Steps:
- Preheat the oven to 350 degrees F.
- Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
- Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
- Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
- When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

HEALTHY DRAGON FRUIT WALDORF SALAD
A dragon fruit (also called pitaya) may look like a fire-breathing artichoke, but it's a cactus-family member that's a powerhouse of vitamin C and B vitamins. The white or fuchsia flesh has a fair amount of fiber, and the curious little black seeds are full of healthy fats. Dragon fruit tastes like a cross between a pear and a kiwi and gives traditional Waldorf salad a tropical update. Look for it in specialty South American or Asian stores.

- Quarter the dragon fruit lengthwise. Work your finger under the skin, pull it back and peel it away in 1 piece. Cut each quarter into 1/4-inch-thick triangles.
- Whisk together the yogurt, mayonnaise, lemon juice, honey, ginger and salt in a large bowl. Add the apples, grapes, 3/4 of the dragon fruit pieces and 3/4 of both the cilantro and the cashews. Toss to combine, and refrigerate until chilled, about 1 hour.
- Put a lettuce leaf in each of 4 small bowls, and top each with a scoop of salad. Garnish with the remaining dragon fruit, cilantro and cashews.

CHEF JOHN'S WALDORF SALAD
A fruit salad has to be pretty darn good to actually get a name, and the venerable Waldorf salad is certainly worthy. Embellish this as you see fit, but I really like it best with just the four ingredients seen here. Things like dried cranberries can add a nice seasonal touch but, for me, the chewy fruit gets in the way of that addictive crunchy/crisp texture.

- Whisk mayonnaise, creme fraiche, lemon juice, tarragon, sugar, salt, black pepper, and cayenne together in a bowl.

- Roast the grapes: Preheat oven to 350 degrees. Toss grapes with sugar and oil. Roast on a rimmed baking sheet until just starting to wrinkle and burst, 25 to 30 minutes. Let cool.

This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.

The Waldorf Salad has it's origins at The Waldorf-Astoria Hotel, in NYC, NY. In 1896 Oscar Tschirky, Maitre d'Hotel made this salad which contained apples. chicken, celery & mayonnaise - later the walnuts were added. Well, I am taking poetic license and making some more changes to it. It has always been served on a bed of lettuce. Based loosely on a recipe provided by The National Chicken Council. You can make this with a store-bought rotisserie chicken(if you do skip the first four steps.) Did not include cooling times.

- In large saucepan, place chicken breasts and cover with cold water by 1 inch.
- Add onion, celery leaves and Kosher salt.
- Bring to boil, reduce heat to low and simmer for 10 minutes, until chicken is no longer pink in the center.
- Remove from liquid and set aside; discard liquid.
- When cool enough to handle, cut chicken into bite-size pieces.
- In large bowl, mix together chicken, celery, apples, scallions, grapes and toasted macadamia nuts.
- Use sharp knife to split pineapple into sixths from top to bottom.
- Slice core off each pineapple wedge and slice off fruit, leaving tufts of leaves in tact.

- Add dressing to chicken mixture and toss thoroughly.

WALDORF SALAD
Steps:
- Peel, core and medium dice the red delicious apples. Apples start with approximately 2 pounds of apple to yield 1 1/4 pounds of diced apple. Place in a mixing bowl and mix with the lemon juice. This will keep the apple from discoloring. Before dicing the celery, blanch it in boiling water for 60 seconds and cool it with cold water. This will bring out the sweet flavor and extend the salads shelf life. Combine diced apple, lemon juice, mayonnaise, celery and chill. Serve on a bed of lettuce topped with walnuts and add a simple fruit garnish. Traditionally this is also served with tiny sweet finger sandwiches. (Example: date nut bread and raspberry jam.)
- Serve with: Boston or Romaine leaf lettuce .

- In a large bowl, put diced apples, diced celery, drained pineapple, chopped cherries (about 1/2 the jar or as desired), and chopped walnuts. In a small bowl, mix together mayonnaise, 3 Tblsp. pineapple juice, and 2 Tblsp. cherry juice. Stir well and add more mayonnaise to get the right consistency.
