon low-fat sour cream
1 teaspoon fresh cilantro
1 tablespoon cheese, shredded

Steps:

  • Cook turkey in oil in a heavy bottomed saucepan, stirring until crumbly.
  • Remove turkey from pan, and drain, leaving 1 tablespoon of oil in pan.
  • Add onion, garlic to pan, and cook 3 minutes until soft.
  • Add canned tomatoes, fresh tomato (if using), cumin, coriander, chili powder, oregano, and cinnamon stick to this mixture.
  • Simmer uncovered for 15 minutes.
  • Add turkey to this mixture, and cook for 30 minutes, letting liquid evaporate, stirring occasionally.
  • Stir in chocolate, vinegar, and beans. Cook until chocolate is melted and combined well. Add salt, pepper, red pepper, and jalapeno powder to taste, if using. Remove cinnamon stick.
  • Spoon in to bowls, garnish with cilantro, and sour cream, and cheese.
