1 cup all-purpose flour
1 1/2 tablespoons brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground ginger
3 tablespoons butter, cold
4 tablespoons 2% low-fat milk (or light cream)
1/2 teaspoon vanilla extract
1/3 cup banana, diced (approx. half a medium banana)

Steps:

  • Preheat oven to 400°F Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, sugar, baking powder, salt and ginger. Cut butter into a few chunks and rub it into the flour mixture with your fingertips.
  • Mix milk and vanilla in a small glass. Pour about 4 tablespoons into the flour mixture and stir until the mixture starts to come together. Add the banana chunks and continue to stir, adding more milk if necessary, until dough comes together.
  • Pat dough into a disk about 1 inch thick. Cut into four sections with a knife and place each on baking sheet.
  • Bake at 400F for 17-20 minutes, until light gold.
  • Cool on wire rack or eat warm. These scones are best the day they are made.

1/4 cup granulated sugar
1/4 cup cold unsalted butter
1 cup white vanilla baking chips
1 cup flaked coconut
1 tablespoon finely grated lime peel
1/2 cup heavy whipping cream
1 egg
1/2 cup powdered sugar
1 tablespoon fresh lime juice

Steps:

  • Heat oven to 425°F. Spray large cookie sheet with cooking spray.
  • In large bowl, stir Bisquick mix and granulated sugar. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is size of fine crumbs. Stir in chips, coconut and lime peel.
  • In small bowl, beat whipping cream and egg. Stir into Bisquick mixture until dough forms. Sprinkle work surface and hands with additional Bisquick mix; lightly knead dough 5 times. Divide dough in half. Shape each half into 6-inch round; cut each round into 6 wedges. Place on cookie sheet.
  • Bake 11 to 14 minutes or until golden brown. Meanwhile, in small bowl, stir powdered sugar and lime juice until smooth. Use metal spatula to loosen scones from cookie sheet. Drizzle with glaze. Serve warm.

1 teaspoon vanilla extract
2 1/4 cups all-purpose flour, plus more for dusting
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon grated orange zest
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt, plus a pinch
12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces and chilled
1/2 cup pecan pieces, toasted
1/4 cup confectioners' sugar
3 tablespoons maple syrup

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Combine the buttermilk and vanilla in a small bowl and set aside.
  • Put the flour, granulated sugar, baking powder, baking soda, orange zest, nutmeg, cinnamon and 1/2 teaspoon salt in a food processor and pulse until combined. Add the butter and continue to pulse until the mixture looks like fine meal.
  • Add the pecans and pulse once. Add the buttermilk mixture and pulse 3 or 4 times, or until the mixture is just moistened. (Do not overmix or the scones will be tough.)
  • Turn the dough out onto a lightly floured surface and gently knead until it just forms a ball. Transfer to the prepared baking sheet and pat into an 8-inch round, about 3/4 inch thick. (To make individual scones, cut into 8 wedges and space apart on the baking sheet.) Brush with buttermilk and bake until golden, about 25 minutes. Let cool 2 minutes on the baking sheet, then transfer to a rack to cool completely.
  • Mix the confectioners' sugar, maple syrup and a pinch of salt in a small bowl until smooth. Drizzle over the scone. Cut into wedges.

1/2 Cup butter (cold, cut into pieces)
8 Oz. pineapple (crushed, undrained - chunks will work, too )
1 Tsp. vanilla
1/4 Cup almonds (slices or chopped )
2 Tbsp. milk (or cream for brushing on top before baking)
1 Cup icing sugar
3 Tbsp. lemon juice (fresh (about from 1 lemon))

Steps:

  • Preheat oven to 400 degrees F. Place parchment paper onto baking sheet and set aside.
  • In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Cut in butter with a pastry blender or 2 forks until mixture resembles coarse crumbs.
  • Make a well in center and then stir in the pineapple with liquid and vanilla. Blend until dry ingredients are just moistened and stick together.
  • On a floured work surface, gently knead pat dough to 1/2 inch thickness. Cut with floured 2 to 3 inch biscuit cutter (mine was 2.5"). Place on the prepared baking sheet.
  • Brush the tops of scones with milk or cream. Sprinkle nuts over scones. Bake 12 to 15 minutes.

1 2/3 c all purpose flour
1/3 c coconut flour
1/3 c granulated sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 c coconut oil
3 Tbsp butter, melted
1 c sweetened flaked coconut, chopped
1 large egg
2/3 c half and half or coconut milk
1 Tbsp orange juice
zest of one orange

Steps:

  • 1. Heat oven to 375^. Spray a large cookie sheet with cooking spray. --- Stir together the flours, sugar, baking powder, baking soda and salt.
  • 2. Cut the coconut oil and butter,into the flour with a pastry blender . Stir in coconut. In a separate bowl, combine the egg, 1/2 and 1/2 and orange juice and zest . Pour wet ingredients over the dry ingredients and stir just until moistened.
  • 3. Place dough on a flat floured surface, divide dough 2 equal balls and gently pat each into 7 inch circles 1/2 inch thick. Cut 8 wedges from each circle. Transfer the wedges to the baking sheet.
  • 4. Bake 15 to 18 minutes or just until golden brown. Cool 2 minutes. Remove from cookie sheet, place on wire rack.Cool 10 minutes while making glaze. Glaze: 1 cup powdered sugar 1 teaspoon orange extract 4 to 6 teaspoons milk Combine all ingredients in a small bowl, adding enough milk for desired spreading or drizzle. Sprinkle with coconut and chopped nuts if desired.
