1 (16 ounce) package rigatoni pasta
¼ cup butter
¼ cup all-purpose flour
1 cup turkey stock
½ cup pasta sauce
1 cup water
½ (1 ounce) package dry onion soup mix
1 teaspoon crushed garlic
salt and pepper to taste
⅓ cup shredded Monterey Jack cheese
⅓ cup shredded sharp Cheddar cheese
1 pound cooked turkey breast, cubed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan or deep skillet, melt the butter over low to medium heat; blend in flour. Slowly add turkey stock, pasta sauce, and water. Mix well. Stir in onion soup mix and garlic; season with salt and pepper.
  • Sprinkle in the Monterey Jack, Cheddar cheese and turkey. Stir until the cheese is melted and the meat is heated through. Spoon sauce over pasta and serve.

1 (16 ounce) container low-fat ricotta cheese
1 (8 ounce) package shredded low-fat mozzarella cheese
2 cloves garlic, minced, or more to taste
salt and ground black pepper to taste
1 (1 pound) package whole-wheat penne pasta
1 pound ground turkey
1 (13.5 ounce) jar spaghetti sauce

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Stir the ricotta cheese, mozzarella cheese, garlic, salt, and pepper in a bowl; set aside on counter to allow to come to room temperature.
  • Bring a pot of water to a boil; cook the penne in the boiling water until cooked through yet firm to the bite, about 11 minutes. Drain and transfer to a large mixing bowl.
  • While the pasta cooks, place a skillet over medium heat. Crumble the turkey into the skillet; cook and stir until the turkey is completely browned. Drain and add to the pasta.
  • Spread 2 tablespoons of the spaghetti sauce into the bottom of a 13x9-inch baking dish; stir the rest of the spaghetti sauce into the pasta and turkey mixture. Spoon about half of the pasta mixture into the baking dish; top with the cheese mixture and spread into an even layer. Spread the remaining pasta mixture over the cheese layer. Cover with aluminum foil if desired.
  • Bake in the preheated oven until slightly brown on top, about 30 minutes.

1 onion ( finely diced)
8 ounces mushrooms (sliced)

½ teaspoon dried basil
1 cup havarti cheese (or swiss cheese, shredded )
3 cups cooked turkey
¼ cup seasoned bread crumbs
2 tablespoons butter (melted)

Steps:

  • Heat oven to 375°F. Combine topping ingredients and set aside.
  • Cook pasta al dente according to package directions.
  • Cook onion, mushrooms, and garlic in butter until tender, about 5 minutes.
  • In a large bowl combine soup, mushroom mixture, milk, seasonings, and ½ of the cheese. Fold in turkey and pasta.
  • Spread into a 9x13 casserole dish, top with remaining cheese, and sprinkle with topping.

1 tablespoon olive oil (or avocado oil)
1 yellow onion (peeled and minced)
3 cloves garlic (minced)
3 cups cooked turkey (roughly chopped (about 3/4 pound))
12 ounces dried gemelli pasta (or similarly sized pasta like fusilli or penne (about 3 cups))
1/2 cup marinated artichoke hearts (removed from liquid and chopped)
1/2 cup sun-dried tomatoes (packed in oil) (removed from their oil and chopped)
2 cups pasta sauce ("rosee" or your favourite variety)
3 cups unsalted chicken broth (divided)
1/2 cup half-and-half (or pasta sauce or unsalted chicken broth)
1/2 to 1 teaspoon crushed red pepper flakes (or to taste)
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt (optional)
10 ounces shredded mozzarella cheese (about 2.5 cups)
Freshly chopped parsley (garnish to taste (optional))

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Meanwhile, heat olive oil in a 12-inch heavy oven-safe sauté/deep pan over medium heat on the stovetop, then add onion and cook, stirring often, for 3 to 5 minutes or until softened. Stir in garlic and cook for 1 minute. Stir in cooked turkey, uncooked pasta, artichoke hearts and sun-dried tomatoes.
  • Next, pour in pasta sauce (take 1/2 cup of the chicken broth and rinse out the jar of pasta sauce to get every last bit and pour that in too), remaining 2.5 cups of chicken broth, half-and-half, crushed red pepper flakes, black pepper and salt (if using). Stir to combine everything, ensuring pasta is submerged in the liquid. Keep the pot over the heat for 3 to 4 minutes just to let the liquid start to warm before placing into the oven.
  • Top with shredded mozzarella cheese and bake (uncovered) for about 45 to 50 minutes (check on at the 45 minute mark) until bubbly, the pasta is cooked through and the cheese on top is melty and a little golden brown. Note: Ovens vary. If your cheese browns too quickly, you can loosely cover with aluminum foil (ensuring the aluminum foil isn't touching the cheese).
  • Once done, carefully remove from the oven and let cool for about 10 to 15 minutes (don't skip this step) before garnishing with parsley (if using) and serving. Enjoy!

