TROPICAL BANANA BREAD
Moist, tropical banana bread with the addition of pineapple and coconut! So yummy! I adapted several recipes to come up with this one. And, you don't need to use a mixer!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Combine coconut oil, eggs, and vanilla extract in a large bowl; whisk well to combine. Add flour, sugar, baking soda, cinnamon, and salt. Stir well until combined. Fold in bananas, pineapple, and coconut; stir until just blended. Pour batter evenly into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes. Remove to a wire rack to cool completely.

Steps:
- Preheat the oven to 350 degrees F. Lightly oil a 9-by-5-inch loaf pan.
- Spread the macadamia nuts on one rimmed baking sheet and the coconut on another. Toast, tossing occasionally, until the macadamia nuts and coconut are golden, 5 to 7 minutes. Let the nuts cool, then roughly chop.
- Whisk together the flour, granulated sugar, baking soda, cinnamon, salt, nutmeg, macadamia nuts and coconut in a large bowl. In another bowl, whisk together the coconut oil, brown sugar, eggs, yogurt and vanilla. Stir in the bananas. Fold the banana mixture into the dry mixture until just combined.
- Pour the batter into the prepared loaf pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until golden brown and a skewer inserted into the center comes out clean, 65 minutes to 75 minutes. Let the bread cool for 15 minutes in the pan. Remove from the pan and let cool completely on a rack.
TROPICAL BANANA BREAD
This rich, yummy bread is totally fat free! But your taste buds will never know it, thanks to moist crushed pineapple and creamy mashed bananas! I found this recipe in Woman's World magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Preheat oven to 350.
- Coat 8 1/2" x 4 1/2" loaf pan with cooking spray.
- Combine flour, baking powder, soda, salt and cinnamon; reserve.
- On medium-high speed, beat bananas and sugar until blended. Stir in egg. On low speed, beat in reserved flour mixture alternately with 1/3 cup milk until just combined. Stir in pineapple.
- Transfer to pan. Bake 45 minutes or until pick inserted comes out clean. Cool 10 minutes. Transfer to rack; cool.
- Combine confectioners' sugar, extract and remaining milk until smooth. Pour over bread. Sprinkle with coconut; garnish with fruit.

TEA LOAF

- Mix the sultanas, raisins and orange zest in a large mixing bowl. Pour over the tea and cover the bowl. Leave to sit for a minimum of 6 hours or ideally overnight to allow the dried fruit to soak up all the liquid.
- Heat the oven to 180C/160 fan/gas 4. Grease and line a 900g loaf tin. Add the eggs, flour and sugar to the soaked fruit, ensuring everything is well combined. Spoon the mixture into the tin and place in the centre of the oven for 1 hour 30 mins or until firm to the touch. Leave to cool in the tin for 15 mins before transferring to a wire rack.
- Cut into thick slices and serve with butter. To store, wrap tightly and keep in an airtight container for up to five days. The loaf will taste even better after a few days.

Steps:
- Cream butter; add honey.
- Beat in eggs.
- Sift flour, salt, baking powder, and baking soda.
- Add coconut, previously toasted at 350 degrees for 5 minutes on cookie sheet.
- Mix banana, lemon juice, lemon zest, and vanilla.
- Add alternately with dry ingrienents.
- Blend only until just moistened.
- Spoon into well greased 9"x5" loaf pan.
- Bake in 350 degree Fahrenheit oven for 55 minutes.
- Allow to coool 5 minutes before removing from pan.
- It slices better as it ages and freezes well.
