1/2 teaspoon dried oregano
1/2 teaspoon white sesame seeds, toasted
1/4 teaspoon black sesame seeds, toasted
1/4 teaspoon brown sugar
Pinch salt and freshly ground black pepper
1 teaspoon finely julienned fresh ginger
2 sprigs fresh coriander (cilantro), finely sliced
4 fresh Vietnamese mint leaves, finely sliced
2 fresh Asian basil leaves, finely sliced
1/2 teaspoon pounded fresh ginger
1/2 teaspoon pounded garlic
1/2 teaspoon pounded onion
7 ounces tuna steak (preferably round)
2 tablespoons vegetable oil
1 whole mango, peeled, pitted and sliced
1 clove garlic, crushed
2 sprigs fresh coriander (cilantro), sliced
1 tomato, diced
1/2 onion, diced
Pinch salt and freshly ground black pepper
Juice of 1 lime

Steps:

  • In a shallow dish combine the oregano, white and black sesame seeds, brown sugar, pinch of salt and pepper, julienned ginger, coriander (cilantro), Vietnamese mint, Asian basil and the pounded ginger, garlic, and onion. Mix well, and then roll the tuna steak in the mixture, turning to coat it well. Place a nonstick pan over medium-high heat, and add the vegetable oil. Sear the tuna for 45 to 60 seconds on all sides, or until browned. Remove the tuna and slice into 3/4-inch thick slices and serve on a bed of the mango salsa. Finish with a squeeze of lime and sprinkle with a pinch or black sesame seeds.

2 tablespoons good olive oil, plus extra for searing
1 1/2 cups diced yellow onion (2 onions)
2 teaspoons peeled, minced fresh ginger
1 1/2 teaspoons minced garlic
2 ripe mangos, peeled, seeded, and small diced
1/3 cup freshly squeezed orange juice
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 to 2 teaspoons minced fresh jalapeno pepper, to taste (1 pepper)
2 teaspoons minced fresh mint leaves
2 tuna steaks

Steps:

  • Saute the olive oil, onions, and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent. Add the garlic and cook for 1 more minute. Add the mangos, reduce the heat to low and cook for 10 more minutes. Add the orange juice, brown sugar, salt, black pepper, and jalapeno; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add the mint. Serve warm, at room temperature, or chilled.
  • Heat a saute pan over high heat for 5 minutes until very hot. Season the tuna liberally with salt and pepper. When the pan is very hot, add a drizzle of olive oil and then the tuna steaks. Sear for 2 to 3 minutes on each side, or until the outside is browned, but the inside is very rare.
  • Serve the tuna on top of the mango salsa.

6 (8-ounce) tuna steaks, each 1 1/2 inches thick
1 tablespoon soy sauce
1 tablespoon olive oil
1/2 cup orange juice or blood orange juice (Oranfrizer brand preferred but not essential)
2 tablespoons grated ginger
1 mango, cut into 1/3-inch cubes
1 large yellow bell pepper, cut into 1/3-inch cubes
1 large red bell pepper, cut into 1/3-inch cubes
1 red onion, cut into 1/3-inch cubes
Salt and pepper
Leaves from 1 bunch cilantro, chopped

Steps:

  • Rub steaks with soy sauce and oil and marinate for 30 to 60 minutes.
  • In a large bowl, whisk together orange juice and ginger. Add mango, bell peppers and onion and set aside.
  • Prepare a charcoal grill for high-heat cooking. Season tuna with salt and pepper and grill, turning once, until desired doneness, about 2 minutes per side for rare, 3 minutes per side for medium-rare. Stir cilantro into mango mixture, season lightly with salt to taste and serve over tuna steaks.

I am guessing on times as I haven't had a chance to make this yet since we still have several feet of snow on!!! (Doesn't include marinating time.) **Made this last night on the griddle pan on the stovetop. Loved it and can't wait to try this on the charcoal grill... Light, filling and flavorful!

1/4 cup olive oil
4 tablespoons lime juice, fresh squeezed
1/2 cup reduced sodium soy sauce
1 1/2 tablespoons ginger, minced fresh
3 teaspoons garlic paste
4 tuna steaks, 1 in thick
2 mangoes, ripe, peeled and diced
1 orange, peeled and diced
1 small red onion, minced
1 jalapeno pepper, minced
3 tablespoons cilantro, chopped

3 teaspoons lime juice, fresh

Steps:

  • Whisk together the olive oil, 4 T lime juice, soy sauce, ginger and 3 t garlic paste. Place tuna steaks in a single layer in a nonreactive dish and cover with the marinatde. Turn to coat both sides. Place in the refrigerator 3-5 hours, turning occasionally.
  • In a small bowl, toss remaining ingredients and chill.
  • Remove tuna steaks from the marinade. Cook on a hot grill for about 3-5 minutes per side so that the steaks remain pink in the center. Spoon the chilled salsa over each steak and garnish with a cilantro sprig if desired.

1 large, firm but ripe mango, medium dice
1 medium tomato, small dice
1 medium Jalapeno, seeded and diced into small pieces
1 small red onion, diced finely
2 tablespoons lime juice

Steps:

  • Salsa: Combine all of the salsa ingredients in a small bowl. Stir, just enough to mix. Put into the refrigerator for at least 30 minutes to let the flavors combine together. Preheat barbecue grill or a stovetop grill. Lightly coat both sides of the ahi steaks with some olive oil. Place the steak onto direct heat, and cook only until grill marks form; about 3 to 5 minutes depending on how hot the grill is. Turn the steak over and cook for another 3 to 5 minutes. Remove the ahi from the heat, and set aside. Do not overcook the tuna or the flesh will become dry and lose its flavor. The steak will have a white ring around the edges and the center will be very pink when it is finished cooking. Remove from the grill. Spoon the salsa over the top. Serve. Eat.

1 cup soy sauce
2 teaspoons Chilli flakes
vegetable oil
1 mango
½ red bell pepper
½ onion
1 green onion, chopped
1 fresh cilantro, handful chopped
1 jalapeño pepper, seeded and minced
2 tablespoons lime juice
1 ½ teaspoons olive oil
salt, to taste
1 avocado, big
1 teaspoon wasabi
½ lime, juiced
2 tablespoons sour cream
1 teaspoon sesame oil

Steps:

  • Marinate the Ahi tuna steaks in soy sauce and chili flakes. The soy sauce should cover the steaks. Use more if needed. Chill in the refrigerator for 1 hour.
  • Mango salsa: Dice the mango, bell pepper and onion. Combine all ingredients in a bowl and mix well. Salt to taste. Chill in the refrigerator for 1 hour.
  • Wasabi-avocado cream: Blend all ingredients in a food processor until smooth or mash with a fork.
  • Ahi tuna steaks: Take tuna out of the marinade and pat dry with paper towels. Spray/brush with vegetable oil.
  • Heat a cast iron pan and sear tuna steaks for 2 minutes per side for medium or 4 minutes per side for well-done.
  • Spoon wasabi-avocado cream and mango salsa on the plate and lay Ahi tuna steak on top.
  • Serve and enjoy.
