ROAST TURKEY WITH GARLIC, SAGE AND FENNEL



Roast Turkey with Garlic, Sage and Fennel image

1 20-pound turkey
Kosher salt and freshly ground pepper
2 heads garlic
1 small onion, cut into 6 wedges
2 cooking apples, quartered
1 large bunch fresh sage
1 small bulb fennel, cut into 6 wedges
1 small carrot, cut into 3-inch pieces
4 sticks unsalted butter
8 cups low-sodium chicken or turkey broth
4 bay leaves
1/4 cup instant flour (such as Wondra)
1 tablespoon balsamic vinegar

Steps:

  • Bring the turkey to room temperature 1 hour before roasting. Place a rack in the lowest position of the oven and remove the other racks; preheat to 350. Remove the neck and giblets from the turkey; discard the liver and reserve the neck and the rest of the giblets. Dry the turkey inside and out with paper towels and season the cavity with salt and pepper. Halve 1 head garlic crosswise and stuff into the cavity along with 3 onion wedges, the apples and 1/2 bunch sage.
  • Place the remaining 3 onion wedges, the fennel and carrot in the center of a large roasting pan with 1 cup water. Set a rack above the vegetables and place the turkey breast-side up on the rack. Season all over with salt and pepper. Chop 3 tablespoons sage, then melt 3 sticks butter with the sage and salt and pepper to taste in a saucepan over medium heat. Fill a meat syringe with the sage butter and inject it into the breasts, legs and thighs; continue until you have used about half of the sage butter. Brush the bird with the rest of the butter and tie the legs together with twine.
  • Roast the turkey, uncovered, about 1 hour 30 minutes. Rotate the pan and continue roasting until a thermometer inserted into the thigh registers 165, 1 hour 30 minutes to 1 hour 45 minutes. Turn off the oven but leave the turkey inside until the thermometer registers 170, 15 to 20 more minutes.
  • While the turkey roasts, make the gravy: Melt the remaining 1 stick butter in a saucepan over medium heat. Add the reserved neck and giblets, season with salt and pepper and cook, stirring occasionally, until brown, about 10 minutes. Peel and smash the remaining head of garlic, add it to the pan and cook until golden, about 2 minutes. Add the broth and bay leaves, cover and simmer over medium-low heat, about 2 hours. Discard the bay leaves, neck and giblets.
  • Transfer the turkey to a cutting board and let rest 20 to 30 minutes before carving. Transfer the vegetables to a blender. Pour the drippings into a liquid measuring cup and skim off the fat. Add 1 cup drippings and the flour to the blender and puree until smooth. Whisk the remaining drippings and pureed vegetables into the broth mixture. Bring to a boil, then simmer until the gravy is smooth, about 10 minutes. Stir in the balsamic vinegar; season with salt and pepper.
  • Transfer the turkey to a platter and garnish with any remaining sage. Carve the turkey and serve with the gravy.

2 red peppers (about 220g)
1 ½ tbsp olive oil, plus an extra drizzle
240g lean turkey breast mince (under 8% fat)
½ small onion, chopped
1 garlic clove, grated
1 tsp ground cumin
3-4 mushrooms, sliced
400g can chopped tomatoes
1 tbsp tomato purée
1 chicken stock cube
handful fresh oregano leaves
60g mozzarella, grated
150g green vegetables (spinach, kale, broccoli, mangetout or green beans), to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Halve the peppers lengthways, then remove the seeds and core but keep the stalks on. Rub the peppers with a drizzle of olive oil and season well. Put on a baking tray and roast for 15 mins.
  • Meanwhile, heat 1 tbsp olive oil in a large pan over a medium heat. Fry the mince for 2-3 mins, stirring to break up the chunks, then tip onto a plate.
  • Wipe out your pan, then heat the rest of the oil over a medium-high heat. Add the onion and garlic, stir-fry for 2-3 mins, then add the cumin and mushrooms and cook for 2-3 mins more.
  • Tip the mince back into the pan and add the chopped tomatoes and tomato purée. Crumble in the stock cube and cook for 3-4 mins, then add the oregano and season. Remove the peppers from the oven and fill them with as much of the mince as you can. (Don't worry if some spills out it - it will go satisfyingly crisp in the oven.) Top with the cheese and return to the oven for 10-15 mins until the cheese starts to turn golden.
  • Carefully slide the peppers onto a plate and serve alongside a pile of your favourite greens blanched, boiled or steamed.