2 onions, finely chopped
500g turkey mince (thigh is best)
1 garlic clove, crushed
2 x 400g cans chopped tomatoes
1 tbsp chipotle paste
300ml chicken stock
400g large pasta shells
250g tub mascarpone
200g cheddar, grated
2 tbsp grated parmesan

Steps:

  • Heat the olive oil in a large pan. Add the onions and cook for 8-10 mins until softened. Add the mince and brown all over. Once browned, add the garlic, tomatoes, chipotle paste and chicken stock, and bring to the boil. Turn down to a simmer and cook, uncovered, for 35-40 mins, adding a splash of water if it looks too dry.
  • While the turkey cooks, boil the pasta following pack instructions, then drain, reserving some of the water. Warm through the mascarpone with a splash of the hot pasta water over a low heat. Add 140g cheddar, season and stir to combine.
  • Heat oven to 200C/180C fan/gas 6. Transfer the turkey sauce to a large baking dish. Stir the cheese sauce through the pasta and pour over the mince. Sprinkle the remaining cheddar and the parmesan on top. Bake in the oven for 20 mins or until golden and crisping at the edges.

1 lb ground turkey (extra lean)
3 cups (10 oz) whole wheat penne/fusilli pasta (uncooked)
4 - 5 cups kale ( stems removed & chopped)
1 large onion ( finely chopped)
4 large garlic cloves ( minced)
1 tbsp olive oil ( extra virgin)
1 tbsp oregano (dried)
1 tsp rosemary (dried)
1 tsp basil (dried)
Pinch of red pepper flakes
1/2 tsp salt
Ground black pepper ( to taste)
28 oz tomato sauce (low sodium)
1 tbsp honey or maple syrup
1 tbsp balsamic vinegar
1 cup pasta water
2 cups 6 oz mozzarella cheese (shredded & divided)
1/3 cup Italian parsley (chopped)
Cooking spray (I use Misto)

Steps:

  • Cook pasta al dente as per package instructions, undercooking by 4 minutes. Drain, reserving 1 cup of pasta water, and set aside. Preheat oven to 350 degrees F and spray 9 x 13 baking dish with cooking spray.
  • In the meanwhile, preheat large skillet on medium heat and add olive oil. Add onion and garlic, sauté for 2 - 3 minutes, stirring occasionally. Add oregano, rosemary, basil, pinch of red pepper flakes, salt and pepper. Cook for 30 seconds, stirring a few times. Add ground turkey and cook for another 5-7 minutes, breaking meat into pieces and stirring occasionally.
  • Add tomato sauce, honey, balsamic vinegar and pasta water. Stir, bring to a boil and simmer for 2 minutes. Add kale and stir to combine.
  • Now add cooked pasta and stir to combine more.
  • Transfer half of the mixture in previously prepared baking dish and sprinkle with 1 cup cheese. Add remaining pasta meat mixture and sprinkle with remaining 1 cup cheese. Cover with foil and bake for 20 minutes.
  • Remove from the oven, let stand for 10 minutes, garnish with parsley and serve hot. With a glass of red wine. OMG, so good!

1 tablespoon olive oil
1 pound ground turkey ((I like 93/7 blend))
1 large onion, diced
2 cloves garlic, minced
2 15 ounce cans tomato sauce
1 teaspoon Italian seasoning
½ teaspoon kosher salt
2 large eggs
¼ cup parmesan cheese, shredded
¼ cup butter, melted
15 ounces ricotta cheese ((part skim works))
3 cups shredded mozzarella, divided

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9 x 13 inch baking dish; set aside.
  • Bring a large pot of water to boil. Cook spaghetti in boiling water until just al dente, about a minute short of package instructions. Drain. In a large bowl whisk together the butter, parmesan, and eggs. Toss in the spaghetti to coat; set aside.
  • In a large skillet or dutch oven, heat olive oil over medium heat. Add in ground turkey and onion, breaking up turkey with a spoon. Cook until no longer pink, about 5 minutes. Add in garlic and cook one minute longer. Pour in tomato sauce and sprinkle on Italian seasoning and kosher salt. Bring sauce to a low boil and simmer for 5 minutes.
  • Place half of the spaghetti mixture into baking dish. Top with half of the ricotta cheese and use a spatula to spread it over top. Sprinkle on half of the mozzarella and top with half of the meat sauce. Repeat layer by adding the remaining spaghetti, then ricotta, then meat sauce, and topping off with remaining mozzarella.
  • Cover with aluminum foil. Bake in preheated oven for 45 minutes. Remove foil and continue to bake until the cheese is melted and lightly brown, 10-15 minutes longer. Let rest for 5-10 minutes before slicing and serving.

