Nice bread-like cheese muffins. Not overly cheesy, but feel free to add more. One of my favorites!

2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 ½ cups shredded Cheddar cheese
1 cup plain yogurt
2 eggs, beaten
¼ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
  • Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.
  • Bake in the preheated oven until the tops just start to lightly brown, 18 to 20 minutes.

Turkey & Cheddar Cheese Muffins image

1 cup whole-wheat flour 250 mL
3/4 cup all-purpose flour 175 mL
1 tbsp baking powder 15 mL
1/2 tsp each salt and pepper 2 mL
1 1/2 cups milk, room temperature 375 mL
1 tbsp honey 15 mL
2 tsp Sensations by Compliments Whole Grain Dijon Mustard 10 mL
1/2 tsp chopped garlic 2 mL
1 egg, room temperature
1/3 cup unsalted butter, melted 75 mL
1 cup Sensations by Compliments Triple Cheddar Shredded Cheese Blend 250 mL
6 slices Compliments Naturally Simple Turkey Breast Oven Roast, chopped
1/4 cup grated Sensations by Compliments Parmigiano Reggiano 60 mL
1/4 cup Compliments Sunflower Seeds Roasted No Salt 60 mL

Steps:

  • Preheat oven to 190°C (375°F). In large bowl, whisk together whole- wheat flour, all-purpose flour, baking powder, salt and pepper. In another bowl, whisk together milk, honey, Dijon, garlic and egg, then whisk in melted butter.
  • Pour wet ingredients into dry ingredients; fold mixture until just moistened; then fold in Cheddar cheese and turkey. Divide batter into 12 greased muffin tins. Sprinkle batter with Parmesan cheese and sunflower seeds.
  • Bake 25 min., until muffins are golden and tops spring back when lightly pressed. Transfer muffin pan to wire rack to cool slightly before tipping out muffins. Serve warm or at room temperature.

2 pounds ground turkey
1 (8 ounce) package Cheddar cheese, cubed
1 onion, diced
1 cup seasoned bread crumbs
¾ cup milk
2 eggs
2 tablespoons Worcestershire sauce
2 cloves garlic, diced
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
  • Combine ground turkey, Cheddar cheese, onion, bread crumbs, milk, eggs, Worcestershire sauce, garlic, salt, and pepper in a large bowl; mix well with your hands.
  • Drop scoops of the turkey mixture into the muffin tin using a large ice cream scoop.
  • Bake in the preheated oven until golden brown, about 45 minutes.

2 cups cooked stuffing
1 cup cooked cut green beans
1 cup chopped cooked turkey
1 cup mashed potatoes
1/4 cup shredded cheddar cheese
1 cup turkey gravy

Steps:

  • Preheat oven to 425°. Press stuffing onto bottoms of 8 greased muffin cups. Layer with beans and turkey. In a small bowl, combine mashed potatoes and cheese; spoon over turkey., Bake 15 minutes. Reduce oven setting to 350°. Bake 15-20 minutes longer or until potatoes begin to brown. Let stand 10 minutes. Run a knife around sides of muffin cups to remove muffins. Serve with gravy.

2-1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon Italian seasoning
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1-1/2 cups buttermilk
1/3 cup canola oil
2 garlic cloves, minced
2 cups shredded cheddar cheese
4 green onions, sliced
1/2 cup finely chopped sweet red pepper
2 tablespoons finely chopped oil-packed sun-dried tomatoes, patted dry
1/3 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 400°. In a large bowl, whisk flour, sugar, baking powder, Italian seasoning, baking soda and salt. In another bowl, whisk egg, buttermilk, oil and garlic until blended. Add to flour mixture; stir just until moistened. Fold in cheddar cheese, onions, pepper and sun-dried tomatoes., Fill greased muffin cups three-fourths full. Sprinkle with Parmesan cheese. 1 cup milk
3 tablespoons unsalted butter, melted & then cooled
1 large egg, lightly beaten
1 pinch cayenne pepper
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
3/4 cup grated sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine milk, melted butter, egg& cayenne.
  • In a second bowl, sift together flour, baking powder, sugar& salt.
  • Stir in cheese.
  • Add flour mixture to milk mixture and stir batter until it is just combined.
  • The batter should be lumpy.
  • Spoon the batter into muffin tins (buttered or lined) filling each about 2/3 full.
  • Bake 20- 25 minutes.

Handy biscuit mix and cheese soup hurry along these hearty muffins from Melissa Vannoy of Childress, Texas. The golden muffins are great at breakfast, brunch or a soup lunch.

Number Of Ingredients 5

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 cup shredded cheddar cheese
2/3 cup water
3 cups biscuit/baking mix

Steps:

  • In a large skillet over medium heat, cook sausage until no longer pink; drain. In a large bowl, combine the soup, cheese and water. Stir in biscuit mix until blended. Add sausage. Fill greased muffin cups three-fourths full. , Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