4 tablespoons unsalted butter
1 large onion, finely chopped (about 12 ounces)
2 garlic cloves, minced
1 small bulb fennel (about 8 ounces), trimmed and finely chopped
11 slices (1/2 inch thick) country bread, trimmed of crusts and cut into 1/2-inch cubes (about 5 cups)
1 tablespoon fresh thyme
2 tablespoons coarsely chopped fresh rosemary, plus sprigs for garnish (optional)
1/2 cup coarsely chopped fresh flat-leaf parsley
2 1/4 to 3 1/4 cups homemade or low-sodium canned chicken stock
Coarse salt and freshly ground pepper
1 whole boneless turkey breast (about 6 pounds)
2 tablespoons olive oil
1 blood orange, thinly sliced, for garnish (optional)

Steps:

  • Melt butter in a large skillet over medium heat. Add onion and garlic, and cook, stirring occasionally, until onion is soft and translucent, about 4 minutes. Add fennel; cook, stirring, until tender, about 4 minutes. Transfer mixture to a large bowl. Stir in the bread, thyme, rosemary, parsley, and 1 1/4 cups stock. Season with salt and pepper. Set stuffing aside.
  • Preheat oven to 375 degrees. Place the turkey, skin side down, on a clean work surface. Using a sharp knife, remove the tenderloins. To butterfly the turkey, slice vertically through the right side of breast, starting at thickest part and slicing almost to edge without cutting through (it should resemble a book, with a flap in the middle). Spread open, keeping both sides attached, and gently press down to flatten. Repeat on left side of breast. Cover with plastic wrap. Using a meat mallet or heavy skillet, pound meat until thickness is uniform.
  • Season turkey with salt and pepper, then spread stuffing lengthwise down middle. Fold both sides of turkey over stuffing. Using kitchen twine, tie turkey at 1-inch intervals to completely encase stuffing and form a long cylinder.
  • Transfer the turkey to a roasting pan. Pour 1 cup stock into pan. Brush turkey with oil, and season with salt and pepper. Roast, basting with pan juices every 30 minutes, until well browned and an instant-read thermometer inserted into thickest part of the turkey registers 165 degrees, about 1 3/4 hours. If the skin begins to get too dark, loosely tent pan with foil (add remaining 1 cup stock if pan gets too dry). Transfer the turkey to a carving board, and let rest 20 minutes before slicing. Garnish with rosemary sprigs and orange slices, if desired. Serve hot or at room temperature.

1 boneless double turkey breast, about 3-1/2 lb
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 cups chicken stock
2 tablespoons all-purpose flour
1/2 cup dry white wine
4 ounces pancetta, chopped
1 onion, chopped
2 garlic cloves, minced
1/2 bulb fennel, chopped
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried rosemary, crumbled
1/4 teaspoon fennel seed, crushed
1/2 cup roasted sweet red pepper, chopped
1/2 cup fresh bread, crumbs
2 tablespoons fresh parsley, chopped
2 tablespoons pine nuts, toasted

Steps:

  • Preheat the oven to 325 degrees F.
  • To make the stuffing, cook the pancetta in a large skillet over medium-high heat, stirring occasionally, until crisp, about 5 minutes.
  • Spoon off all but 1 tablespoon of fat.
  • Reduce the heat to medium and cook the onion, garlic, chopped fennel, thyme, salt, pepper, rosemary and fennel seeds, stirring often, until the onion is softened, about 10 minutes.
  • Stir in the red pepper, bread crumbs, parsley and pine nuts.
  • Let cool for 10 minutes.
  • Open the turkey breast and lay flat on the work surface.
  • Fold back the filets towards the outside of the breast.
  • Spread the stuffing over the breast, leaving 1" border on all sides.
  • Starting at one side edge, roll up.
  • At four evenly spaced intervals, tie with kitchen string.
  • Brush with oil, sprinkle with salt and pepper, and place on a rack in the roasting pan.
  • Pour in 1/2 cup of the chicken stock.
  • Roast in a 325 degree F oven, adding stock as necessary to maintain level, for 2-1/2 hours or until no longer pink inside and meat thermometer inserted in centre registers 180 degrees F.
  • Transfer to a cutting board, tent with foil and let stand for 20 minutes.
  • Meanwhile, skim the fat from the pan juices.
  • Place the pan over medium heat and whisk in the flour.
  • Whisk in the remaining stock and wine.
  • Bring to a boil and cook, stirring until thickened, about 3 minutes.
  • Strain into a gravy boat.
  • Slice the turkey and serve with the sauce.