9 oz pasta (250 g, Note 1)
2 tablespoons butter (divided)
1 medium onion (about 100 g/ 3.5 oz)
1 large garlic clove
1 tablespoon all-purpose flour
1 cup milk (250 ml)
1 1/2 cup grated Gouda (150 g, Note 2)
1 teaspoon Dijon mustard
a few gratings of nutmeg
1 1/4 cup chopped leftover turkey (150 g. Note 3)
2 eggs
1 teaspoon fine sea salt (more or less to taste)
freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees Fahrenheit/ 200 degrees Celsius. Lightly grease a casserole dish of about 10x8 inches/ 25x20 cm.
  • Cook noodles: Bring a large pot of water to a boil. Salt the water and cook the noodles according to the package instructions. Let drain well.
  • Cook onion: In the meantime, halve and slice the onion. Heat 1 tablespoon of the butter in a non-stick saucepan. Cook the onion slices for 4-5 minutes or until golden. Add the finely chopped garlic and stir for another minute. Remove to a bowl or small plate.
  • Make white sauce: Melt the remaining tablespoon of butter in the same saucepan. Sprinkle the flour on top and stir it for one minute. Slowly start adding the milk while whisking all the time to avoid the formation of clumps. If you do happen to have too many clumps anyway, you can save the sauce by blending it shortly with a handheld blender. Let the sauce bubble gently for about 2 minutes while stirring very often. Then, take it off the heat and stir in ¾ of the grated cheese, mustard, nutmeg, salt and pepper.
  • Separate the eggs. Add the egg yolks to the sauce and stir very well to incorporate. In a clean bowl, whisk the egg whites until soft peaks form. Gently fold the egg whites into the sauce.
  • Assemble the dish: Place the cooked pasta and the chopped turkey meat into the prepared casserole dish and mix them well. Pour the sauce over the noodles in the casserole dish and mix everything together.
  • Bake: Sprinkle the remaining cheese on top and bake the noodle turkey casserole for about 20 minutes until heated through and golden.
  • Rest for about 5 minutes and serve as suggested above.

Steps:

  • Preheat oven to 350°F. Coat a 9" X 13" (22x33 cm) pan with cooking spray and set aside.
  • In a medium skillet over high heat, add bacon and water. Cook, stirring every 2 minutes until bacon is crispy (about 10 minutes). Once the bacon is crispy, remove it from the pan using a slotted spoon and set aside. Leave bacon fat in the skillet.

300g/10½oz dried pasta shapes, such as penne or fusilli
2 tbsp sunflower oil, plus extra for greasing
4 rashers smoked streaky bacon, thickly sliced
1 onion, finely chopped
500g/1lb 2oz pasta sauce (homemade or from a jar)
150ml/5fl oz double cream
350g-500g/12oz-1lb 2oz leftover turkey, cut into small chunks
75g/2½oz mature cheddar, coarsely grated

Steps:

  • Half fill a large saucepan with water and bring to the boil. Add the pasta and cook for 10 minutes, or until just tender.
  • Preheat the oven to 200C/180C Fan/Gas 6. Lightly oil a large, shallow, roughly 2.5 litre/4½ pint lasagne dish, or similar pie dish.
  • Heat the oil in a large frying pan and fry the bacon and onion for 8 minutes, or until lightly browned. Stir in the pasta sauce and cream. Add a large ladleful (around 100ml/3½fl oz) of the pasta cooking water and bring to a simmer. Stir in the turkey pieces and season with ground black pepper.
  • Drain the pasta in a colander, then return it to the saucepan. Stir in the pasta sauce and leftover turkey meat.
  • Transfer to the greased dish and sprinkle with the cheese. Bake for 15-20 minutes, or until the cheese is melted and beginning to brown. Serve hot.

  • Add the onion, bell pepper, salt, and pepper. Cook for 5-6 minutes.
  • Add the tomatoes, garlic, thyme, basil, and oregano. Cook for 2-3 minutes.
  • Add the spaghetti squash. Cook for 4-5 minutes until most of the liquid has cooked off.

This Turkey Kielbasa Pasta Bake is an easy, lightened-up comfort food that the whole family will love! Turkey kielbasa and penne pasta tossed in a rich, flavorful cream sauce and topped with gooey mozzarella.

