Yield one square pan 15.4cm x 5cm (depth)

Number Of Ingredients 8

Ingredients: 600 ml water 100 gm water chestnut flour (Pan Tang Guangzhou 廣州泮塘特產) 2 tsp / about 6 gm cornflour / corn starch 2 tsp oil 50 gm white sugar 50 gm brown sugar slab (冰片糖), finely chopped 8 water chestnuts, fresh, frozen or canned, roughly chopped
600 ml water
100 gm water chestnut flour (Pan Tang Guangzhou 廣州泮塘特產)
2 tsp / about 6 gm cornflour / corn starch
2 tsp oil
50 gm white sugar
50 gm brown sugar slab (冰片糖), finely chopped
8 water chestnuts, fresh, frozen or canned, roughly chopped

Steps:

  • Method: Grease the pan with a little of oil in order to help remove the cake from it at ease. Dissolve the water chestnut flour with 300 ml of water and cornflour completely. Drain through a fine sieve. Stir in 2 teaspoons of oil. Set aside. Put the other 300 ml of water, together with white sugar, chopped brown sugar into a deep pot. Cook until the sugar dissolves completely. Bring it to boil. Add the water chestnuts. Reduce the heat to low. Stir in the dissolved water chestnut flour mixture. Immediately stir to combine well into a thick but smooth batter. Make sure not to let the batter stick to the bottom. Pour the batter into the greased pan. Use a teaspoon, wet with some water, to level the surface. Cover with foil and steam in a wok or steamer, for about 30 to 35 minutes, or until the cake turns translucent, or an inserted needle comes out clean. Remove from the wok and let cool a bit. Remove the cake from pan and slice into pieces. Serve warm immediately. Or pan fry slices before serving. The leftover can be kept in fridge, covered, for up to a week or so.

3 3/4 cups boiling water
1 2/3 cups dark brown sugar
1 1/4 pounds (4 1/2 cups) canned water chestnuts, drained and coarsely chopped
8 ounces water chestnut powder mixed with 1 cup cold water

Steps:

  • Grease a 9-inch square cake pan.
  • Pour boiling water into a wok over high heat, add sugar and stir to dissolve. Add chopped water chestnuts and mix well. Add water chestnut powder mixture. Turn heat under wok to low. Stir mixture continually in one direction for 5 to 7 minutes, until mix is very thick and pasty.
  • Pour water chestnut mixture into greased pan. Place pan on a rack in wok. Add 8 cups boiling water, cover and steam for 40 minutes until it sets firmly and becomes translucent. Replenish boiling water after 20 minutes. Turn off heat, remove cake pan from steamer. Allow to set 4 minutes. Slice immediately and serve.
  • This is a most unusual cake. When freshly steamed and sliced, it has the consistency of a firm jelly. As it cools, it becomes very much like an aspic. It can be frozen either whole or in slices. To reheat, allow cake to return to room temperature, then steam for 10 minutes or until heated through. It will become more jellylike again. Eat it just as if it had been made fresh.
  • It can be pan-fried as well, but it must be cooled and refrigerated overnight preferably (not frozen) before doing so. To pan-fry, cut cooled cake into slices 2 inches square, 1/2 inch thick, and pan-fry in the same manner as turnip cake.

100 g butter
100 g sugar
3 egg yolks
2 egg whites
5 tablespoons milk
200 g bottled sweet chestnuts
100 g breadcrumbs
1 dash vanilla

Steps:

  • Lightly butter the side of the pan and lay a sheet of wax paper along the bottom.
  • Soften butter to room temperature.
  • Cut up the chestnuts finely.
  • Knead the butter in a small mixing bowel, till creamy.
  • Add sugar little at a time and mix well until creamy.
  • Add egg yolks, vanilla and milk gradually, mixing well with each addtion.
  • Add chestnuts and breadcrumbs, mix briefly.
  • Place the bowl of egg whites inside another bowl, of ice water.
  • Beat the egg whites until they stiffen.
  • Fold chestnuts and bread crumbs mixture into egg white.
  • Mix with just a few strokes and pour into 10 inch tube pan.
  • Butter oneside od a sheet of alminum foil and cover the top of the tin with it (buttered side down).
  • Place the cake in a preheated steamer and steam on medium 30 to 40 minutes.

  • Preheat oven to 350°F. Generously coat a 9-inch springform pan with cooking spray. Place butter between two sheets of parchment paper. Using a rolling pin, beat butter to 1/4-inch thickness. Remove and discard top parchment paper sheet. Cut butter into approximately 1/3-inch pieces.
  • Place chestnut paste in bowl of a heavy-duty stand mixer fitted with paddle attachment. Beat on medium speed until smooth, about 1 minute. Add butter pieces; beat until smooth, about 1 minute, stopping to scrape down sides of bowl as needed. Add half of the beaten eggs; beat on medium speed until mixture separates and looks broken, about 20 seconds. Remove paddle attachment from stand mixer; attach whisk attachment. Add granulated sugar to mixture; whisk on medium speed until combined, about 30 seconds. Add egg yolks, rum, and remaining half of beaten eggs; whisk until smooth, about 30 seconds. Add almond flour and baking powder; whisk on low speed until just combined, about 30 seconds.
  • Pour half of the chestnut batter into prepared springform pan. Roughly chop 2/3 cup chestnuts; sprinkle over batter. Top with remaining batter, spreading evenly over chopped chestnuts. Cut remaining 1/3 cup chestnuts in half crosswise; gently press into top of batter.
  • Bake in preheated oven until cake is golden brown and center springs back when gently pressed, about 45 minutes. Cool cake in pan on wire rack 20 minutes. Remove sides of springform pan; let cake cool completely, about 2 hours. Sprinkle with powdered sugar. Slice cake, and dollop crème fraîche evenly onto servings.