French Stuffed Red Bell Peppers With Fennel and Goat's Cheese image

One of my most popular vegetarian recipes at "Auberge de la Fontaine" and also great served as a starter too. There is something very theraputic about making this dish - choosing the plump red peppers & fresh fennel bulbs - then selecting a fine Chevre - goat's cheese! It is delicious served warm or at room temperature with the garlicky Balsamic vinegar & olive oil dressing they are roasted in, drizzled over the top. Mop up the juices with crusty fresh French bread and serve with a simple tossed salad. These also make a very colourful accompaniment for most main courses.

3 large red peppers, trimmed & halved
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 large red onion, peeled & cut into wedges
1 fennel bulb, trimmed & cut into wedges

3 -4 sun-dried tomatoes packed in oil, drained & chopped finely
200 g log goat's cheese

Steps:

  • Pre-heat the oven to 120C/240F/Gas 1.
  • Cut the peppers in half, discard the core & seeds and also trim away the white membrane too.
  • Grease a Le Creuset roasting or ovenproof dish.
  • Cut the onion & fennel bulb into 6 wedges each. (Keep the the delicate green fronds from the fennel bulb & put to one side.).
  • Put the onion wedges, fennel wedges & cushed garlic into a mixing bowl & add the olive oil, balsamic vinegar, salt & black pepper - mix well.
  • Divide the onion & fennel wedges between the 6 pepper halves, arranging them neatly within the peppers & season well.Pour the remaining oil & vinegar dressing over the top of them.
  • Bake for 1 hour and 30 minutes or until the peppers are soft & just tinged brown.
  • Remove the stuffed peppers from the oven & increase the oven temperature to 200C/400F/Gas 6.
  • Sprinkle the chopped sun-dried tomatoes over the top of the peppers.
  • Slice the goats cheese & arrange over the top of the stuffed peppers; return them the oven for 5-10 minutes or until the cheese is melted & bubbling.
  • Remove from the oven, leave to cool slightly and serve them warm or at room temperature with the cooked dressing drizzled over the top of them.
  • Garnish with the green fronds kept from the fennel bulbs.
  • Serve as a starter, 1 pepper half per person with a side salad or as a main course - 2 pepper halves per person with bread & salad.
  • These can also be served as a very colourful & elegant vegetable accompaniment!

Steps:

  • Finely chop white part of onions.
  • Place green parts side by side on 15x10x1-inch heavy rimmed baking sheet to form a mat.

1 boneless turkey breast half (2 1/2 to 3 pounds)
Coarse salt and freshly ground pepper
Sausage and Sour-Cherry Stuffing
6 tablespoons (3/4 stick) unsalted butter, room temperature

Steps:

  • Butterfly turkey: Heat oven to 400 degrees. Use a slicing knife and your fingers to remove skin from breast, reserving skin. Turn the breast over (so the side that had the skin is facing down), and lay it flat on the cutting board. Holding the blade of the knife parallel to the board, about halfway down, slice into the thickest portion of the breast. Cut along the length of the breast, but not all the way through. Unfold so the turkey opens like a book. Remove the tough piece of cartilage. Cover with a piece of plastic wrap and pound with a meat mallet until the turkey is of uniform thickness (about 1/2 inch). Season with salt and pepper.
  • Stuff turkey: Spread stuffing evenly (about 3/4 inch thick) over turkey, leaving a 1-inch border. Starting with one short end, roll into a log, completely enclosing the stuffing, and wrap the reserved skin around the breast, over the seam. Season all over with salt and pepper. Roll in a piece of cheesecloth, and secure both ends with kitchen twine. Tie twine around the roast in four evenly spaced intervals, then rub butter evenly all over cloth.
  • Roast: Roast on a rimmed baking sheet until an instant-read thermometer inserted in the middle registers 155 degrees, 40 to 50 minutes. Let rest for 10 minutes (the internal temperature should rise to 165 degrees).
  • Slice and serve: Remove cheesecloth and twine, then place turkey on a cutting board and slice crosswise about 3/4 inch thick.

