2 cups chicken stock
1 cup white rice (or a mixture of white and brown or white and wild)
1 cup halved snow peas
1 cup chopped red sweet bell pepper
3/4 cup chopped celery
2/3 cup sliced water chestnut
1/2 cup canned mandarin oranges, drained and chopped
2 medium green onions, chopped
2 teaspoons orange juice concentrate
2 teaspoons liquid honey
1 teaspoon soy sauce
1 teaspoon vegetable oil
1/2 teaspoon sesame oil
1/2 teaspoon lemon juice
1/2 teaspoon minced garlic
1/4 teaspoon minced gingerroot

Steps:

  • Cook rice in stock until done.
  • Rinse with cold water and drain well.
  • Put rice in a serving bowl and add remaining veg and fruit ingredients.
  • In a small bowl whisk together dressing ingredients.
  • Pour over rice mixture and toss.
  • Chill for 6 hours before serving-toss again.

Spicy Cilantro Mango Wild Rice Salad image

This spicy cilantro mango wild rice salad is filled with cabbage, jicama and pickled jalapenos and tossed in a bright cilantro mango dressing.

1 cup dry wild rice
2 not quite fully ripened mangos, cut into matchsticks
2 cups shredded green cabbage
2 cups jicama cut into matchsticks
2 pickled jalapeños, seeded and minced
black sesame seeds for garnish
cilantro leaves for garnish
1 small clove garlic
1/4 cup packed fresh cilantro leaves
juice of 1/2 a lime
3 tablespoons Nakano mango-seasoned rice vinegar
1 1/2 tablespoons extra virgin olive oil
1/2 tablespoon agave (or honey)

Steps:

  • Add the rice to a small sauce pot with 1 3/4 cup water, bring to a boil then reduce to low and cover. Cook until all the water is absorbed then turn off heat and transfer rice to a large bowl to cool.
  • While rice cooks, make the dressing by combining all the ingredients in a food processor. Process for about 30 seconds until everything is well combined.
  • Pour the dressing over the cooled rice, toss to fully coat and place in the refrigerator for at least an hour to chill. (*see note)
  • Once cooled, add the mango, cabbage, jicama and jalapenos to the bowl and toss to combine.
  • Garnish with extra cilantro and black sesame seeds if desired.

This Thai noodle salad is full of sweet mangos, snow peas, red pepper, loads of fresh herbs, and the most delicious creamy sesame ginger dressing. It's a cold pasta salad that keeps well for quick lunches or to take on a picnic. You'll love it!

8 ounces rice noodles
2 yellow mangos (or 1 globe mango, diced)
1 red pepper (thinly sliced)
2 cups snow peas (cut into bite-sized pieces)
2 cups cabbage (thinly sliced)
¼ cup EACH: chopped cilantro, mint, and Thai basil (see notes)
¼ cup cashews or peanuts (we love wasabi or spicy cashews)
¼ cup cooking oil
3 tablespoons EACH: sesame oil, rice wine vinegar, and soy sauce (gluten-free, if needed)
2 tablespoons EACH: tahini and honey (can sub maple syrup)
1 tablespoon finely minced ginger
2 cloves garlic (minced)
½ teaspoon salt

Steps:

  • Cook the rice noodles according to the package directions. (see notes) Once cooked, drain them in a colander then cool them under cold tap water. Set them aside to drain completely.
  • In a small bowl, whisk the dressing ingredients.
  • Place the cooked rice noodles and all the remaining ingredients into a large salad bowl. Pour the dressing over the top and toss until the noodles are well coated and everything is mixed together.

1/2 cup rice
1/2 cup pineapple, cut in pieces
1/2 cup papaya, chopped into pieces
1 cup corn kernel, blanched
1 red bell pepper
1 green bell pepper
1/2 cup bean sprouts
1/2 cup water chestnut
4 scallions, thinly sliced
1/4 cup raisins
1/4-1/2 cup mango puree
3 tablespoons peanut oil
1 teaspoon sesame oil
1 tablespoon soy sauce
1 teaspoon gingerroot, finely chopped
1 garlic clove, finely chopped

Steps:

  • Cook rice in a pan of boiling, salted water about 12 minutes on medium heat. Make sure rice is just tender, not completely soft. Drain well and rinse with cold water. Drain Again.
  • Mix together next 7 ingredients (pineapple through water chestnuts). Add rice to pineapple mixture and combine well. Season to taste with salt and pepper.
  • Blend mango puree, garlic, ginger, and soy sauce on medium speed in blender (or by hand, mix well). Slowly pour oil into top of blender, while running, until emulsified. If doing by hand, add oil in a slow stream while mixing constantly.
  • Once combined, pour dressing over rice mixture and serve.

Kosher salt
1 1/2 cups rice blend
1/4 cup quinoa, rinsed
Finely grated zest and juice of 1 lime
2 tablespoons peanut or vegetable oil
1 teaspoon sugar
Freshly ground pepper
1 cup chopped mango
1 cucumber, peeled, seeded and diced
1 red jalapeno, seeded and thinly sliced
2 scallions, thinly sliced
1/2 cup chopped fresh cilantro
1/3 cup chopped salted roasted peanuts

Steps:

  • Bring a large saucepan of salted water to a boil over high heat. Add the rice and cook, stirring until tender, 25 to 35 minutes (depending on the rice blend).
  • Meanwhile, bring a separate saucepan of salted water to a boil over medium-high heat. Add the quinoa and cook until tender, about 12 minutes.
  • Drain the grains and rinse under cold water until cool; shake off the excess water.
  • Whisk the lime juice and zest, the peanut oil, sugar, 1 teaspoon salt, and pepper to taste in a large bowl. Add the rice mixture, mango, cucumber, jalapeno, scallions, cilantro and peanuts and stir to combine. Season with salt.

You'll use some of the dressing for the grilled chicken and the rest for the noodle salad .

3/4 cup Major Grey's mango chutney
6 tablespoons unseasoned rice vinegar
3 large garlic cloves, peeled
6 3/4 teaspoons soy sauce
1 1/2 tablespoons toasted sesame oil
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons dried crushed red pepper

Steps:

  • Combine all ingredients in blender. Cover tightly; blend until dressing is smooth. Season to taste with salt and pepper. DO AHEAD: Can be made 1 week ahead. Cover and chill.

WILD RICE AND MANGO SALAD



Wild Rice and Mango Salad image

This is such a colourful salad that would go well with any grilled meats or fish. I made this up with a wild rice/brown rice combination and used a mix of red and orange peppers. I cut the sesame oil down as the mangos are quite moist. Currants would look wonderful in this salad. This does not take into account chilling time.

1 medium green bell pepper, sliced
1 medium tomato, sliced and seeded
1 small white onion, sliced
1 ripe mango, peeled and pitted
½ cup water

¼ cup freshly squeezed lemon juice
2 slices white onion, or to taste
2 tablespoons honey
2 teaspoons chopped fresh basil
salt and ground black pepper to taste

Steps:

  • Mix lettuce, bell pepper, tomato, and onion together in a bowl. Set salad aside.
  • Combine mango, water, oil, lemon juice, onion slices, honey, basil, salt, and pepper for dressing in an electric blender; blend until smooth.
