1/4 cup butter
2 tablespoons finely chopped parsley
2 tablespoons finely chopped celery
2 green onions, chopped
1 garlic clove, finely chopped
1/2 cup chopped watercress leaf
1/4 cup fresh breadcrumb
1 teaspoon Pernod (optional) or 1 teaspoon anisette (optional)
salt & freshly ground black pepper
8 oysters, chucked, reserving any juice

Steps:

  • Preheat oven to 400°F.
  • In a skillet on medium-high heat, melt butter. When butter sizzles, add parsley, celery, green onions and garlic, cook for 2 minutes. Add watercress and cook for a further minute.
  • Place in food processor and pureé with 2 tbsp (25 mL) breadcrumbs and Pernod. Season with salt and pepper.
  • Place oysters and 1 tbsp of oyster juice in small gratin dish. Top with watercress pureé and sprinkle with remaining breadcrumbs. Bake 10 minutes or until edges of oysters have curled slightly.
  • For an alternate presentation, oysters can be topped with pureé and baked in their shells.

1 cup seafood stock or clam juice
1 cup heavy cream
1/2 cup plus 3 tablespoons good white wine, such as Chablis, divided
3 tablespoons tomato puree
1/2 teaspoon saffron threads
8 ounces raw shrimp, peeled, deveined, and cut in half crosswise
8 ounces raw halibut, cut into1-inch chunks
8 ounces cooked lobster meat, cut into 1-inch chunks
7 tablespoons unsalted butter, divided
1 tablespoon all-purpose flour
Kosher salt
Freshly ground black pepper
3 cups julienned leeks, white and light green parts (2 large)
1 1/2 cups julienned carrots (3 carrots)
1 cup panko (Japanese dried bread crumbs)
1/3 cup freshly grated Parmesan
2 tablespoons minced fresh flat-leaf parsley
1 tablespoon chopped fresh tarragon leaves
1 tablespoon minced garlic (2 cloves)

Steps:

  • Preheat the oven to 375 degrees F. Place 4 individual gratin dishes on sheet pans. (If recipe is doubled serve it in a 14 by 9 1/4-inch oval gratin dish.)
  • Combine the stock, cream, 1/2 cup of the wine, the tomato puree, and saffron in a medium saucepan. Bring to a boil, lower the heat, and add the shrimp. After 3 minutes, use a slotted spoon to remove the shrimp to a bowl. Add the halibut to the stock for 3 minutes, until just cooked through, and remove to the same bowl. Add the cooked lobster to the bowl.
  • Continue to cook the sauce until reduced by half, about 12 minutes. Mash 1 tablespoon of the butter together with the flour. Whisk the butter mixture into the sauce along with 1 teaspoon salt and 1/2 teaspoon pepper. Simmer, stirring constantly, until thickened, about 5 minutes. Set aside.
  • Melt 3 tablespoons of the butter in a medium saute pan. Add the leeks and carrots and cook over medium heat for 5 minutes, until softened. Add the remaining 3 tablespoons of wine, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook for 5 to 10 minutes, until tender. Set aside.
  • Combine the panko, Parmesan, parsley, tarragon, and garlic. Melt the remaining 3 tablespoons of butter and mix it into the crumbs until they're moistened.
  • Divide the seafood among the 4 gratin dishes. Strew the vegetables on top of each dish. Pour the sauce equally over the seafood and vegetables and spoon the crumbs evenly on top. Bake for 20 minutes, until the top is browned and the sauce is bubbly. Serve hot.

1 cup chopped red onion

1 pinch salt
2 drops Tabasco sauce
1/2 cup heavy whipping cream
2 teaspoons flour
1/2 cup chopped fresh tomato
1/2 teaspoon lemon juice
1 (14 ounce) can artichoke hearts, drained, rinsed, and quartered
1 pint fresh oyster, drained
1 cup chopped fresh parsley
1/2 cup fresh breadcrumb, lightly toasted
1/2 cup grated swiss cheese
1 dash paprika

Steps:

  • Preheat oven to 400 degrees. Coat an oval gratin dish (about 12 by 8 inches) with butter or oil.
  • Heat the olive oil in a skillet over medium heat. When it shimmers, add the crushed red pepper, red onion, celery, and garlic and cook until the onion turns clear. Add the sherry and bring to a boil for about a minute. Then add the thyme, salt and pepper, Tabasco, and cream. Return to a boil. Sprinkle in the flour and lightly whisk into the sauce.
  • Lower the heat and add the tomato, lemon juice, artichokes, oysters, and parsley. Agitate the pan to mix all the ingredients, then remove from the heat.
  • Pour the oyster mixture into the gratin dish. Sprinkle the top with bread crumbs, then Swiss cheese, and finally paprika. Lower the oven to 375 degrees and bake the gratin about 25 minutes, till it bubbles around the edges and the top is browned.

