- In a large bowl, combine all ingredients. Pour into an 8-in. square dish. Cover and freeze for 1-1/2 to 2 hours or until almost firm. , Transfer to a large bowl. Beat for 1-2 minutes or until smooth and creamy. Return mixture to dish; freeze until firm. Remove from the freezer 30 minutes before serving.

TROPICAL PINEAPPLE BANANA ICE CREAM
I've made this many times and it always comes out perfectly rich and delicious. Garnish it with some slices of banana and a drizzle of chocolate sauce...whipped cream isn't bad on it either!

- In a large bowl, combine the evaporated milk, lemon juice, sugar, cream, banana, pineapple with reserved juice an the while milk.
- Freeze the mizture in an ince-cream freezer according to the manufacturer's instructions.

- 2. Cover and freeze for 1-1/2 to 2 hours or until almost firm.
- 3. Transfer to a large bowl and beat for 1-2 minutes or until smooth and creamy. Return mixture to dish and freeze again until firm.
- 4. Remove from the freezer 30 minutes before serving. Dish up in your prettiest lil bowls and Voila, the perfect low-calorie treat for those scorching summer days! Note: Only 79 calories per 1/2 cup serving :)
TROPICAL PINEAPPLE BANANA CAKE
All of my favorite tropical ingredients in one cake. It is my favorite cake for summer. It is unbelievably moist and tasty. I hope you get a chance to try it and share it with your family and friends. If you don't want to use macadamia nuts - pecans or walnuts will work and be tasty too (: Enjoy!

- 1. Preheat oven to 350 degrees. In your mixer cream butter and sugars on medium speed until fluffy. Add eggs, mashed banana, pineapple, vanilla and banana extracts, sour cream. Mix on low until well combined.
- 2. In a separate bowl combine flour, salt and baking soda.
- 3. Add entire flour mixture and mix on low until combined.
- 4. Grease and lightly flour 9x13 baking pan. Pour in batter and bake 30 to 35 minutes until done. Set aside to cool.
- 5. Combine glaze ingredients and mix until sugar has melted. Poke holes on top of cake and brush glaze over cake. You don't have to use the entire amount. I usually end up using about 3/4 of the glaze.
- 6. In a medium sauce pan add egg, evaporated milk, sugar, and butter. On medium heat cook and stir until thick and bubbling about 6 to 8 minutes. Turn off heat and stir in coconut and macadamia nuts until combined. Cool to room temperature.
- 7. Spread topping over cake. Refrigerate until ready to serve.
BANANA ICE CREAM
The easiest one-ingredient ice cream recipe! Banana ice cream is one of my favorite desserts. I like adding a bit of protein powder and nut butter for a more balanced treat but there are endless flavor variations you can try. How about peanut butter, mint chocolate chip, strawberry or matcha? YUM.

- Place the frozen banana in a food processor and pulse a few times to start breaking it down.
- Once it's fairly well broken down, slowly start blending stopping to scrape down the sides as needed. It will seem a little dry and icy at first but continue blending until it forms a smooth, creamy, soft serve ice cream-like texture. Depending on your blender or food processor you may need a little splash of dairy-free milk but for best results, try to use just the banana.
- Scoop the ice cream into a bowl and enjoy right away or place back in the freezer for 30-60 minutes for firmer ice cream.

- Place frozen bananas in a food processor and puree, adding the vanilla extract and just a few spoonfuls of juice or milk to make a soft serve texture to the banana"ice cream".

- Melt butter in heavy large skillet over medium heat. Add brown sugar, nectar and rum; stir until sugar dissolves. Increase heat and boil until syrupy, about 4 minutes. Mix in ginger and nutmeg. Add pineapple, banana and mango and sauté just until heated through, about 1 minute. Let cool 2 minutes.

- Make sure fruits are soft frozen if you want the ice cream right away.
- If hard frozen let sit at room temperature for about half an hour.
- Put all ingredients except coconut into a good blender like a Vitamix or Ninja.
- Blend until smooth, although a few chunks are fine.
- Pour into ice cream maker and follow directions on your ice cream maker.
- The last 5 minutes add the coconut. I use plain coconut flakes and toast them for a little more flavor.
- If the fruit is not cold, chill it in the freezer for a few hours, or in the fridge overnight.
