2 cups sugar
1 teaspoon salt
4 large eggs, room temperature
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups all-purpose flour
2 cans (21 ounces each) cherry pie filling
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Gradually add flour., Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling. Drop remaining dough by teaspoonfuls over filling. Bake 35-40 minutes or until golden brown. Cool completely in pan on a wire rack., In a small bowl, mix confectioners' sugar, extracts and enough milk to reach desired consistency; drizzle over top.

This is a simple cheesecake recipe that I sometimes bring to family occasions. I am posting this recipe for my cousin Amy since she requested the recipe.

1 prepared graham cracker crust (I use Keebler)
2 (8 ounce) packages cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 can cherry pie filling (I use Comstock)

Steps:

  • Preheat oven to 350 degrees.
  • Place the cream cheese in a bowl in the microwave.
  • Microwave it on the defrost setting for a couple of minutes to slightly soften the cream cheese (This is so that you don't kill your mixer when beating the cream cheese).
  • Add sugar to cream cheese and beat it with an electric mixer until smooth.
  • Add eggs and vanilla and blend until smooth.
  • Pour into ready made crust.
  • Bake at 350 degrees for 25 to 30 minutes.
  • Note: The cheesecake is done when the sides are puffed- The center will not be as puffed- It will be possible to jiggle the center slightly but it will not be runny.
  • Let cool.
  • Top with cherry pie filling and chill.

1 (17.5 ounce) package dry oatmeal cookie mix
½ stick butter, chilled and cut into small pieces
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 egg
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 9x13-inch baking pan with cooking spray.
  • Pour cookie mix into a large bowl. Cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs into the bottom of the prepared baking pan.
  • Bake crust in the preheated oven for 8 minutes. Remove partially baked crust and leave oven on.
  • Beat cream cheese, sugar, egg, flour, and vanilla extract together in a bowl using electric mixer on medium speed until smooth.
  • Spread cream cheese mixture evenly over the partially baked crust. Spread cherry pie filling over cream cheese mixture. Sprinkle reserved crumbs on top.
  • Bake in the preheated oven until light golden brown on top, about 35 minutes. Cool about 30 minutes. Refrigerate to chill, about 2 hours. Cut into 16 to 20 bars.

2 tablespoons granulated sugar
1/3 cup unsalted butter (melted)
1 cup whipping cream*
16 oz brick-style cream cheese* (room temperature)
3/4 cup powdered sugar
1 teaspoon vanilla
2 teaspoons lemon juice (freshly squeezed)
1 jar cherry pie filling

Steps:

  • Line an 8x8 (or 9x9) inch square pan with aluminium foil leaving an overhang on each side. Spray lightly with non-stick cooking spray.
  • In a medium bowl stir together the graham crumbs, 2 tablespoons sugar & melted butter. Press into the bottom of the prepared pan.
  • In a large bowl, beat the heavy cream until peaks form.
  • In a separate bowl beat the cream cheese until soft. Then beat in th powdered sugar, vanilla extract & lemon juice until smooth.
  • Gently fold in the whipped cream using a rubber spatula until the mixture is even and no longer streaky.
  • Spoon over top of the prepared crust and smooth the top. Chill in the fridge for 6 hours or overnight.
  • To serve, lift the aluminum foil out of the pan and place the bars on a cutting board. Slice into bars.
  • Top each bar with cherry pie filling.

Steps:

  • Line an 8-inch x 8-inch square baking dish with parchment paper. Set aside.
  • In a medium mixing bowl combine the graham crumbs and butter. Mix until all the graham cracker crumbs are moistened. Pour into prepared baking dish and press down to form the crust.
  • In a large mixing bowl, beat together the cream cheese and the sugar until it becomes light and fluffy.
  • In a separate bowl beat heavy cream on low speed, then increase speed to high. Mix until you have whipped cream with medium peaks.
  • Pour the whipped cream into the cream cheese mixture. Mix on high until combined and smooth. Scoop into the baking dish and smooth into an even layer with the back of a spoon or spatula.
  • Spoon the cherry pie filling evenly over the top. Smooth out carefully to cover the cheesecake.
  • Cover with plastic wrap and refrigerate for at least 4 hours (preferably overnight).
  • Remove and uncover. Cut into 9 squares and serve immediately. Store any leftovers, covered, in the fridge.

