300 g dried pasta shells
4 heaped teaspoons baby capers
500 g ripe mixed-colour cherry tomatoes
1 tablespoon dried oregano, ideally the flowering kind
1 x 220 g jar of tuna in olive oil, from sustainable sources

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions.
  • Meanwhile, place a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil. Add the capers, fry until super-crispy, then scoop out and put aside, leaving the fragrant oil behind.
  • Halve and add the tomatoes, then sprinkle in most of the oregano.
  • Drain and flake in the tuna, add 2 ladlefuls of pasta cooking water, and simmer until the pasta is done.
  • Drain the pasta, reserving a mugful of cooking water, then toss the pasta into the tuna pan, loosening with a splash of reserved cooking water, if needed.
  • Taste, season to perfection with sea salt and black pepper, then dish up. Sprinkle over the crispy capers and the remaining oregano from a height, drizzle with 1 teaspoon of extra virgin olive oil, and tuck in.

½ lb linguine
2 tablespoons olive oil
2 cloves garlic, thinly sliced
½ teaspoon red chili flakes
2 teaspoons dried oregano
1 tablespoon caper
½ cup kalamata olive
2 tablespoons tomato paste
14 oz diced tomato, 1 can
5 oz tuna, 1 can, drained

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain.
  • Add the olive oil, garlic, and chile flakes to a large sauté pan. Turn the heat to medium-low and slowly heat up until the garlic is fragrant and lightly colored, about 3 minutes.
  • Add the oregano, capers, olives, tomato paste, and diced tomatoes. Bring the sauce to a simmer and cook for 8-10 minutes, stirring occasionally.
  • Add the tuna and cook for another minute.
  • Toss in the cooked pasta.
  • Enjoy!

1 tomato, cored, cut in half crosswise and squeezed of excess juice, chopped (about 1 cup)

2 tablespoons parsley, chopped
1 tablespoon capers, coarsely chopped
2 teaspoons lemon juice
2 tablespoon extra virgin olive oil (more if you are using tuna packed in water)

  • Put the pasta water on to boil: Heat 2 quarts of salted water (1 tablepoon kosher salt) to a boil. While heating the pasta water, prep the ingredients.
  • Boil the pasta until al dente: When the water comes to a boil, add the pasta and bring back to a boil. Cook, uncovered, at a rolling boil until al dente (cooked through, but still a little firm to the bite), about 6 to 9 minutes more. Reserve 1/4 cup of the pasta water.
  • Serve and enjoy! Serve warm as a light lunch or a dinner side.

1 small red onion, thinly sliced
1 (5 ounce) can tuna packed in olive oil, undrained

There are about a gazillion ways to cook pasta using other pantry staples - things like garlic, bread crumbs, pecorino, capers, olives and especially, canned fish. This recipe, pasta with tuna, anchovies and capers, showered with lots of green herbs and scallions, is one of my family's household favorites. I like it with a long, thin, twirlable pasta - spaghetti, linguine or bucatini - but you can use whatever pasta you have on hand. Even macaroni works just fine and might even persuade your finicky kid to eat this dish (though, so far, mine abstains).

12 ounces long, thin pasta, such as bucatini, spaghetti or linguine
3 tablespoons extra-virgin olive oil
3 garlic cloves, thinly sliced
3 scallions, thinly sliced, white and green parts separated
6 to 10 anchovies, chopped
3 tablespoons drained capers
1 cup torn fresh herbs, such as parsley and dill, or celery leaves, plus more for serving (optional)
1 (5- or 6-ounce) can tuna, drained
Red-pepper flakes, for serving
Lemon wedges, for serving

Steps:

  • In a well-salted pot of boiling water, cook pasta according to package directions until al dente. Drain, saving 1 cup pasta water.
  • In a large skillet, heat the oil over medium. Add garlic and scallion whites, and cook until fragrant, about 1 minute. Add anchovies and capers and cook until anchovies melt and capers and garlic turn golden, 2 to 3 minutes longer. Add 1/2 cup pasta water, let it reduce until there is just a little left in the pan, then add pasta and herbs and toss well to coat. Add tuna and toss well.
  • Serve with red-pepper flakes on top, more herbs, scallion greens, and a drizzle of olive oil. Serve with lemon wedges on the side for squeezing.

2 sliced onions

1 pound halved cherry tomatoes
2 ounces grated pecorino cheese

2 cans drained oil-packed tuna

Steps:

  • Cook spaghetti, reserving 1 1/2 cups pasta water, then drain.
  • Meanwhile, in a skillet, cook onions in olive oil until slightly golden. Add tomatoes and cook until just soft. Add pasta water and pecorino and heat until thick and creamy. Add pasta, capers, and tuna. Cook until sauce coats pasta. Season with lemon zest and juice. Top with panko.

