1 cup chopped onion
1 cup shredded carrots
1/2 cup chopped celery
1 tablespoon canola oil
1-1/2 cups crushed saltines (about 45 crackers)
3/4 cup ketchup, divided
1/4 cup minced fresh parsley
1 egg, lightly beaten
4 teaspoons ground mustard, divided
2 teaspoons salt
2 teaspoons minced garlic
1 teaspoon pepper
2-1/2 pounds lean ground turkey
2 tablespoons brown sugar

Steps:

  • In a large skillet, saute the onion, carrots and celery in oil until tender. In a large bowl, combine the onion mixture, cracker crumbs, 1/2 cup ketchup, parsley, egg, 2 teaspoons mustard, salt, garlic and pepper. Crumble turkey over mixture and mix well. , Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 1 hour. , In a small bowl, combine the brown sugar and remaining ketchup and mustard until smooth. Spoon over meat loaf. Bake 10-20 minutes longer or until meat is no longer pink and a thermometer reads 160°; drain. Let stand for 10 minutes before slicing.

This healthy meatloaf recipe uses ground turkey--which has a higher percentage of healthy unsaturated fat compared to ground beef--and it's loaded with colorful vegetables. You'll also love this recipe because it makes two loaves. That means you can eat one the night you bake it and save the other for the next day to enjoy as sandwiches (hot or cold, your choice) or set atop a salad of vinaigrette-dressed mixed greens (your own homey version of a country pâté).

2 tablespoons extra-virgin olive oil
¾ cup finely diced sweet potato
⅓ cup minced shallots
½ cup finely diced red bell pepper
½ cup finely diced zucchini
¾ cup corn, fresh or frozen
¾ cup peas, fresh or frozen
1 clove garlic, minced
¾ teaspoon salt
½ teaspoon ground pepper
2 large eggs
½ cup low-fat milk
¾ cup whole-wheat panko breadcrumbs
¼ cup minced fresh parsley
2 tablespoons Worcestershire sauce
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried
Pinch of cayenne pepper
2 pounds 85%-lean ground turkey
¼ cup ketchup

Steps:

  • Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
  • Heat oil in a large skillet over medium-high heat. Add sweet potato and shallots and cook, stirring occasionally, for 3 minutes. Add bell pepper and zucchini; cook, stirring, until the vegetables are starting to soften, 2 to 3 minutes. Add corn, peas and garlic; cook, stirring, for 2 minutes more. Stir in salt and pepper. Turn the mixture onto a plate and cool for 10 minutes.
  • Whisk eggs in a large bowl; whisk in milk, breadcrumbs, parsley, Worcestershire, thyme and cayenne. Stir in the cooled vegetables. Add turkey and gently but thoroughly mix with your hands or a spoon to combine. Shape the mixture into two loaves (about 6 by 3 inches each) on the prepared baking sheet. Brush the top of each loaf with half the ketchup.
  • Bake until an instant-read thermometer inserted into the center registers at least 160 degrees F, about 40 minutes. Let stand for 15 minutes before slicing.

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

2 cups coarsely chopped zucchini
1 ½ cups coarsely chopped onions
1 red bell pepper, coarsely chopped
1 pound extra lean ground turkey
½ cup uncooked couscous
1 egg
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
½ cup barbecue sauce, or as needed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray 20 muffin cups with cooking spray.
  • Place zucchini, onions, and red bell pepper into a food processor, and pulse several times until finely chopped but not liquefied. Place the vegetables into a bowl, and mix in ground turkey, couscous, egg, Worcestershire sauce, and Dijon mustard until thoroughly combined. Fill each prepared muffin cup about 3/4 full. Top each cup with about 1 teaspoon of barbecue sauce.
  • Bake in the preheated oven until juices run clear, about 25 minutes. Internal temperature of a muffin measured by an instant-read meat thermometer should be at least 160 degrees F (70 degrees C). Let stand 5 minutes before serving.

This impressive-looking turkey meatloaf is flavored with herbs and a layer of juicy tomatoes and zucchini. As well as the presentation, the baking method caught my attention. It's baked in a water bath to retain the moisture of the ground turkey. The recipe calls for all fresh herbs but dried could certainly be substitute at a ratio of 1 tablespoon fresh = 1 teaspoon dried.

1 onion, finely chopped
1 garlic clove, crushed
2 lbs lean ground turkey
1 tablespoon fresh parsley, minced
1 tablespoon fresh chives, minced
1 tablespoon fresh tarragon, minced
1 egg white, beaten lightly
1 medium zucchini, thinly sliced
2 medium tomatoes, thinly sliced
salt
black pepper

Steps:

  • Preheat oven to 375ºF and line a non-stick loaf pan with parchment paper.
  • Place the onion, garlic, turkey and herbs in a bowl. Mix together with your hands then add the egg white to bind.
  • Press 1/2 of mixture into preapred pan. Arrange sliced zucchini and tomatoes over meat. Top with the rest of the turkey and press down firmly.
  • Cover with kitchen foil and place in a roasting pan. Pour in enough hot water to come halfway up the sides of the loaf pan.
  • Bake for 1-1 1/4 hours, removing foil during the last 20 minutes. Test by inserting a skewer in the center of loaf; juices should run clear. The loaf will also shrink away from the sides when done.
  • Remove from pan and transfer to a warm platter. Serve with warmed tomato sauce if desired.

