2-3 cups dry pasta ((choose a short shape, like rigatoni, farfalle, penne, fusilli, etc. and enough for 4 servings))
Approx. 240 grams canned tuna, drained ((about 2 regular-sized cans))
2 cups cherry tomatoes, halved
2 cups basil
2 cloves garlic
1/4 cup hemp seeds
1/3 cup nutritional yeast
1/3 cup extra virgin olive oil
Salt + pepper, to taste

Steps:

  • Bring pasta water to a boil and cook pasta according to package directions.
  • While the pasta cooks, halve cherry tomatoes and set aside. Drain canned tuna and flake with a fork.
  • Next, prepare your the hemp seed pesto. Add all pesto ingredients into a food processor or blender and blend until smooth.
  • Once pasta is done, drain it and place in a large bowl. Stir in hemp seed pesto, canned tuna, and cherry tomatoes until everything is well-combined.
  • Adjust seasonings as desired. Pasta salad can be enjoyed warm or chilled!

I came up with this recipe, which met those requirements, and it tastes great, too! It's simple, quick, and travels well.

3 cups rotini pasta, uncooked

Steps:

  • Cook pasta according to package directions.
  • While pasta cooks, mix tuna, pesto, pepper, mayonnaise, cheese, olives, and lemon juice in a large bowl.
  • When pasta is cooked, drain and rinse with cold water.
  • Add pasta to tuna mixture and mix well.
  • Refrigerate at least 30 minutes before serving.

425g can tuna-in-oil, drained and flaked
1 small red onion, finely sliced
2 Lebanese cucumbers, halved lengthways and sliced
250g cherry tomatoes, halved
100g feta cheese, crumbled
1/2 cup pitted Kalamata olives, halved lengthways
1/4 cup fresh basil leaves

Steps:

  • Cook penne pasta in a large saucepan of boiling salted water following packet directions. Drain. Rinse under cold water. Drain in a colander until dry. Transfer to a large bowl
  • Combine pesto and lemon juice in a screw top jar. Season with salt and pepper. Shake well to combine
  • Add tuna, onion, cucumbers, tomatoes, feta and olives to pasta. Season with pepper. Drizzle with pesto mixture. Gently toss to combine. Scatter with basil leaves

200g can yellowfin tuna in olive oil
190g jar basil pesto (or try a different flavour such as spinach, tomato or aubergine pesto)
100g cheddar , grated
250g punnet cherry tomato , halved

Steps:

  • Boil the pasta. Meanwhile, tip the tuna and its oil into a large bowl with the pesto. Mash together with a wooden spoon. Stir in a third of the cheese and all of the tomatoes. Heat the grill to high.
  • When the pasta is cooked, drain and toss through the pesto mix. Tip into a shallow baking dish and scatter with the remaining cheese. Place the dish under the grill for 3-4 mins until just melted, then serve with a green salad and garlic bread.

4 -6 hard-boiled eggs, cut up into small chunks
1 tablespoon vinegar

1 1/2 tablespoons onion powder
1/4 teaspoon red pepper flakes
1/2 teaspoon ground pepper
1/2 teaspoon paprika
1/2 teaspoon dill

Steps:

1 cup mayonnaise
3 tablespoons lemon juice

1 red onion, diced
1 cup peas
¼ cup chopped fresh parsley

  • Bring a large pot of lightly salted water to a boil; cook cavatappi at a boil until tender yet firm to the bite, 9 to 10 minutes. Drain and transfer to a large bowl.
