SMOKED TURKEY AND AVOCADO MELT
Found this recipe in "365 Great 20-Minute Recipes" and make it when I have left over roasted turkey. Instead of using smoked turkey I usually just use regular turkey and make recipe #100355 by Graybert which is delicious. I have used English muffins instead of cracked wheat bread.

Steps:
- Preheat broiler. Arrange bread on a baking sheet and toast lightly on one side, about 1 minute.
- Spread dressing over toasted sides of bread. Layer with tomatoes and smoked turkey. Arrange avocado slices in a spoke pattern over turkey. Sprinkle with cheese on top.
- Broil about 5 inches from heat 1 to 2 minutes, until cheese is melted and bubbly.
- Enjoy!

ROAST TURKEY, AVOCADO AND BACON SANDWICH
Steps:
- Preheat the oven to 400 degrees F.
- To prepare the Roast Turkey: toss the herbs and butter into the bowl of a food processor and pulse until green and smooth. Rub the turkey breast with half of the herbed butter and with salt and pepper. Place the turkey on a rack in a roasting pan and put in the oven. Let the turkey cook for 1 hour, basting every 20 minutes with the butter and pan juices. The turkey is done when it reaches an internal temperature of 165 degrees F. Let rest for 15 minutes on the cutting board.
- To assemble the sandwich: spread a thin layer of the remaining butter on 1 piece of the bread. Place 1 slice of the cheese and several slices of the turkey breast on unbuttered side of the bread. Peel and slice the avocado, toss with the lemon juice, olive oil, salt and pepper. Add avocado slices, crispy bacon slices, lettuce and another slice of fontina cheese to the top of that. Sprinkle again with salt and pepper. Slather the remaining piece of bread with the butter and place on unbuttered side out, on top of the bacon.
- Heat a cast-iron or other heavy skillet over medium-low heat. Add 1 tablespoon of butter and let it melt, swirling the pan around to coat. Put the sandwich in the pan and weigh it down with a heavy pot or can (or wrap an ordinary brick in aluminum foil and set it on top to compress the sandwich.) Toast for 1 minute, turn the sandwich over before the bread begins to burn. Repeat with remaining sandwiches. Cut the sandwiches in half and serve.
GRILLED CHEESE WITH SMOKED TURKEY AND AVOCADO
Steps:
- Thinly slice mozzarella. Pit, peel, and thinly slice avocado. Spread butter on one side of each bread slice and turn slices over. Spread mustard on bread slices and top 2 slices with mozzarella, avocado, and turkey. Season turkey with salt and pepper and top with remaining 2 bread slices, buttered sides up.
- Heat a heavy skillet over moderate heat until hot but not smoking and cook sandwiches until bread is crisp and cheese is melted, about 1 1/2 minutes on each side.
- Serve sandwiches with cucumber salad.

- Place a large skillet over medium heat then add the bacon. If necessary, cut the bacon in half to fit into the skillet. Cook until firm and slightly crispy then transfer to a paper towel lined plate and set aside.
- Remove the bacon fat from the skillet and wipe clean. Return skillet to the heat then allow it to reheat while you spread butter on one side of each piece of sourdough bread. Place 4 bread slices, butter side down, into the skillet then grill until lightly golden brown. This will only take about 2–3 minutes, but check often—the bread can go from golden brown to black quite quickly. Remove the grilled bread from the skillet then allow to cool for just a moment. - Place the remaining 4 slices of bread into the skillet, butter side down. Quickly layer each slice of bread with tomato slices, turkey, mozzarella and bacon. Top with avocado smothered bread then press the sandwiches together with a spatula. You can also weigh the sandwiches down by placing a heavy skillet on top just to press the ingredients together.