1 small zucchini, finely diced
1 red bell pepper, finely diced
1 yellow bell pepper, finely diced
5 cloves garlic, smashed to a paste with coarse salt
1/2 teaspoon red pepper flakes
Kosher salt and freshly ground pepper
1 large egg, lightly beaten
1 tablespoon finely chopped fresh thyme
1/4 cup chopped fresh parsley
1 1/2 pounds ground turkey (90 percent lean)
1 cup panko (coarse Japanese breadcrumbs)
1/2 cup freshly grated Romano or Parmesan cheese
3/4 cup ketchup
1/4 cup plus 2 tablespoons balsamic vinegar

Steps:

  • Preheat the oven to 425 degrees. Heat the oil in a large saute pan over high heat. Add the zucchini, bell peppers, garlic paste and 1/4 teaspoon red pepper flakes. Season with salt and pepper and cook until the vegetables are almost soft, about 5 minutes. Set aside to cool.
  • Whisk the egg and fresh herbs in a large bowl. Add the turkey, panko, grated cheese, 1/2 cup ketchup, 2 tablespoons balsamic vinegar and the cooled vegetables; mix until just combined.
  • Gently press the mixture into a 9-by-5-inch loaf pan. Whisk the remaining 1/4 cup ketchup, 1/4 cup balsamic vinegar and 1/4 teaspoon red pepper flakes in a small bowl; brush the mixture over the entire loaf. Bake for 1 to 1 1/4 hours. Let rest for 10 minutes before slicing.

The oatmeal and chili sauce were inspired by another recipe I found on RecipeZaar, but I added an assortment of vegetables to add color, texture, flavor, and nutrition. I like to use the Uncle Sam oatmeal because it contains flax seeds and wheat flakes along with the oats, but you can use any rolled oats or instant plain oatmeal you have on hand.

1 lb ground turkey breast
1 (1 1/4 ounce) packet instant plain oatmeal
1/4 cup skim milk
1 teaspoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1/2 cup shredded zucchini, excess water squeezed out
1/2 cup shredded carrot
3 button mushrooms, chopped
1/2 cup fresh spinach, chopped, excess water squeezed out
1 tablespoon Worcestershire sauce
1/4 cup chili sauce
salt and pepper

Steps:

  • Preheat oven to 350°.
  • Empty packet of oatmeal into a small bowl and add milk. Set aside.
  • Heat olive oil in a small sauté pan. Add onion and garlic and sauté until soft.
  • Add rest of the vegetables and cook until soft and some of the liquid has evaporated.
  • In a mixing bowl, mix ground turkey, oatmeal mixture, chili sauce, Worcestershire sauce and sauteed veggies until well combined. Form into a loaf shape and place in a greased loaf pan or on a greased cookie sheet.
  • Bake at 350°F until internal temperature reaches 140°F Raise oven temperature to 450°F and bake until internal temperature reaches 180°, and the outside of the loaf forms a nice crust.

I came up with this recipe in an effort to get my husband to eat more vegetables and this has become one of his favorite meals. This pairs well with mashed potatoes. If you wanted to make this extra healthy you could replace the bread crumbs with oatmeal.

20 ounces ground turkey (I use a 85/15 mix if you use leaner ground turkey you might want to increase the sour cream to 1/3cu)
2 carrots (medium sized and diced finely)
1 celery (large finely diced)
10 ounces frozen spinach (thawed and squeezed of all its excess juices)
1/2 larage onion (finely diced, I use Spanish onions)
4 minced fresh garlic cloves
1 cup breadcrumbs (I use Italian seasoned)
1/3 cup parmesan cheese (grated)
1 large egg
1/4 cup sour cream
salt and pepper (I find 3/4 tsp of kosher salt and 1/2 tsp of pepper works best for us)

Steps:

  • Preheat oven to 325.
  • Place diced carrots, celery, thawed spinach, 1/2 onion in a large pan with 3TB of olive oil over medium heat. Add 1/4 tsp of kosher salt and saute for 5 minutes. Add minced garlic and saute for an additional 2 minutes . Remove pan from heat and let cool. (This step is optional, I have made this meat loaf skipping this step but I find sauteing the vegetables brings out the flavors).
  • Meanwhile add ground turkey, bread crumbs, parmesan cheese, egg, sour cream , salt and pepper to a large bowl.
  • Add saute vegetables to the bowl of the rest of ingredients and mix well to combine. Pour into a prepared baking loaf pan( I find that baking spray with a little flour works best for an easy release).
  • Bake at 325 for 1hr 15- 30 minutes on last oven rack ( cover with foil the last 15- 30 minutes of cooking if it gets to brown on top and you don't like a crust).
