TUNA AND NOODLES
I have loved this recipe since I was a child. I learned this from my mother and I hope everyone will enjoy. This is also a pretty simple recipe so it won't take long to make.

Steps:
- Heat water to it's boiling point.
- Once boiling, place pasta or noodle in water and boil for 6 minutes.
- Strain noodles and place back in original pot.
- Place all canned ingredients into your noodles making sure to drain the liquids from the peas, mushrooms and tuna and stir.
- Then, enjoy!
TUNA FISH SANDWICHES
When I was a child my Mom just used tuna packed in spring water mixed with a spoonful of Miracle Whip salad dressing, but when I became an adult my tastes changed. *Note: Cooking time: is toasting time.

Steps:
- Drain water from cans of tuna.
- Mix tuna, 2-tablespoons of Miracle Whip and onions together and divide in quarters.
- Pair up the 8 slices of toast.
- Spread 1-teaspoon on each slice of toast.
- Build each sandwich with 1-slice of cheese, tuna mixture, 1/4 of the shredded lettuce, 1-2 slices of tomato and other slice of toast.
- Place two toothpicks to hold each sandwich together approximately 1" from two opposite corners.
- Cut sandwiches diagonally and serve with potato chips.
CREAMED TUNA FISH ON A SHINGLE
Oh how I love this comfort food. This has been a staple piece in my diet since I was a little girl- It makes me happy.... Best on a cold winter night!

Steps:
- Melt butter over med heat in small sauce pan.
- Add flour slowly, stirring constantly until well combined (it should form a smooth paste with no balls of flour still hidden).
- Add milk slowly, stirring in between each addition till all is smooth and not curdled looking.
- Add salt and pepper.
- Lastly, add the tuna fish and bring to a low boil. If sauce is too thick for your liking, add more milk -- too thin, add more flour.
- *sauce will thicken a bit as it simmers*.
- I like to add more pepper- towards the 1/2 teaspoons mark- but add to your liking.
- Toast 6 slices of bread in toaster, immediately upon removing from toaster put a large spoonful of tuna mixture on top of toast and spread evenly over top.
- Grate desired amount of cheese on top and serve!

- Heat tuna and soup in a saucepan.
- Bring peas and corn to a boil in separate pan and drain when done.
- Mix together with tuna and soup.
- Bake biscuits according to directions.
- Ladle tuna mixture over hot biscuits.
SLOW COOKED OVEN TUNA STEAKS
Saw this on Fast Food My Way by Jacques Pepin: this is excellent! The tuna comes out cooked very evenly rare through the whole steak! There's two choices for relishes; each makes enough relish for 2 steaks. You can alternately choose one and double the ingredients to use on all 4 tuna steaks.

Steps:
- Preheat the oven to 200°F.
- Rub the tuna steaks on both sides with the canola oil and sprinkle them with the salt and pepper.
- Arrange the steaks on a serving plate, or on 4 dinner plates, and bake for about 20 minutes for rare. If you wish the fish cooked to medium, leave it in for a few more minutes.
- Meanwhile, make the salsas separately: combine all ingredients except olive oil, salt, and pepper in separate bowls.
- Add salt (and pepper) and olive oil, making sure to coat.
- Remove the tuna steaks from the oven and spoon the each sauce liberally over and around 2 tuna steaks. Serve immediately.
