3/4 cup mayonnaise
Juice of 1 lime, plus wedges for serving
3/4 to 1/2 teaspoon chipotle chile powder
8 tostadas (flat crisp tortillas) or taco shells
3/4 cup golden raisins
1/2 cup pimento-stuffed olives, halved, plus 1 tablespoon brine from the jar
1 clove garlic, lightly smashed
2 bay leaves
1 12-ounce container pico de gallo or fresh salsa (1 1/2 to 1 3/4 cups)
3 5-ounce cans solid white tuna packed in water, drained
1 cup lightly packed fresh parsley, chopped (about 1 small bunch)
1 small head romaine lettuce, thinly sliced

Steps:

  • Preheat the oven to 450 degrees F. Whisk the mayonnaise, lime juice, chile powder and 1 tablespoon water in a small bowl; cover and refrigerate. Put the tostadas on a baking sheet and bake until crisp, 5 minutes.
  • Heat a large skillet over medium-high heat; add the raisins and cook, shaking the pan, until plump, about 30 seconds. Add the olives, garlic and bay leaves; cook, stirring, 20 seconds. Add the pico de gallo, olive brine and 2/3 cup water. Simmer until thickened, about 8 minutes.
  • Add the tuna to the skillet in chunks and cook, spooning the sauce on top, until heated through, about 5 minutes. Sprinkle with the parsley and remove from the heat. Discard the garlic and bay leaves.
  • Spread about 1 tablespoon of the chile mayonnaise on each tostada. Top with the tuna and sauce, the lettuce and the remaining chile mayonnaise. Serve with lime wedges.

2 pounds thickly sliced sashimi-grade tuna
2 tablespoons olive oil
2 teaspoons fresh thyme, chopped
4 tablespoons cracked pink and green peppercorns
Salt and pepper
4 ounces mayonnaise
1 to 2 tablespoons wasabi powder
1 medium piece fresh peeled ginger
1/2 cup sugar
1/2 cup water
1/2 lemon, juiced
3 to 4 Belgian endives

Steps:

  • Have tuna sliced as thick as possible cutting against the grain into 1 1/2-inch rectangular pieces. Rub the fish with olive oil and roll in thyme, peppercorns, salt, and pepper. On a very hot grill sear the fish on each side for 30 seconds to 1 minute depending upon the desired doneness. Set aside and slice into 1-inch thick pieces.
  • For wasabi mayonnaise, start with 1 tablespoon of wasabi powder mixed with mayonnaise and add more, if desired, to taste.
  • Slice ginger into very thin sticks about 1-inch long. Place ginger, sugar, water and lemon juice into heavy saucepan and reduce to thick syrup. Be careful not to boil past medium ball state.
  • On individual washed white endive leaves place fish. Garnish with wasabi mayonnaise that has been put in a squeeze bottle and finish with a few pieces of ginger confit.

1 1/2 tablespoons lemon juice
1/2 cup olive oil
1/2 cup vegetable oil
1 garlic clove (crushed)

2/3 cup heavy cream

Steps:

  • Using a blender, immersion blender or food processor -- blend egg yolks & lemon juice till smooth.
  • While continuing to blend, all oils gradually till the mixture is thick.
  • Add garlic, capers, tuna + cream & blend till smooth.

Okay, I admit it - I Hate - I mean HATE mayonnaise - but who wants to eat a "dry" tuna sandwich. So I came up with this solution that we now enjoy (My daughter calls it "Tuna toast"). So if you're a mayo hater like me - or ya just want a change - here goes...

6 ounces canned tuna
2 -4 slices twelve-grain bread
butter or margarine
1 -2 tablespoon olive oil
1/2 teaspoon lemon pepper seasoning

Steps:

  • Drain tuna.
  • Toast 2-4 slices twelve grain bread (2 if you want a BIG sandwich, 4 if you want to share).
  • Butter toast.
  • Mix tuna with olive oil (I admit - I just pour so measurements are "guesstimated") and 1/2 teaspoon (again - I just give a few shakes) of lemon pepper salt.
  • If you like you may make mixture in advance or overnight to allow the flavors to blend (just remember to refrigerate if you make in advance).
  • At this point if you like chopped celery or whatever you normally add to your tuna sandwich - go for it -- Hey you can use this as a base idea and go from here - I won't take offense if you "tweak" the recipe.
  • Enjoy.
  • (Note: You might be asking, "Why not just buy tuna packed in oil?" - Cuz adding olive oil is healthier and more flavorful and plus YOU determine how much oil goes in).

1 cup mayonnaise
4 teaspoons soy sauce
1 1/2 teaspoons sugar
2 teaspoons fresh lemon juice
2 teaspoons wasabi paste (green horseradish paste), or to taste
a 12-ounce tuna steak, cut into twenty 1-inch cubes
ten 8-inch bamboo skewers, soaked in water 30 minutes

Steps:

  • In a bowl stir together mayonnaise, soy sauce, sugar, and lemon juice. Transfer 2/3 cup soy mayonnaise to a small bowl and stir in wasabi paste. Stir tuna into remaining 1/3 cup soy mayonnaise. Chill wasabi mayonnaise, covered, at least 1 hour and up to 24. Marinate tuna, covered and chilled, at least 1 hour and up to 24.
  • Prepare grill.
  • Thread 2 tuna cubes onto each skewer and grill on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, 2 to 3 minutes on each side. Serve tuna satés with chilled wasabi mayonnaise.
