Indulge in Tom Kerridge's ultimate truffle mac 'n' cheese, an amalgamation of all his favourite versions of this classic American dish

500g macaroni
1l whole milk
2 bay leaves
60g butter
60g plain flour
2 tbsp Dijon mustard
2 tbsp roughly chopped thyme leaves
80g porcini white truffle paste or 2 tbsp truffle oil
1 tbsp porcini powder (or dried porcini mushrooms blitzed to a powder in a food processor)
80g taleggio cheese , chopped
125g ball of mozzarella , chopped
100g mature cheddar , grated
30g fresh breadcrumbs
30g parmesan , finely grated

Steps:

  • Cook the macaroni following pack instructions until al dente. Drain, rinse with cold water and set aside to cool.
  • Tip the milk and bay leaves into a pan and bring to a simmer. Remove from the heat. Melt the butter in a large non-stick saucepan, then stir in the flour to make a thick paste, continuing to stir for 3-4 mins. Remove and discard the bay leaves from the milk, then gradually pour it into the flour and butter mix, continuously stirring to keep the sauce smooth. Add the mustard, thyme, truffle paste and porcini powder, then stir in the taleggio cheese and mozzarella until melted slightly. Remove from the heat, tip in the macaroni and stir to coat. Scrape into an ovenproof dish. Will keep chilled for up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Sprinkle over the cheddar, breadcrumbs and parmesan, and bake for 20 mins until golden. For a crispy top, grill for 5 mins or until just golden. Serve straightaway.

Roasted Vegetable and Truffle Mac 'n Cheese image

2 medium carrots, large diced (about 1 cup)
2 small ears of yellow corn, kernels cut off the cob
1 head broccoli (about 6 ounces), any fibrous parts removed, cut into small florets
2 tablespoons unrefined coconut oil, melted
Kosher salt and coarsely ground black pepper
1 pound elbow macaroni
1/2 cup half-and-half
1/2 cup whole milk
12 slices American cheese
4 ounces Colby Jack cheese, grated or small diced
1 1/2 to 2 teaspoons black truffle oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the carrots, corn and broccoli to a large bowl. Add the coconut oil, season with salt and pepper and stir to coat the vegetables. Put the mixture on a baking sheet and roast until the broccoli tips are just browning and the corn is tender, 12 to 15 minutes. Set aside.
  • Meanwhile, bring a large pot of water to a boil and season generously with salt. Cook the macaroni as directed on the package and begin to make the cheese sauce.
  • Add the half-and-half, milk and both cheeses to a large saucepan set over medium heat and cook, stirring constantly to prevent sticking, until the cheese is melted and smooth and the sauce comes together. Season with 1/2 teaspoon pepper.
  • Drain the macaroni well, add to the cheese sauce and stir to combine. Add the roasted vegetables and stir again to cover with the cheese sauce. Drizzle with truffle oil before serving.

4 ounces sharp Cheddar, grated
4 ounces Swiss cheese, grated
1 tablespoon truffle oil
1 cup 1/4-inch-diced celery (2 to 3 stalks)
1/2 teaspoon ground allspice
Kosher salt and freshly cracked black pepper
2 cups canned fried onions

Steps:

  • Preheat the oven to 375 degrees F.
  • Bring a large pot of water to a boil. Cook the macaroni according to the package directions. Drain and let cool, then transfer to a large bowl.
  • In a medium saucepan, heat the soup over medium heat, stirring often to prevent scorching. Whisk in the Cheddar and Swiss, followed by the truffle oil. Add a splash of water if it gets too thick.
  • Add the celery and allspice to the bowl of macaroni, then gradually pour over the cheese sauce--you can use less or more sauce depending on how creamy you want the casserole. Season with salt and pepper and fold together.
  • Transfer the mixture to a 9-by-13-inch baking dish and cover with the onions. Bake until the sides are bubbly and the interior is very hot, about 30 minutes. Serve.

