Like poor people everywhere, mountain people in the South thrived for centuries on food that was indigenous, inexpensive and healthful. These days "soup beans" speak instant comfort to anyone who had familial connections from Appalachia, where every garden produced shelling beans that could be eaten fresh or grown to maturity for dry beans. Serve this thick, stew-like soup with cornbread, pickle relish and diced sweet onion.

1 pound pinto, yellow-eyed or other dried beans, sorted and rinsed (2 1/2 cups)
12 cups water
8 ounces finely diced ham, (about 1 1/2 cups)
1 medium onion, peeled
1 clove garlic, peeled
½ teaspoon salt
1 teaspoon freshly ground pepper
¼ teaspoon crushed red pepper

Steps:

  • Place beans, water, ham, onion, garlic, salt, pepper and crushed red pepper in a large Dutch oven; bring to a boil. Reduce heat and simmer, stirring occasionally, until the beans are very tender and beginning to burst, 1 1/2 to 2 hours. If necessary, add an additional 1/2 to 1 cup water while simmering to keep the beans just submerged in cooking liquid.
  • Remove from the heat; discard the onion and garlic. Transfer 2 cups of the beans to a medium bowl and coarsely mash with a fork or potato masher. Return the mashed beans to the pot; stir to combine.

1 pound ground turkey
1 cup chopped onion
1 cup chopped celery
1 tablespoon olive oil
1 can (49-1/2 ounces) chicken broth
2 cups frozen corn
1 can (15 ounces) cannellini beans, rinsed and drained
1 cup frozen lima beans
1 can (4 ounces) chopped green chilies
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
Shredded cheddar cheese, optional

Steps:

  • In a Dutch oven, cook the turkey, onion and celery in oil over medium heat until meat is no longer pink. Add the broth, corn, beans, chilies, oregano, cumin, chili powder and salt. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through. Serve with cheese if desired.

1 pound dry white beans
2 smoked turkey legs
½ onion, diced
2 bay leaves
2 stalks celery, diced
4 large carrots, sliced
1 (14.5 ounce) can petite diced tomatoes, undrained
2 tablespoons Italian seasoning
salt and ground black pepper to taste
2 tablespoons grated Parmesan cheese, divided

Steps:

  • Place the beans into a large bowl, fill the bowl with water, and cover the bowl with a cloth. Allow to soak overnight. Drain and rinse the beans.
  • Place the soaked beans, turkey legs, onion, and bay leaves into a large soup pot, cover with water, then bring to a boil over medium heat. Reduce heat to medium-low, and simmer for 3 hours. Remove bay leaves, and discard. Remove the turkey legs from the broth, separate the meat from the bones and tendons, and return the meat to the broth. Stir in celery, carrots, diced tomatoes, Italian seasoning, and salt and pepper; simmer until the celery and carrots are tender, about 1 hour. Serve in bowls and sprinkle each serving with about 1 teaspoon of Parmesan cheese.

2 red onions, halved
2 tablespoons extra-virgin olive oil
3 medium carrots, cut into large chunks
4 cloves garlic, smashed
1 tablespoon all-purpose flour
1 pound dried black turtle beans, picked over, rinsed and drained
1 smoked turkey drumstick (1 3/4 to 2 pounds)
2 tablespoons pickling spice, tied in cheesecloth
3/4 teaspoon red pepper flakes
Kosher salt and freshly ground pepper
1/2 cup chopped fresh cilantro
Sour cream and/or lime wedges, for garnish (optional)

Steps:

  • Set aside half an onion and chop the rest. Heat the olive oil in a large skillet over medium-high heat. Add the chopped onions, carrots and garlic; sprinkle with the flour and cook, stirring, until slightly browned, 5 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan. Transfer the vegetables and cooking liquid to a slow cooker. Add the beans, turkey drumstick, pickling-spice packet, red pepper flakes and 8 cups water. Cover and cook on low 6 hours.
  • Remove the drumstick and shred the meat; keep warm. Remove about 2 cups beans from the cooker and blend until smooth (or partially blend with an immersion blender). Return the beans and turkey meat to the soup. Season with salt and pepper.
  • Mince the reserved 1/2 onion. Ladle the soup into bowls and top with the cilantro and minced onion. Garnish with sour cream and lime, if desired.

2 pounds ground turkey
12 medium (blank)s baby carrots, finely chopped
1 medium onion, chopped
4 stalks celery, chopped
4 medium red potatoes, cut in 1-inch pieces
1 (15 ounce) can tomato sauce
1 (15 ounce) can whole peeled tomatoes, crushed
1 (15 ounce) can peas, undrained
1 (15 ounce) can green beans, drained and rinsed
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained and rinsed
ground black pepper to taste
1 pinch seasoned salt (such as Morton® Nature's Seasons® Seasoning Blend), or to taste
1 pinch ground thyme
1 bay leaf, or more to taste
1 cup water, or more to taste

Steps:

  • Crumble turkey into a stockpot over medium-high heat. Cook and stir until evenly browned, crumbly, and no longer pink, 7 to 10 minutes. Drain and discard any excess grease.
  • Stir carrots, onion, and celery into the turkey; cook and stir until vegetables are soft, about 5 minutes. Add potatoes, tomato sauce, tomatoes, undrained peas, green beans, kidney beans, and corn. Season with pepper and seasoned salt. Stir until evenly distributed. Add thyme and bay leaf.
  • Pour water into the pot and bring to a simmer. Cover and cook, stirring regularly and adding more water as needed, until potatoes are tender, about 1 hour.