  • Begin by preheating your oven to 350 degrees F.

  • Spread about 2 1/2 cups of this batter into a greased 15x10x1-inch baking sheet. (I found it easiest to use an offset spatula greased with a little cooking oil to spread out the batter.)

1 cup finely chopped walnuts
2/3 cup packed brown sugar
2/3 cup butter, melted
FILLING:

2 tablespoons lemon juice
2 teaspoons vanilla extract

1 cup sour cream
1 (8 oz) tub cool whip
1 (21 oz) can blueberry pie filling

Steps:

  • In a large bowl, combine the graham cracker crumbs, butter, and sugar. Stir until all of the butter has been soaked into graham cracker crumbs.
  • Transfer the mixture to a 13x9 baking dish and press it into the bottom. It should spread to all the edges and be compacted enough to hold together. Set aside.
  • In a large mixing bowl, add the cream cheese and sugar. Beat together with an electric hand mixer until smooth.
  • Add in the vanilla and sour cream. Beat again to incorporate.
  • Switch to a rubber spatula and fold in the cool whip making sure to mix thoroughly.
  • Pour over the graham cracker crust and smooth it out with the rubber spatula
  • Pour the blueberry pie filling on top and carefully spread it to all edges.

I cut mine into 24 bars, but you could cut them larger if you like! These stay fresh covered in an airtight container at room temperature for 2 days, but keep in the fridge if you still have them longer.

3/4 c (148g) Granulated Sugar
2 t (10ml) Lemon Juice
4 T (32g) Cornstarch or Cornflour
1/4 tsp (3ml) Almond Extract
Large pinch Kosher salt
12 oz (339g) Cream Cheese, room temperature
1/2 c (50g)Confectioners' Sugar
1 Large Egg
1.5 c (180g) All-Purpose Flour
1.5 c (180g) Whole Wheat Pastry Flour
1 c (198g) Granulated Sugar
1 tsp (4g) Baking Powder
1/4 tsp Salt
1 c (227g) Unsalted Butter, cut into small cubes
1 Large Egg, whisked slightly chilled
1/2 c (60g) Sliced Almonds

Steps:

  • Line a 13×9 Baking Pan with parchment and/or baking spray. Set aside.
  • In a medium saucepan (3-4 qt), place the cherries. Add in the sugar, lemon juice, cornstarch, almond extract and pinch of salt.
  • Heat over Medium temperature, stirring regularly, until mixture first boils, and then thickens. On my gas stove, this took just a few (less than 5) minutes. It would take a bit longer over an electric burner. Once thickened and glossy, remove from heat to a bowl to cool a bit while you make the other layers.
  • In a Medium bowl, whisk the room temperature cream cheese, sugar and egg until smooth. Set aside.
  • Whisk together the flours, sugar, baking powder, salt in a mixing bowl. Using your fingers, work the butter cubes into the dry ingredients until a crumbly dough is formed, much like the dough of a pie crust before adding the water. Butter pieces should be irregularly sized.
  • Add the egg and mix until incorporated.
  • Press half of the crumb mixture firmly into the bottom of lined/sprayed baking pan.
  • Using an offset spatula or a knife, evenly spread the cream cheese mixture over the layer of crumb mixture, leaving about 1/2″ around the edges.
  • Evenly spread the cooled cherry filling over the cream cheese mixture.
  • Using your hands, mix the sliced almonds into the remaining half of the crumb mixture. Then scatter small pieces of the crumb mixture over the cherry layer, until all the crumb mixture is used. The cherry layer should be completely covered (or almost completely) with crumb mixture
  • Bake in preheated oven 35-45 minutes, until top is golden brown. Mine took 42 minutes.
  • Cool completely before cutting into bars.

1 cup nuts ((walnuts or pecans))