1 pound cavatappi pasta, such as De Cecco
4 cups whole milk
3 ounces white truffle butter, such as Urbani
1/2 cup all-purpose flour
4 cups grated Gruyère cheese (10 ounces)
3 cups grated extra-sharp white Cheddar (8 ounces)
1/2 teaspoon ground nutmeg
1 1/2 cups diced white bread, crusts removed
2 garlic cloves, chopped
3 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the butter and 2 tablespoons oil in a large (12-inch) sauté pan, add the mushrooms, and cook over medium heat for 3 to 5 minutes, until tender. Add the sherry and sauté for 2 to 3 minutes, until the sherry is absorbed. Set aside.
  • Meanwhile, add a tablespoon of salt to a large pot of water and bring to a boil. Add the pasta, cook for 6 to 8 minutes, until al dente, and drain.
  • Scald the milk in a medium saucepan. Melt the truffle butter in a large (4-quart) saucepan and whisk in the flour. Cook over low heat for 2 minutes, whisking constantly. Slowly add the scalded milk and cook for 2 minutes, stirring with a wooden spoon, until thick and creamy. Off the heat, add the Gruyère, Cheddar, 2 tablespoons salt, 2 teaspoons pepper, and the nutmeg.
  • In a large bowl, combine the pasta, the cream sauce, and two thirds of the mushrooms and pour into a 10 × 13 × 2-inch ovenproof baking dish. Place the bread, garlic, and parsley in the bowl of a food processor fitted with the steel blade and process to make fine crumbs. Sprinkle the herbed crumbs evenly on the pasta and arrange the remaining mushrooms down the middle.
  • Bake for 35 to 45 minutes, until the sauce is bubbly and the crumbs are golden brown. Let stand for 5 minutes and serve hot.

  • Melt butter in a large pot over medium-low heat. Whisk flour into butter until mixture has a thick, paste-like consistency, about 30 seconds. 2 slices bacon, cooked & minced
6 tablespoons butter
1 onion, diced
1/3 cup all-purpose flour

1/2 cup white cheddar cheese, grated

Steps:

  • Preheat the oven to 350 degrees.
  • Cook macaroni according to package directions.

1 bulb Roasted Garlic, recipe follows
3 tablespoons all-purpose flour
2 cups heavy cream
4 ounces mascarpone cheese
1 ounce preserved truffles, grated
1 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika
2 1/2 cups grated white Cheddar
2 1/2 cups grated Havarti cheese
8 large garlic bulbs
1 to 2 tablespoons olive oil
Pinch kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9-by-13-inch baking dish.
  • Cook the pasta in salted water 2 minutes under the recommended cook time. Reserve 1 cup of the pasta water.
  • Melt the butter in a large pot over medium heat. Add the onions and thyme, then squeeze in the roasted garlic flesh from the skin and cook to soften the onions, 2 to 3 minutes.
  • Sprinkle over the flour and cook for a minute or two. Stir in the heavy cream and reserved pasta water. Add the mascarpone, truffles, pepper, salt and paprika. Stir to combine. Add 1 1/2 cups of each cheese and stir to melt.

  • Preheat the oven to 375 degrees F.
  • Cut the top quarter off each garlic bulb. Place the bulbs in a pie pan and drizzle the tops with olive oil. Sprinkle with salt and pepper. Cover with foil and bake until the garlic is roasted and soft, about 45 minutes.

250g macaroni
1 tsp olive oil
1 small onion , finely chopped
500ml milk
300g smoked haddock
1 tbsp truffle oil
50g soft butter , plus extra for the dish
25g plain flour
100g gruyère , coarsely grated
50g white breadcrumbs
small pack parsley , leaves picked
small thyme sprig , leaves picked
small pack tarragon , leaves picked
1 garlic clove , roughly chopped
small piece of butter
drizzle of truffle oil , plus extra to serve

Steps:

  • Blend together all the ingredients for the breadcrumbs in a food processor until roughly chopped, season, then set aside. Boil the macaroni 1 min less than the time on the pack, drain, toss in the olive oil and set aside.
  • Tip the onion, milk and the smoked haddock into a pan and season. Simmer gently for 10 mins, then remove the haddock. Flake the flesh and drizzle with the truffle oil and set aside.
  • Mix the butter and flour together to make a paste. Over a low heat, whisk the paste into the hot milk and bring to the boil, stirring all the time. Remove from the heat and add half the grated cheese and stir well.
  • Take the pan off the heat, tip the pasta into the sauce and mix well, then fold through the haddock and season with ground black pepper. The sauce may seem a little thin, but it'll thicken as it cooks. Butter a large ovenproof dish and tip in all the macaroni (I like it piled high), then finish by scattering over the rest of the cheese and most of the breadcrumbs. This can be prepared a day ahead, covered and kept in the fridge.
  • To cook, heat oven to 200C/180C fan/gas 6. Bake for 20 mins until bubbling and sprinkle with the rest of the breadcrumbs. Bake for 5 mins more, then drizzle a little more truffle oil on top, and scatter some extra herbs, if you like.

6 stalks of organic rainbow carrots
2 tablespoons of white truffle ghee
1/3 cup of organic sharp cheddar cheese
