3 tablespoons fresh cilantro (Chopped)
3 green onions (Chopped)
3 tablespoons carrots (Grated)
3 tablespoons red bell peppers (Chopped)
2 tablespoons sweet pickle relish (Drained)
1 hard-boiled egg (Chopped)
1/3 cup mayonnaise (Best Foods or Low-Fat)
1 small head iceberg lettuce (Chopped)
1 pint cherry tomatoes
4 dill pickles (Sliced)
1 bunch radish (Sliced)

Steps:

  • In a large bowl combine tuna, lemon zest and lemon juice. Use a pastry knife to mix the tuna. Season with fine sea salt and white pepper to taste.
  • Add remaining ingredients and mix until combined. Season with fine sea salt and white pepper to taste.
  • Cover Tuna Salad with plastic and chill for 30-minutes.
  • Serve on chilled salad plated with Iceberg lettuce .

1 teaspoon fresh lemon juice
1/2 teaspoon garlic powder

1/3 cup mayonnaise (Best Foods Low-Fat)
3 green onions (Chopped With Greens)
3 tablespoons carrots (Fine Diced)

Steps:

2 tablespoons dill pickle relish
2 tablespoons sweet pickle relish
¾ cup finely chopped onion

2 (6 ounce) cans tuna (I love Kimmel's from the PNW, I buy it at Whole Foods)
1/2 cup mayonnaise (no Miracle Whip for me)
1/2 cup chopped celery (one to two stalks)
3 cups salad greens
olive oil
red wine vinegar
salt
fresh cracked pepper
2 hard-boiled eggs, peeled and quartered
2 stalks canned hearts of palm, sliced
1 red bell pepper, chopped into twice-as-wide-as matchstick pieces

Steps:

  • Mix the first three ingredients and set aside OR stop there and eat as is or use for tuna sandwich, tuna melt, etc.
  • Divide the lettuce between two plates; dress with oil and vinegar, salt and pepper.
  • Pack the tuna mixture into a 1-cup measure and turn out onto the middle of one of the plates of lettuce; repeat.
  • Place the egg quarters, hearts of palm slices, and chopped red bell pepper around the tuna; if desired, garnish the top of the tuna with three pieces of red bell pepper.
  • I like to crack fresh ground pepper over all at this point.

I made this up all by myself. My mom and I are big tuna eaters. I eat tuna everyday and I find this to be the EASIEST and TASTIEST way I can possibly make my tuna salad for my lunch everyday. It's very quick and takes me about 5 minutes, it's also low fat and good for you. My mom tells me all the time that she loves it. I enjoy it as well, I eat this tuna salad nearly every day for lunch at school. I eat it with crackers, on bread or plain with some fruit, the Mrs. Dash gives it a great flavor, I always keep Mrs. Dash on hand. I hope you like it. It's a recipe concocted by a 15 year old chef. lol.

1 (3 ounce) can albacore tuna, drained (I prefer Starkist Albacore Tuna, in the single serving cans)
1 tablespoon light mayonnaise (or fat free)
1 teaspoon honey mustard (use a little more if tuna salad is too dry, I use a teaspoonful)
1/2 teaspoon Mrs. Dash seasoning mix
1 baby carrots, chopped (optional)
sweet relish (optional)

Steps:

  • Drain your tuna well.
  • Scoop into a bowl with a fork and flake it well with your fork, breaking up the larger chunks of tuna.
  • Add remaining ingredients and enjoy.
  • Whenever I'm in a hurry I just use the mayonnaise, honey mustard and Mrs. Dash.
  • When I have time I add the carrot which gives it a nice crunch.
  • Eat it on 2 slices of whole wheat bread, with tortilla chips, or with crackers.
  • Sometimes I just eat it plain it tastes just fine that way.
