- In a large bowl, cream butter and sugar until fluffy. Add eggs, beat 2 minutes. Add bananas; beat 2 minutes longer. Set aside. Sift together flour, baking soda and salt; add to creamed mixture alternately with buttermilk and vanilla. Beat well. Stir in pecans. , Pour into two lightly greased 9-in. round baking pans. Sprinkle with 1/2 cup coconut. Bake at 350° for 25-30 minutes. Remove cakes from the pan and cool, coconut side up, on wire racks., For filling, combine sugar, flour, cream, salt and butter in a saucepan. Cook over medium heat until thickened. Stir in pecans and vanilla. Cool. Spread filling over the bottom (plain side) of one cake layer. Place remaining cake layer, coconut side up, on top of filling. , In a bowl, combine frosting ingredients; beat until smooth. Place a 3-in. circle in the center of the cake top. Frost sides and top edges of cake. Remove the circle to expose coconut.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Combine blueberries, bananas, eggs, flax seed, and wheat germ in a large bowl; mix by hand with a wire whisk until combined. Add flour, oats, milk, sugar, oil, vanilla extract, baking powder, baking soda, and salt; gently mix by hand for 2 minutes until thoroughly combined.
- Combine brown sugar, pecans, flour, and cinnamon for the topping in a medium bowl; mix with a fork until combined. Add melted butter; stir well.
- Pour 2/3 of the cake batter into the prepared pan and sprinkle with 1/2 of the topping. Gently ladle the rest of the cake batter over top, and sprinkle with remaining topping.
- Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center comes out clean, 30 to 35 minutes more. Remove from the oven and allow to cool for 15 minutes.
- While the cake is cooling, combine confectioners' sugar and milk in a bowl. Whisk to desired consistency, adding more milk if necessary. Drizzle over warm cake and serve immediately.

Steps:
- Cream together sugar and shortening.
- Add eggs.
- Beat in mashed bananas.
- Sift dry ingredients; add to creamed mixture.
- Add buttermilk and vanilla.
- Stir in chopped nuts.
- Turn into 2 greased and floured 9 inch layer pans.
- Sprinkle 1/2 cup coconut on each layer.
- Bake in 375°F oven 25 to 30 minutes.
- Combine sugar flour butter and cream in saucepan cook until thickened stirring constantly.
- Add nuts vanilla and salt. Cool and put between cake layers.
BLUE RIBBON BANANA CAKE
This won 1st place in the cakes division at the Mayfest festival. I've made it a couple of times and it is soooo good!! If you let the cake set with the frosting on it for a little while the frosting gets hard and crunchy, i love it that way!!

Steps:
- Beat eggs, add sugar, butter, bananas, buttermilk, baking soda, baking powder, vanilla, nuts, coconut and flour.
- Mix all together and bake in two 9 x 9 inch round pans at 350 for 35-40 minutes, or until a toothpick inserted near the center comes out clean.
- Remove from oven.
- Let stand 10 minutes before removing from pans to wire racks.

- Mix together all ingredients and cook until thickened.

THE BEST BANANA CAKE
This banana cake is delectably moist, perfectly sweet and easy to make. Dark brown sugar and sour cream add depth to the batter, and we added melted butter instead of vegetable oil for a flavor boost. Fluffy cream cheese frosting and swirls of dulce de leche will make you go back for seconds. We also upped the ante by using bananas in two ways -- fresh bananas are mixed into the cake while maple-candied banana chips create a crunchy topping.

