Steps:
- Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
- Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

TUNA CROQUETTE

- Place the tuna, onions, mustard, eggs, lemon juice, salt, pepper and 1/4 cup of the bread crumbs into a medium mixing bowl and stir to combine. Divide the mixture into 8 rounds and set aside on a parchment lined half sheet pan. Allow to rest for 15 minutes. Place the remaining bread crumbs into a pie plate. One at a time, coat each round in the panko on all sides.
- Heat enough olive oil to cover the bottom of a 12-inch saute pan over medium heat until shimmering. Add the croquettes and cook 2 to 3 minutes on each side or until golden brown. Remove to a cooling rack set over a half sheet pan lined with paper towels. Allow to cool for 2 to 3 minutes before serving.
TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Steps:
- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.
TUNA AND POTATO PATTIES
Turn a can of tuna into easy Tuna and Potato Patties which have a crisp, crunchy exterior and a tender, flavoursome interior. This is a great budget dinner option that the whole family can enjoy. It is a tasty meal made with staples from the pantry. It is a meal which is quick to make and is easily put together after a busy day.

- Peel the potato and cut into cubes.
- Place the potato in a small saucepan and add enough cold water to just cover the potato. Add 1/2 teaspoon salt to the water. Over high heat bring the water to a boil. Reduce the heat to low and cover the saucepan with a lid. Cook the potatoes until tender, about 15 minutes. Test with a skewer to see if they are cooked. It should easily slide into the potato.
- Drain the potato when cooked. Return the potato to the empty saucepan for a minute or two to dry further in the residual heat.
- Add the potato to a medium size bowl and mash with a fork.
- Add the well-drained tuna and finely chopped onion and mix together.
- Add the egg and parsley and mix well. The tuna pieces should have broken down to a fairly fine texture.
- Season to taste with sea salt and freshly ground black pepper. Cover the bowl with cling wrap and refrigerate for at least 30 minutes to one hour to allow the mixture to firm up.
- Shape the mixture into small balls and then flatten into patties, shaping them firmly with your hands. I used an ice cream scoop to make even sized patties.
- Place the polenta/cornmeal on a large plate.
- Coat the patties evenly in the cornmeal and then move to a separate plate.
- Heat the olive oil in a large non-stick frying pan until it is hot but not smoking. Gently add the patties to the pan and cook about 3 minutes each side until the exterior is crisp and golden. Avoid moving the patties around, they are fragile. Leave them to cook and firm up. Turn only once if possible.
- Cook the Tuna Patties in batches if necessary. Place the first batch on a plate lined with kitchen paper and keep warm in a low oven.
- Serve the Tuna Patties with a wedge of lemon and a delicious salad.Alternatively, they make a great burger. Place them in a burger roll with mayonnaise, tomato slices and shredded lettuce.

- In a smaller bowl, whisk together the egg, mayonnaise, Sriracha, lemon zest, and lemon juice.

We love the texture of the canned albacore tuna the best for this recipe. Try to avoid the canned tunas which are very mushy.The amount of egg will vary depending on the dryness of your tuna and the absorption of the bread crumbs or panko. If you are unsure, start with 2 eggs, and if the mixture seems too dry to easily form into patties, add a 3rd egg.For keto, use crushed pork rinds or almond flour instead of panko and regular bread crumbs.

Found this recipe in "The Metro St. Louis Guide to Smart Parenting" as a kid-friendly healthy recipe. Very simple and very tasty! The sauce rEALLY makes the recipe! The soy and panko give a nice twist to the familiar boring tuna cakes of yesteryear. Can be used as a main dish or as an appetizer. NOTE: Due to the concensus of reviewers, I have decreased the original 1/4 cup soy sauce to 1.5 tablespoons.

- Beat eggs and then combine with tuna, soy sauce, pepper, onion, panko and melted butter.
- Form into patties (make small ones, so everyone gets 2 for a meal) and chill in refrigerator for 20 minues.
- In the meanwhile, make your dipping sauce. Mix the mayo, garlic powder, lemon juice, lemon pepper and Tabasco sauce (feel free to add more as you like).
- Place dipping sauce in a sandwich size Ziplock baggie.
- Heat oil in large pan.
- Cook tuna cakes for approx 4 minutes per side, or until golden brown, turning cakes only once to get good color.
- When browned on each side, remove and place on a paper towel to drain off excess oil.
- Take baggie with the dipping sauce and barely snip off one of the corners of the baggie. Drizzle the sauce over the top of each cake.
TUNA PATTIES
Steps:
- Peel the potatoes, cut them into chunks and put them in a pot of water to cook. When they are cooked, a fork will easily pierce the potatoes, strain them and mash them into a puree.
- Add drained tuna, eggs, onion, garlic, the parsley or basil, salt, pepper to taste and 1/4 cup of breadcrumbs. Mix well with a wooden spoon until all the ingredients are combined. The mixture will be a little wet.
- Place the rest of breadcrumbs on a plate.
- Form small balls with your hands and then flatten them into circular patties. Cover both sides of each with bread crumbs. (Alternative method: combine the bread crumbs directly into the mixture by adding a little bit at a time until the entire mixture is consistent. Then make the small balls and flatten into circular patties).
- Add 1/4 cup olive oil to the pan to fry the patties, but not deep fry.
- When the oil is at frying temperature, add the patties to the pan. Be careful not to crowd the pan too much, which will cause the cakes to steam rather than fry. Usually, it takes about 3-4 minutes on each side. They will look golden brown when ready. Remove them from the pan with a slotted spatula and place them on a paper towel to drain extra oil. Change oil when needed.
- If you don't want to fry them, you can spray a baking sheet with olive oil, place the uncooked patties on top, and place them in a pre-heated oven at 350 F (180 C) for 15-20 minutes, flipping the patties halfway through so they can brown on both sides.
