Steps:
- Combine the tuna, olive oil, panko, parsley, chives, garlic, salt, pepper, paprika, and egg in a large bowl until evenly mixed.
- Divide the mixture into 4 portions and form patties with your hands.
- Heat a drizzle of olive oil in a large skillet over medium-high heat.
- Place the patties in the pan and cook for 3-5 minutes on each side, until golden brown.
- Serve on whole wheat buns with your preferred toppings.

TUNA BURGERS WITH TAPENADE AIOLI
Steps:
- Combine the tuna, Dijon, chipotle, oil, honey and green onion in a bowl and season with salt and pepper. Shape the chopped tuna firmly into 8 round uniform patties about 1 1/2 inches thick. Place in the refrigerator for 30 minutes. (The burgers must be very cold to hold their shape when cooking.)
- Grill burgers for 3 minutes on each side for medium doneness.
- For the tapenade aioli:
- Combine olives, capers, garlic, lemon zest and lemon juice in the bowl of a food processor and process until coarsely chopped. Add the mayonnaise and process until smooth, season with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.
- Serve burgers with ciabatta rolls and aioli. Garnish with watercress.

- Chop the tuna into small chunks, then carry on chopping until the tuna is roughly minced. Tip the tuna into a bowl and mix with the garlic, ginger, soy sauce and coriander. Shape into two burgers, place on a plate, then freeze for 10 mins to firm up.
- Heat the oil in a non-stick frying pan, then cook the burgers for 1-2 mins on each side or until done to your liking. Serve the burgers in toasted buns with lettuce, tomato and avocado.

- If baking(you can also fry-instructions below), preheat oven to 450 degrees F.
- In a small bowl, mix sauce ingredients. Place 2 tbls. of the sauce in a large bowl. Cover and chill the remaining sauce in the fridge.
- To the same large bowl, add the eggs, panko, soy sauce, and Thai chili sauce. Break up the tuna and add to the bowl. Add celery, green onions and red bell pepper. Salt and pepper to taste. Stir and let stand about 10 minutes.
- Using wet hands, shape the tuna mixture into 4 patties, about 3/4" thick.
- If you want to fry them, put the oil in a skillet and heat on medium high heat. Turn down the heat to medium and add burgers and saute about 4-5 minutes each side, turning gently.
- If you bake them, place on baking sheet. Bake at 450*F. for 10-12 minutes.
- To serve, spread sandwich buns with remaining mayo/ginger sauce. Add patties to the bottom half of bun. Top with baby greens, and top buns.
- Enjoy!
CRUNCHY TUNA BURGER

- Add the tuna in a food processor and pulse to grind. Put the tuna in bowl and stir in the chives, tamari, garlic, and black pepper, to taste. Add the panko crumbs and sesame seeds to a shallow dish. Form the tuna mixture into 8 small patties and roll in the bread crumbs.
- In a large skillet over medium-high heat, add the vegetable oil. Put the burgers in the pan and cook until lightly golden brown on the outside and pink in the middle, about 2 minutes per side.
- Put the burgers on the bun bottoms. Top with lettuce and pickled ginger, then slather the bun tops with wasabi mustard. Cover with the bun tops and serve with fancy root vegetable chips.

- Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. - Combine all the burger ingredients, except the olive oil, in a large mixing bowl. Add as much or as little seasoning as you like, and stir with a fork or your hands. Once the mixture is fully combined divide into 3 parts and use you hands to create three burgers/patties. The mixture will be quite moist, place the burgers on a plate and put in the fridge for 10 minutes to set.
- Meanwhile, combine the garlic mayo ingredients in a small bowl or mug and mix well. Add a little water if necessary for consistency.
- Heat the olive oil in a frying pan and making sure the oil is very hot add the burgers and fry on both sides on a medium-high heat for 3-4 minutes or until dark brown on both sides. Be very carefull with them to ensure they stay well formed.
- Once cooked remove from the pan and place in a Burger bun or on a bed of spinach leaves (for wheat and carb free lovers) and drizzle the garlic mayo on top. Any left overs can be re-heated gently in a pan. Enjoy!

- Chop tuna until it is the texture of hamburger and presses into a compact ball, and place it in a large mixing bowl.
- Add garlic, 4 tablespoons olive oil, anchovies, basil, 2 teaspoons soy sauce and salt and pepper to taste. Mix well, shape into four patties 1 inch thick, and set aside. (Patties may be placed on a wax-paper-lined baking sheet and covered and refrigerated for 1 to 8 hours. Remove from refrigerator 30 minutes before sautéing.)
- In a small bowl, combine mayonnaise with remaining soy sauce and ginger. In a mixing bowl, combine mesclun with remaining tablespoon olive oil and the vinegar. Toast buns on one side.
- Place a large sauté pan over medium-high heat and add oil. Add burgers and sauté for 1 1/2 minutes a side for rare. Set burgers aside in a warm place for 2 minutes. To serve, spread mayonnaise mixture on bottom bun, add burger, tomato and a portion of mesclun. Top with other bun. Repeat with other burgers and serve immediately.

I love this recipe because it is simple and packed with flavor. My sister when we were much younger had decided to stop eating meat, and so my mother and I had to create some new dishes for her to eat... we came up with this. It also works with canned Salmon...enjoy!!!

Steps:
- In a medium bowl mix all ingredients together thoroughly. I noticed it is a better consistency if you mix with your hands.
- Place the extra breadcrumbs for coating on a shallow dish.
- Preheat pan on medium with Pam.
- Form a patty with your hands and coat both sides of it with breadcrumbs.
- Place the patty in a preheated fry pan.
- Repeat steps until mix is finished, usually around 6 patties.
- Cook until each side has browned and has a slight crispiness.
- I like to serve them on toasted bread with mayo, lettuce, and tomato if you like.
