A scrumptious mix of creamy and crunchy, the luscious turkey chow mein casserole recipe is a thanksgiving leftovers tradition. It's real comfort food.

1/4 cup butter
1 medium onion (diced)
2 stalks celery (sliced)
1/4 cup flour
1 cup milk (or part milk, part cream)
1 1/2 cups chicken broth
1 tbsp soy sauce
2 cups shredded leftover (cooked turkey)
8 oz bean sprouts
1 14- oz bag chow mein noodles
Salt and Pepper

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter over medium heat in a medium-large sized pot. Add onion and celery, and saute 1 minute. Add flour and cook, stirring, 1 minute more. Add milk or cream in a gradual stream, stirring constantly to incorporate. Stir in chicken broth and soy sauce. Cook until simmering and thickened, about 6 minutes.
  • In a large bowl, combine turkey, bean sprouts and 3/4 of the chow mein noodles. Pour the creamy sauce over top, and toss to thoroughly combine. Taste and season with salt and pepper.
  • Spread mixture in a baking dish (of 2 1/2 - 3 quart/litre capacity; 9x13" works well) and sprinkle with reserved chow mein noodles. Cover with aluminum foil and bake 30 minutes, or until hot and bubbly.

3 lbs ground beef (* I use lean ground beef)
1.5 cups chopped celery
1/2 cup water
2 whole medium onions
2 cups cooked rice (* I used brown instant rice)
10 ounce - can of cream of tomato soup/condensed tomato soup
10 ounce - can of cream of mushroom soup
1/2 -14 oz pkg dry (crispy) chow mein noodles
3 tbsp soy sauce
dry (crispy) chow mein noodles
additional soya sauce
green onions, chopped ((optional))

Steps:

  • Preheat oven to 350 degrees F/ 175 degrees C and spray the inside of a large casserole dish with non-stick cooking spray.
  • Brown ground beef in large skillet with chopped onion over medium- high heat.
  • Cook celery in 1/2 cup water in microwave (covered) for 4- 5 minutes until soft. Drain off remaining water.
  • Add celery, tomato soup, mushroom soup and rice to ground beef.
  • Combine ground beef mixture with chow mein noodles (dry) into prepared casserole dish and sprinkle on soya sauce.
  • Bake in oven for 20 minutes. Serve warm.

2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup 2% milk or chicken broth
4 cups cubed cooked turkey
2 celery ribs, thinly sliced
1 small onion, chopped
1 can (8 ounces) sliced water chestnuts, drained and halved
1 tablespoon reduced-sodium soy sauce
1 can (3 ounces) chow mein noodles
1/2 cup slivered almonds

Steps:

  • In a large bowl, combine soup and milk. Stir in the turkey, celery, onion, water chestnuts and soy sauce. , Transfer to a greased shallow 2-qt. baking dish. Sprinkle with noodles and almonds. Bake, uncovered, at 350° for 30 minutes or until heated through.

This is a very tasty dish that even my kids love! It can easily be cut in half. It uses soy sauce and chow mein noodles to give it an Asian flair.

1 pound ground beef
1 onion, chopped
2 stalks celery, chopped
½ cup slivered almonds
1 cup cooked rice
1 (10.75 ounce) can condensed cream of chicken soup
½ cup water
3 tablespoons soy sauce
5 ounces chow mein noodles

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.
  • In a separate medium bowl, combine the almonds, rice, soup, water and soy sauce. Mix together well and add to the beef mixture. Place this into a lightly greased 9x13 inch baking dish. Top with chow mein noodles.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes.

1 green pepper, sliced in thin strips
1 cup celery, sliced
2 tablespoons butter
2 cups turkey or 2 cups chicken broth
2 tablespoons cornstarch
2 tablespoons soy sauce
1 tablespoon dry onion soup mix
3 cups turkey, shredded
3 ounces sliced mushrooms, drained
5 ounces sliced water chestnuts, drained
16 ounces bean sprouts, drained
rice
chow mein noodles

Steps:

  • In large skillet saute green pepper and celery in butter for 2 minutes. Add 1-3/4 cup of the broth. Blend remaining 1/4 cup of broth with cornstarch and soy sauce. Gradually add to skillet then add dry soup mix. Cook and stir until thickened. Add turkey, mushrooms, water chestnuts and bean sprouts. Heat through and serve immediately over rice and/or chow mein noodles.

10 3/4 oz chicken broth, condensed
1/2 c bisquick mix
2 c diced,cooked, turkey, chicken , or ham, etc
1/3 c blanched whole almonds,optional
1 tsp soy sauce
16 oz can chow mein vegetables, drained well
4 oz can mushroom stems and pieces,drained
2 oz jar sliced pimientos, drained, optional
1 to 2 c chow mein noodles, crunchy kind

Steps:

  • 1. Stir broth slowly into Bisquick; pour into an ungreased 1 1/2 quart casseroles. (Mixture will be slightly lumpy- that's a good thing). Stir in remaining ingredients, except noodles. Bake uncovered in a 375^ oven about 40 minutes. Sprinkle noodles over top and bake 5 minutes more. Cool 5 minutes before serving. Serve with soy sauce, if desired. A nice tossed salad on the side- fantastic!
