SPICY TOFU AND GREEN BEAN STIR-FRY



Spicy Tofu and Green Bean Stir-Fry image

1 cup jasmine rice
1 14- to 16-ounce block extra-firm tofu, drained
1 pound trimmed green beans
2 tablespoons Sriracha, plus more for serving
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons fish sauce
3 tablespoons vegetable oil
1 small red onion, sliced
2 cloves garlic, finely chopped
1/2 cup torn fresh basil, plus small leaves for topping
1/4 cup salted roasted peanuts, roughly chopped

Steps:

  • Cook the rice as the label directs. Set aside and keep warm.
  • Meanwhile, cut the tofu into 24 pieces and gently press between paper towels to remove the excess liquid; set aside 5 minutes to drain. Put the green beans in a large microwave-safe bowl with 1 tablespoon water. Cover and microwave until bright green and crisp-tender, about 5 minutes. Let cool slightly, then drain. Combine the Sriracha, soy sauce, sugar, fish sauce and 1 tablespoon water in a small bowl; stir to combine.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the tofu in a single layer and cook, turning occasionally, until browned and slightly crisp, 8 to 10 minutes. Remove to a plate. Heat the remaining 2 tablespoons vegetable oil in the skillet over high heat. Add the red onion and cook, stirring, until tender, 2 to 3 minutes. Add the green beans and cook, stirring once or twice, until lightly charred, 3 to 5 minutes. Stir in the garlic and cook until softened, about 30 seconds. Return the tofu to the skillet along with the Sriracha mixture and cook, stirring, until well coated, about 30 more seconds. Remove from the heat and stir in the torn basil.
  • Divide the rice among plates and top with the stir-fry. Top with the peanuts, a few small basil leaves and more Sriracha.

Can't remember how many times I've made this but it's always a favourite with my church friends. Saw this on a Japanese cooking show some years ago.

200 g tofu, compressed and cut into chunks
1 cup chopped tomato (chunks)
1 avocado, cut into chunks
1 -2 dried chili
1/4 cup sesame seed oil
1/8 cup vinegar
1/8 cup sugar
1/4 cup soy sauce

Steps:

  • Put the first 3 ingredients into a big serving bowl.
  • Mix vinegar, sugar and soy sauce in a measuring cup until the sugar dissolves completely.
  • Pour the mixture into the avocado mixture and let sit for 10 minutes.
  • Using a small saucepan, heat the sesame seed oil together with the chilli pepper until it 'smokes'.
  • Remove and pour this over the avocado mixture.

1 tbsp vegetable oil
1 head broccoli , cut into small florets
4 garlic cloves , sliced
1 red chilli , deseeded and finely sliced
1 bunch spring onions , sliced
140g soya bean
2 heads pak choi , quartered
2 x 150g packs marinated tofu pieces
1 ½ tbsp hoisin sauce
1 tbsp reduced-salt soy sauce (add extra to suit your own taste)
25g roasted cashew nuts

Steps:

  • Heat the oil in a non-stick wok. Add the broccoli, then fry on a high heat for 5 mins or until just tender, adding a little water if it begins to catch. Add the garlic and chilli, fry for 1 min, then toss through the spring onions, soya beans, pak choi and tofu. Stir-fry for 2-3 mins. Add the hoisin, soy and nuts to warm through.

Evil Jungle Prince was the first Thai dish I ever made, and was so good that we went into the kitchen and made another batch to eat right then and there! These days I make it with tofu, but chicken tastes better.

2 -4 serrano chilies or 2 -4 cayenne chilies
1 stalk lemongrass
10 kaffir lime leaves or 1 teaspoon grated lime zest
peanut oil
1 (14 ounce) can coconut milk
1 lb tofu or 1 lb chicken, cut into pieces
10 fresh basil leaves
Thai fish sauce
thinly shredded cabbage or hot cooked rice, for serving

Steps:

  • Pound the peppers, lemongrass and lime leaves to a paste. (Or slice them with a knife, then salt them lightly, then keep chopping the pile until they are paste-like.).
  • Heat the oil in a skillet and add the paste; fry until fragrant.
  • Add the chicken or tofu and cook until chicken is cooked through (or tofu is nice and hot). Add the basil and fish sauce to taste. Serve on thinly shredded cabbage.