This Leftover Turkey and White Bean Soup is perfect for transforming holiday leftovers into a new meal. Or make it with chicken any time of year!

3/4 cup diced onion
3 cloves minced garlic
1 diced bell pepper
1 (4.5 oz can ) diced green chiles (I use mild)
3/4 cup salsa verde
2 tsp cumin
1 tsp chili powder
1 quart broth (vegetable or chicken)
2 cans BUSH'S® Beans -either Cannellini or Great Northern Beans, drained and rinsed
1 cup corn (canned or frozen)
2 cups cooked turkey or chicken

Steps:

  • In a large pot or Dutch oven, saute onion, garlic, peppers, green chiles, salsa verde, cumin and chili powder over medium high heat for 6-7 minutes.
  • Add 1 cup BUSH'S® Beans, 3/4 cup of onion mixture from the soup pot and 3/4 cup broth to a blender and puree until smooth.
  • Return bean mixture to the soup pot and add corn, turkey and remaining beans and broth. Bring to a boil, then reduce to simmer for at least 10 minutes or until ready to eat.
  • Taste and adjust seasonings. Top with avocado, cheese, tortilla chips and a squeeze of lime juice!

Simple low-fat, broth-based soup. Freezes well. Original recipe is from Parents magazine. I refrigerate the stock overnight and skim the fat before proceeding with the rest of the recipe, and add some additional chopped leftover turkey. While I'm cleaning up after Thanksgiving, or whenever I make a turkey, I throw the turkey carcass in a stock pot to start this soup. By the time the dishes are done, so is the stock.

1 turkey carcass
1 large onion, quartered
2 celery ribs, cut into chunks
3 sprigs parsley
1 bay leaf
1/8 teaspoon dried thyme
10 cups water
2 tablespoons butter (can use olive oil)
2 leeks, cleaned and thinly sliced
4 carrots, thinly sliced
1 (16 ounce) can cannellini beans, drained and rinsed
1/4 cup fresh parsley, chopped
salt and pepper
chopped cooked turkey (optional)

Steps:

  • In large stock pot, place carrot chunks, turkey carcass, onion, celery, parsley sprigs, bay leaf, thyme, and water. Bring to a boil over high heat; reduce heat to medium-low and simmer, partially covered for one hour.
  • Remove turkey carcass from soup. When cool enough to handle, pick off turkey scraps and refrigerate scraps. Strain broth into a large bowl, cover, and refrigerate overnight.
  • Remove broth from refrigerator and skim fat with a large spoon. Discard fat.
  • In stock pot, melt butter (I use olive oil). Add carrot and leek slices; cook 5 minutes. Stir in broth, turkey scraps plus additional chopped cooked turkey if desired, beans, and chopped parsley. Season with salt and pepper and cook until heated through.

1 onion, thinly sliced
2 tablespoons smoked turkey breast, minced
2 teaspoons olive oil
2 garlic cloves, minced
4 cups chicken stock, defatted
2 cups turkey breast, cooked and diced
2 cups canned navy beans, drained and rinsed
1 pinch ground red pepper
salt, to taste
1/4 cup fresh basil, minced
2 tablespoons parmesan cheese, grated

Steps:

  • In a 3 quart saucepan over medium heat, saute the onions and smoked turkey in the oil for 5 minutes, or until lightly browned.
  • Add the garlic and stir for 1 minute.

  • First sort through the beans to make sure there are no bad ones, then rinse them. Combine the beans, onion, salt, garlic, and bay leaf in a crockpot with 8 cups of water. Set the crockpot to cook the beans according to your schedule. For example, I set mine for 4 hours (which would be on high), because I knew I would return to the soup in that amount of time.
  • Once the beans are fully cooked, remove and discard the bay leaf. For the onions and garlic pieces (if there are any solid pieces left), you can either take them out and discard them as well, or you can leave them as is if you like. I chose to skim them out of the beans with a slotted spoon and add some of the pieces to the pot that I would be finishing the soup in. If you choose not to use the onions or garlic, just start cooking the ground turkey meat as you normally would.
  • Add the lean ground turkey meat to the onions and garlic and cook on medium heat until all the meat is fully separated and there are no large chunks of ground meat left. Cut through and mash the onions along with the meat as it cooks.
  • Add the chopped carrots and celery (it’s okay if the meat is not completely cooked yet) . Continue cooking the meat with the vegetables for 10 minutes.