- Preheat the oven to 350 degrees F and line a 9-by-13-inch baking pan (see Cook's Note) with aluminum foil, leaving a 2-inch overhang on the two longer sides. Lightly spray the foil with nonstick cooking spray.
- For the cake, mash the bananas in a large bowl with a fork or potato masher until very smooth. Whisk in the dark brown sugar, melted butter, sour cream, eggs and vanilla until smooth and combined. In a separate large bowl, whisk together the flour, cinnamon, baking soda and salt.
- Fold the dry ingredients into the banana mixture in thirds until just combined. Pour into the prepared baking pan and smooth the top. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour. Leave the cake in the pan to cool slightly, about 30 minutes. Use the foil overhang to remove the cake from the pan, then transfer to a wire rack to cool completely.
- Meanwhile, beat the butter, cream cheese and salt in a large bowl with an electric mixer on medium speed until smooth. Reduce to low speed, then add the powdered sugar a cup at a time until smooth. Increase the speed to medium-high and beat until fluffy, 1 to 2 minutes. Beat in the vanilla extract.
- Transfer 1/2 cup of the frosting to a small bowl and stir in the dulce de leche until smooth. Cover both frostings with plastic wrap and keep at room temperature until ready to assemble the cake.
- For the candied banana chips, warm the maple syrup in a medium nonstick skillet over medium heat until it just starts bubbling. Add the banana chips and cook, tossing and stirring frequently with a rubber spatula, until the chips have absorbed almost all the maple syrup and are browned in spots, 3 to 4 minutes. Immediately transfer the banana chips to a baking sheet, spread in an even layer and cool completely. Once cool, roughly chop.
- Transfer the cake to a serving platter. Spread about 3/4 cup plain cream cheese frosting all over the top of the cake.
- Dollop the dulce de leche frosting and remaining plain frosting on top, then use a small offset spatula to swirl both frostings together in a swooping design, making sure the frosting goes all the way to the edges of the cake. Top with the chopped candied banana chips.
BLUE RIBBON POUND CAKE
Steps:
- Sift together the flour, baking powder, salt and nutmeg and set aside.
- Cream butter until very light and fluffy, then add sugar gradually, creaming all the while. Add the eggs, one at a time, beating after each addition just enough to mix.
- Combine the milk and the flavoring (lemon, vanilla or lemon and vanilla). Add the sifted dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
- Pour into a well-buttered-and-floured 10-inch tube pan, filling to within about 2 inches of the top. Bake in a 300 degree oven for about 1 hour and 20 minutes, or until cake just begins to pull from the sides of the pan and a finger pressed gently on the top of the cake leaves a print that vanishes slowly.
- Cool cake upright in the pan on a wire rack for 10 minutes, then turn out on the rack and cool to room temperature before cutting. Serve as is or garnish, if you like with a dusting of confectioners' sugar and a few red, ripe strawberries

- Cream butter and sugar until fluffy. Add eggs and beat 2 minutes. Add bananas and beat 2 additional minutes. Set aside. Sift together flour, baking soda and salt. Add to creamed mixture alternately with butter, milk and vanilla. Beat well. Stir in nuts. Turn into 2 lightly greased 9" round cake pans. Sprinkle batter with 1/2 of coconut. - In a small saucepan, combine the brown sugar, 1 tablespoon lemon juice and butter; bring to a boil. Reduce heat to medium; cook without stirring until sugar is dissolved. , Pour into a greased 9-in. springform pan. Sprinkle with pecans. BANANA CAKE
This cake is very simple, but sometimes simple things are best! The cake is moist and full of banana flavor. The caramel type frosting tops the cake off great. I bet a peanut butter or chocolate glaze would be good also. If you don't have ripe bananas, her tip is great and works wonderfully!

- Preheat oven to 350. Spray 9X13 pan or disposable pan.
- Beat together bananas** and eggs with mixer on medium til bananas are mashed,about 1 min.
- On low speed pour in melted butter, add in cake mix and milk, beat on medium for 2 mins.
- Pour into pan {disposable foil pan works great for this recipe}
- Bake for 30-40 mins until cake is firm in middle. Let cool in pan
- Frosting: in small saucepan combine the sugar ,milk and butter cook on med-high til full boil, stirring constantly. remove from heat and add powdered sugar, whisk until no trace of sugar remains. Pour over cooled cake and spread.Let cool ~ This makes a thin layer of frosting~ DOUBLE frosting recipe if you like to have more!!!
- Cut and ENJOY!!!!! This stores well.....The frosting does NOT stick to the plastic wrap!!!
- HINT **NO over-ripe bananas on hand?????? Place yellow bananas on cookie sheet place in oven. turn oven on to 350. When your oven "Beeps" that it is preheated take out the bananas. The skins will be a little brownish and bananas are warm, The heat gets all the sugars and banana flavor ready to get mashed into cake or banana bread recipes!!!