One 1-pound block extra-firm tofu
3 tablespoons low-sodium soy sauce
2 tablespoons toasted sesame oil
1/2 teaspoon chili paste or Tabasco (optional)
3 tablespoons freshly squeezed lime juice
1 tablespoon grated ginger
2 pounds bitter greens, such as collard, mustard, baby bok choy, or dandelion, washed, trimmed, and torn into pieces
1 teaspoon sesame seeds, lightly toasted
1/4 teaspoon crushed red-pepper flakes
6 cloves garlic, thinly sliced

Steps:

  • Cut tofu in half lengthwise, then cut each piece across into 6 slices. Place tofu on a paper-towel-lined plate. Cover with more paper towels; place another plate on top. Weight with a few soup cans. Chill 30 minutes so towels absorb excess water.
  • In a medium bowl, combine soy sauce; sesame oil; chili paste or Tabasco, if using; lime juice; ginger; and garlic. Set aside. Transfer tofu to medium bowl; toss with half the marinade; let sit for 30 minutes.
  • Heat a nonstick skillet over medium heat. Working in batches, arrange tofu in a single layer in pan. Cook until golden brown, about 2 minutes per side. Transfer to platter; repeat with remaining tofu. Gradually add greens to skillet with remaining marinade. Cook, tossing occasionally, until greens are wilted and most of the liquid has evaporated, 5 to 8 minutes. Transfer to platter with tofu. Sprinkle with sesame seeds and red pepper; serve.

2 green onions, chopped
1/2 teaspoon paprika
2 cloves garlic, chopped
1/2 inch fresh ginger, chopped
2 tablespoons soy sauce
4 blocks firm tofu (12 oz. each), cut into 1-inch cubes
1/4 cup green peas
1 tablespoon oil
1 clove garlic, chopped
1/4 teaspoon ground black pepper

Steps:

  • Wash the Swiss chard and tear it into pieces, removing the stems. Heat a little oil in a frying pan, and stir-fry the green onions, along with the paprika, ginger, and 2 cloves of garlic. Stir in the soy sauce, tofu, and peas. In a separate frying pan, heat a tablespoon of oil very hot. Stir in the black pepper. Add the Swiss chard, still slightly wet, and toss to coat with the oil and pepper. Cover the pan and let it steam for 30 seconds. Spread the greens on a serving platter and pour the tofu mixture on top2

I love to cook with chile crisp, a fiery hot-pepper condiment born in the Sichuan Province of China that generally relies on fried shallots and garlic for texture, and on any number of umami-rich special ingredients for distinction and oomph. It's magical: a boon to noodle soups and kitchen-sink stir-fries, to eggs and cucumbers, to plain steamed fish. Here, I use it as the base of a marinade and topping for baked tofu and green beans, with black vinegar, a little sesame oil, a wisp of honey, minced garlic and ginger, along with scallions and cilantro. But you could use the mixture on a mitten and have a very nice meal.

Steps:

  • Heat oven to 450 degrees. In a baking dish or casserole, whisk together the chile crisp, soy sauce, vinegar, sesame oil, honey, garlic, ginger, scallions and cilantro.
  • Add the tofu slices to the dish, and coat them with the sauce, then allow to marinate for as long as it takes to heat the oven and trim the green beans.
  • Add the green beans to a large sheet pan, then drizzle the neutral oil on top and toss to coat. Slide the green beans to the sides of the pan, and arrange the slices of tofu in an even layer in the center of the pan. Pour remaining marinade over the tofu, and place in oven.
  • Roast until the green beans start to blister, 20 to 25 minutes. Serve immediately with rice and extra chile crisp on the side.