¼ cup salted butter
1 small onion
1 teaspoon minced garlic
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
¼ cup all purpose flour
2 cups whole milk ((you can use half and half for a richer flavor))
1 cup low sodium vegetable broth
3 cups dry penne pasta ((high fibre if desired) 275 grams)
2 cups turkey kielbasa ((halved and sliced) 280 grams)
1½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F if baking right away (optional: you can also cover and refrigerate or freeze for another day). Lightly grease a 9x13" baking dish.
  • Melt the butter in a medium skillet over medium-high heat.
  • Add the onion and cook until softened and translucent. Stir in garlic, Italian seasoning, salt, and pepper and cook 1 minute.
  • Stir in the flour until no white streaks remain. Cook for 1 minute.
  • Whisk in the milk and broth, and cook over medium heat until thickened, stirring constantly. This should take between 5-10 minutes.
  • Meanwhile, cook the penne pasta to al dente in a large pot of boiling, salted water (according to package directions). Drain.
  • Combine cooked pasta, thickened sauce, and sliced kielbasa in baking dish and stir well.
  • Top with shredded cheese and bake until bubbly, about 20-25 minutes. You can also place in the refrigerator to cool, then cover and refrigerate up to 4 days or freeze up to 3 months.

12 ounces whole grain penne pasta (cooked al dente)
1/2 pound italian poultry sausage (I could not find ground so I used 2 sausage patties, cooked and broken into small pieces)
2 cups basil and tomato jarred spagetti sauce
1 cup shredded part skim mozzarella cheese
4 tablespoons grated parmesan cheese
1/2 teaspoon dried oregano
2 tablespoons seasoned italian breadcrumbs

Steps:

  • Preheat oven to 350 degrees
  • Spray a 7 x 11 casserole dish with cooking spray and set aside.
  • In a large bowl mix together pasta, sausage, 1 cup sauce, 1/2 cup mozzarella, 2 tablespoon parmesan, and oregano. Pour into casserole dish.
  • Pour last cup of sauce over top and sprinkle with remaining mozzarella and parmesan cheese.
  • Sprinkle breadcrumbs on top then cover with foil and bake 20 minutes.
  • Remove foil and bake for another 10 - 15 minutes or until cheese is completely melted.

  • In a large saucepan, combine the broccoli and water. Bring to a boil. Reduce heat. Cover and simmer for 6-8 minutes or until crisp-tender; drain. 1 lb ziti pasta (slightly undercooked)
1 lb cooked ground turkey or 1 lb ground beef
26 ounces favorite spaghetti sauce, divided
1 (15 ounce) can diced tomatoes
8 ounces part-skim ricotta cheese
1 teaspoon garlic salt
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon onion powder
1 teaspoon ground black pepper
12 ounces mozzarella cheese

Steps:

  • Preheat oven to 375°F.
  • In a large mixing bowl, blend the ricotta cheese and seasonings until thoroughly mixed.
  • Stir in the diced tomatoes, meat, and half of your sauce. Add the ziti, and stir until all the pasta is coated.
  • Spread half of remaining sauce on bottom of a 9x13 baking pan. Place your ziti mixture on top of it. Spread remaining sauce over the top. Sprinkle your mozzarella on top of the sauce.
  • Cover with aluminum foil and bake for 45 minutes. For a crisper top remove the aluminum foil and place under your broiler for the last 10 minutes of baking time.

Steps:

  • Preheat the oven to 190C/Gas 5.
  • In a medium saucepan cook the pasta according to pack instructions, drain in a colander, rinse with cold water and set aside.
  • Melt the butter over a low heat in the large saucepan. Once the butter it melted, add the flour and stir with the wooden spoon to form a sort of paste. Cook for another 1-2 minutes.
  • Gradually stir in the milk, approximately 100ml at a time, stirring out any lumps from the mixture.
  • Continue stirring until the sauce thickens, then add the next bit of milk. When the sauce is ready, in around 10-15 minutes, it will be fairly thick, smooth and steaming. Don't allow it to boil (Hint! You may want to gradually increase the heat from low to medium-low as you add more milk)
  • Remove the sauce from heat and stir in 250g of the cheese, mixing well until the cheese has melted.
  • Transfer the pasta into the ovenproof dish, pour the cheese sauce over it and stir the mixture around, making sure that all of the pasta is covered in sauce.
  • Sprinkle the mixture first with breadcrumbs, then with the remaining cheese, finally adding a dash of dried chives (optional).
  • Bake for approximately 30 minutes until the cheese is browned and bubbling. Allow to cool for at least 5 minutes before serving.