1/2 cup golden raisins
2 egg matzos (about 6 inches square), broken into 1/2-inch pieces
1 large egg, lightly beaten
1/3 cup finely chopped fresh parsley
1 1/2 teaspoons black pepper
1 1/2 teaspoons fennel seedstoasted and ground in an electric coffee/spice grinder
1 (6- to 7-pound) whole turkey breast (bone and skin attached)
1 3/4 cups low-sodium chicken broth (14 fluid ounces)
1 teaspoon potato starch

Steps:

  • Make stuffing:
  • Heat 3 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion, stirring occasionally, until golden, about 5 minutes. Reduce heat to moderate and add fennel, celery, and 1/2 teaspoon salt, then cook, stirring occasionally, until fennel and celery are golden and tender, 10 to 12 minutes. Transfer vegetables to a bowl to cool.
  • Soak raisins in boiling-hot water to cover 5 minutes, then drain well and chop. Add to vegetables.
  • Rinse matzo in a colander under hot running water until softened, 15 to 30 seconds. Drain, pressing gently on matzo to extract excess water. Add to vegetables along with egg, parsley, 1/2 teaspoon salt, and 1/2 teaspoon pepper and stir until combined.

  • Butterfly and flatten turkey:
  • Arrange 1 breast half, skinned side down, lengthwise on work surface, with thinner, pointed end nearest you. Starting at top (thicker part), cut breast half lengthwise down middle, but not all the way through to work surface, with a boning knife or a sharp, small knife, stopping about 1 inch from end closest to you. Then, turning knife horizontally, cut turkey breast open on either side like a book jacket, beginning at lengthwise cut, to form 2 flaps. Open flaps, then put butterflied breast between 2 sheets of plastic wrap.
  • Pound turkey with flat side of a meat pounder or with a rolling pin until 1/2 inch thick. Butterfly and flatten remaining breast half.
  • Stuff and roast turkey:
  • Put oven rack in middle position and preheat oven to 375°F.
  • Remove top sheet of plastic wrap from 1 breast half and pat turkey dry. Arrange with a short side nearest you and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Mound half of stuffing in center, leaving a 1-inch border on each long side. Fold short end nearest you over stuffing to enclose, gently pressing on filling, then roll to form a cylinder (don't roll too tight, or filling will slip out of ends). Tie rolled turkey breast crosswise at 1-inch intervals with kitchen string. Season remaining turkey breast half with remaining 1/4 teaspoon each of salt and pepper, then stuff, roll, and tie in same manner.
  • Rub fennel oil all over roasts to coat. Heat remaining 2 tablespoons oil in a large heavy flameproof roasting pan straddled across 2 burners on moderately high heat. Add roasts (position 1 roast over each burner) and sear, turning with tongs, until golden brown on all sides, about 6 minutes total. Cover pan tightly with foil and roast turkey in oven until a thermometer inserted diagonally 2 inches into center of each roast (to touch stuffing) registers 165°F, 35 to 40 minutes. Transfer roasts to a cutting board and let stand, loosely covered with foil, 10 minutes before slicing.
  • While roasts stand, straddle roasting pan across 2 burners on moderately high heat, then add 1 1/2 cups broth and deglaze by boiling, stirring, and scraping up brown bits, until liquid is reduced to about 1 cup, 2 to 3 minutes. Whisk together remaining 1/4 cup broth and potato starch and whisk into sauce, then boil, whisking, until slightly thickened, 1 to 2 minutes. Pour sauce through a fine-mesh sieve into a sauceboat and skim off any fat. Serve turkey with sauce.