2 tablespoons unsalted butter, plus more for baking dishes
1 pint shucked oysters in their liquor
2 tablespoons all-purpose flour
1/2 cup homemade or low-sodium store-bought chicken broth or milk
1/2 cup heavy cream
Coarse salt and freshly ground pepper
Hot sauce
Pinch of freshly grated nutmeg
1/4 cup olive oil
1 medium to large eggplant, peeled and chopped (about 2 cups)
1 medium onion, chopped
2 ounces finely chopped tasso (about 3 tablespoons)
1 clove garlic, finely chopped
1 teaspoon chopped fresh sage
1 teaspoon chopped fresh rosemary or 1/4 teaspoon dried rosemary
Cheesy Breadcrumb Topping

Steps:

  • Preheat oven to 400 degrees. 4 individual shallow baking dishes.
  • Drain oysters into a large bowl, reserving liquor. Check oysters for any pieces of shell and discard. Strain liquor through a fine mesh sieve; set aside.
  • Melt butter in a small saucepan over low heat. Whisk in flour, then add reserved oyster liquor and broth or milk. Bring mixture to a boil, whisking constantly. Whisk in cream and reduce heat to a simmer. Cook for 10 minutes, stirring occasionally. Season with salt, pepper, hot sauce, and nutmeg. Remove mixture from heat; cover sauce to keep warm.
  • Heat olive oil in a medium skillet over medium-high heat. Add eggplant and cook, stirring occasionally, until browned, about 5 minutes. Add onion, tasso, and garlic; stir in sage and rosemary. Cook until eggplant is tender and cooked through, 5 to 7 minutes more. Season with salt and pepper; transfer mixture to a colander; let stand to drain excess oil, about 5 minutes.
  • Spread mixture evenly in baking dishes; top with an even layer of oysters. Drizzle with sauce and sprinkle over breadcrumb topping. Transfer to oven and bake until golden brown and bubbly, about 10 minutes. Serve immediately.

OYSTER SWISS CHARD GRATIN WITH COUNTRY BACON

3 thick slices smoky bacon, cut into small dice
2 tablespoons unsalted butter
1 small onion, minced
2 cloves garlic, minced
2 bunches Swiss chard, stemmed, leaves chopped into 1/2-inch dice
2 cups heavy cream
1/8 teaspoon freshly grated nutmeg
18 oysters, freshly shucked, patted dry, and coarsely chopped
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese
1 cup fresh bread crumbs

Steps:

  • Preheat the oven to 400°F.
  • Brown the bacon in a large sauté pan over medium heat. Add the butter, onion, garlic, and Swiss chard and sauté until the chard is completely wilted. Remove from the heat. Pour the mixture into a colander set in the sink and squeeze out all excess liquid. Reserve.
  • Return the pan to the stove and add the cream and nutmeg. Bring to a boil over high heat, then decrease the heat to medium-low so the cream does not boil over. Cook the cream until it reduces to 1 cup. Set aside to cool.
  • In a bowl, combine the chard mixture, cooled cream, and oysters. Mix well and season with salt and pepper. Spoon the mixture into a 3-quart gratin dish. Using the back of a spoon, spread the mixture evenly. In a small bowl, mix together the Parmesan cheese and bread crumbs and sprinkle the topping evenly over the gratin.
  • Bake until the mixture is bubbling around the sides and the crust is lightly golden brown, about 12 minutes.
  • Remove from the oven and let cool slightly before serving.

2 tablespoons butter
2 tablespoons flour
1/2 cup chicken stock or milk
1/2 cup cream
Salt and ground black pepper
Hot sauce
Pinch of freshly grated nutmeg
1/2 cup extra-virgin olive oil
1 small eggplant, peeled and diced (about 2 cups)
1 medium onion, chopped
2 ounces finely chopped tasso (about 3 tablespoons)
1 garlic clove, minced
1 teaspoon chopped fresh sage
1 teaspoon chopped fresh rosemary
1/2 cup dry bread crumbs
2 tablespoons chopped parsley
1 tablespoon butter, melted
2 tablespoons olive oil
2 ounces Grana Padano or Parmesan cheese, grated (1⁄4 cup)

Steps:

  • Preheat the oven to 400°F. Butter a 2-quart baking dish and set aside. Pour the oysters into a bowl and check for bits of shell. Strain the oyster liquor through a fine sieve into a small bowl and set aside. Set drained oysters aside in a small bowl.
  • Melt the butter in a small saucepan over low heat and whisk in the flour. Whisk in the reserved oyster liquor and stock. Increase the heat to medium-high and bring the mixture to a boil, whisking constantly. Whisk in the cream. Reduce the heat to medium-low and simmer gently, stirring from time to time, until the sauce thickens, about 10 minutes. Season the sauce with salt, pepper, hot sauce, and nutmeg. Remove the pan from the heat and cover to keep the sauce warm.
  • Heat the extra-virgin olive oil in a medium skillet over medium-high heat. Add the eggplant and cook, stirring often, until lightly browned, about 5 minutes. Stir in the onion, tasso, garlic, sage, and rosemary. Cook until the eggplant is tender, 5 to 7 minutes. Season with salt and pepper. Transfer the eggplant mixture into a colander to drain for 5 minutes. Stir together the crumbs, parsley, melted butter, oil, and cheese in a small bowl and set aside.
  • To assemble the gratin, spread about one-third of the oyster liquor sauce in the bottom of the prepared baking dish. Spoon the eggplant mixture into the dish. Arrange the oysters in a single layer over the eggplant mixture and drizzle with the remaining sauce. Sprinkle the crumb topping over the entire dish.