1 (5 ounce) can tuna, packed in olive oil, drained
¼ cup olive oil, divided
¼ cup finely chopped fresh basil
½ large organic lemon, juiced and zested
salt and ground black pepper to taste
1 ounce canned anchovy fillets, drained
2 teaspoons capers
1 clove garlic, thinly sliced
1 (14.5 ounce) can diced tomatoes
½ bunch fresh parsley, finely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Empty tuna into a bowl and mash with a fork while pasta is cooking. Mix with 2 tablespoons olive oil, basil, lemon juice, lemon zest, salt, and pepper.
  • Heat the remaining 2 tablespoons olive oil in a large skillet and fry the anchovies for 3 minutes. Add capers and garlic; cook, stirring constantly, for an additional 3 minutes. Add tuna mixture and tomatoes; simmer sauce for about 5 minutes.
  • Drain pasta and add to the sauce. Mix well. Stir in parsley before serving.

14 oz Pappardelle pasta ((400g))
3 cups cherry tomatoes (cut in half (525g))
1 red onion (cut in half and finely sliced)
⅓ cup white wine such as Pinot Grigio (Grecco di Tuffo or Pecorino (80ml))
1 can tuna (good quality (5.6oz/160g))
1 tablespoon capers
¼ teaspoon red pepper flakes ((chilli flakes))
1 small handful fresh parsley
1-2 tablespoons olive oil
Salt and pepper

Steps:

  • Bring a large pot of salted water to a boil. Finely slice the onion and cut the tomatoes in half.
  • Add the olive oil to a large pan or skillet on a medium heat. Add the onion and saute until soft (2-3 minutes).
  • Once soft, add the tomatoes and red pepper flakes and saute until soft and can be squashed easily with the back of a wooden spoon.
  • At this point, add the pasta to the water and cook until al dente (about 8-9 minutes).
  • Once the tomatoes are soft, add the white wine and reduce it by half. Add ⅓ cup of pasta water (80ml), tuna, capers and a pinch of salt and pepper and simmer gently until the pasta is ready.
  • Using tongs, transfer the pasta to the sauce the toss to combine in the sauce. Add the parsley and stir then serve.

150g spaghetti or linguine
1 tbsp olive oil
1 garlic clove, sliced
1 red chilli, deseeded and finely chopped, plus extra to serve (optional)
1 tbsp drained capers
small bunch of parsley, finely chopped (stalks included)
145g tuna in spring water, drained
90g rocket or baby spinach leaves
½ lemon, juiced

Steps:

  • Cook the spaghetti for 9-11 mins in a large pan of well-salted water until al dente.
  • Heat the oil in a wide frying pan over a very low heat, and gently cook the garlic and chilli to infuse the oil. Remove from the heat if the garlic is turning past light golden, as this will make it bitter.
  • Drain the pasta, keeping a cupful of the cooking water, and tip the spaghetti into the frying pan. Toss the pasta in the oil over a low heat, adding a little of the pasta water to emulsify into a sauce that coats the pasta, then fold in the capers, parsley, tuna and some seasoning. Don't stir too vigorously - you want to keep larger chunks of tuna. Toss the rocket and lemon juice through the spaghetti, and serve with extra chilli scattered over, if you like.

1 lb vine ripened tomatoes, diced
salt
12 ounces bite size pasta (penne)
2 (5 ounce) cans tuna packed in oil, not drained
3 garlic cloves, minced
1 teaspoon dried oregano
1/2 cup capers, drained
4 ounces crumbled feta cheese, plus extra for topping
1/4 cup fresh basil or 1/4 cup fresh parsley

Steps:

  • Prepare tomatoes and place in medium bowl. Sprinkle lightly with salt.
  • Meanwhile boil 1 quarts of water with some salt to cook the pasta. Cook partly covered until tender. Drain and then return pasta to pot.

1 teaspoon extra virgin olive oil
6 medium garlic cloves, thinly sliced
2 tablespoons capers, rinsed roughly chopped
2 anchovies, finely minced
1/2 cup pitted black olives, roughly chopped
1 pint cherry tomatoes, halved or 28 ounces whole canned tomatoes, chopped
1/2 cup parsley or 1/2 cup basil leaves, loosely packed, roughly chopped

Steps:

  • Cook pasta.

2 tbsp olive oil
1 red onion , finely chopped
500g cherry tomatoes , halved
400g dried pasta (we used rigatoni)
1l hot vegetable stock
2 x 110g cans tuna in olive oil, drained
3 tbsp mascarpone
30g parmesan , grated
2 heaped tbsp capers
½ lemon , zested
small bunch parsley , finely chopped

Steps:

  • Heat the oil in a saucepan over a medium-low heat. Add the onion and a pinch of salt and fry gently for 7 mins or until softened and turning translucent. Add 350g of the tomatoes, the pasta and veg stock to the pan and bring to the boil, then reduce to a simmer and cook for 15 mins, uncovered, stirring occasionally. The tomatoes should have broken down and the pasta will be just cooked.
  • Add the remaining tomatoes and bubble uncovered on a medium-high heat for 5 mins or until the liquid has reduced. Gently fold through large flakes of tuna, the mascarpone, parmesan, capers, lemon zest and parsley as well as salt and a generous grind of black pepper. Place a lid on the pan and leave to sit for 5 mins before serving in deep bowls.
