Grilled Pacific Halibut With Mango Salsa image

This sweet and spicy salsa goes beautifully with a firm, white fish like halibut. Make sure your mango is very ripe. Mangos are a good source of potassium, vitamin A and beta-carotene. You would think that such a sweet fruit would be high in calories, but because of all the water in a juicy mango, the caloric content is relatively low - about 135 calories in a whole mango, according to nutritionist and author Jonny Bowden.

1 large, ripe mango
2 serrano chiles, minced
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped fresh mint
1/4 cup finely diced jicama
2 tablespoons freshly squeezed lime juice
Salt
freshly ground pepper to taste
4 6-ounce Pacific halibut fillets or steaks
2 tablespoons extra virgin olive oil
2 limes, cut in wedges, for serving

Steps:

  • Finely dice the mango. Cut down the broad side of the mango, slightly off center, from the stem end to the tip end. The knife should scrape against the side of the pit. Repeat on the other side, cutting as close to the pit as possible. Cut the flesh from the sides of the pit, following the curve of the pit. Lay each half on your cutting surface, and score with the tip of your knife in a cross-hatch pattern, down to the skin but not through it. Turn the mango half inside out, and slice the cubes away from the skin. Then cut the cubes into very small dice.
  • Toss the mango in a bowl with the chiles, cilantro, mint, jicama and lime juice. Season with salt if desired. Cover the bowl, and allow to sit for an hour while you prepare your grill.
  • Heat a medium-hot grill (or heat an indoor griddle or grill pan). Season the halibut fillets or steaks with salt and pepper, and toss with the olive oil in a bowl. Place the fish directly over the coals, and grill for four to five minutes per side, depending on the thickness. The fish should be opaque all the way through, and you should be able to pull it apart with a fork.
  • Remove the fish to a plate or a platter. Serve with the salsa spooned partially over the fish and partially on the side. Alternately, spoon the salsa onto plates and set the fish on top. Garnish with lime wedges and serve.

1/4 cup chopped red onion

  • In a small bowl, combine the mango, avocado, onion, jalapeno, cilantro, 2 teaspoons oil, lemon juice and honey; set aside. 2 cups tomatoes, seeded and diced (about 3 medium)
1 1/2 cups mangoes, peeled and diced (1 large)
1/2 cup red onion, diced (or sweet onion)
1/2 cup fresh cilantro, chopped
2 limes, juice of
1 tablespoon cider vinegar
2 teaspoons Splenda sugar substitute
1 teaspoon salt
1 teaspoon black pepper
2 garlic cloves, minced
4 (6 ounce) halibut fillets
1 tablespoon olive oil
salt and pepper

Steps:

  • Prepare grill.
  • Mango Salsa: Combine all the ingredients for the salsa and set aside (can be made up ahead of time).
  • Rub halibut with oil; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Place fish on grill rack; grill 4 - 5 minutes on each side or until fish flakes easily when tested with a fork.

1 tangerine
1 cup diced avocado
1/3 cup finely diced red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon finely grated lime zest

Four 6-ounce halibut fillets

Steps:

  • Using a paring knife, remove the peel and white pith from the orange and tangerine. Working over a large bowl, carefully cut between the membranes to release the citrus segments, allowing them to fall into the bowl along with any juices. Add the avocado, onions, cilantro and lime zest and juice to the bowl with the citrus. Gently toss to mix. Season the salsa with salt and pepper.
  • In a large nonstick skillet, heat the oil over medium-high heat. Sprinkle the halibut liberally with salt and pepper. Add the halibut to the skillet and cook until golden brown and cooked through, 3 to 5 minutes per side. Transfer the halibut to serving plates, top with salsa and serve.

This is a delightfully fresh salsa with a slight kick, that is super tasty with jerk chicken, grilled seafood, quesadillas or warm corn chips (especially blue ones - the colors are fabulous together!). Plus, it is super easy to make! This salsa is fairly mild, although the onion does pack some punch. I like it this way as a contrast to more spicy Mexican or Caribbean dishes, and because it really allows the yummy fruit flavors to shine!! However, you can add some fresh jalapeno or other pepper if you want it more spicy.

4 fresh Halibut steaks, 1-inch thick
1 cup bread crumbs
1 teaspoon oregano leaves

1 1/2 teaspoon granulated garlic (or 1 teaspoon garlic salt)
salt and pepper

Steps:

  • Preheat grill for medium heat. Adjust grate/rack height to between 3-4 inches from heat source. Oil the grill rack well to avoid the fish sticking to the rack. Toss all the ingredients for the Mango Salsa in a medium bowl and let sit for 15 minutes. Meanwhile, combine the bread crumbs, oregano, thyme, paprika, parsley, garlic and salt and pepper in a shallow dish. Dredge each halibut steak in the dry mixture. When all the steaks are breaded, grill the halibut for 5-7 minutes per side or until the fish flakes easily. Do not overcook or the fish will be dry! Top halibut with the mango salsa and serve.

1 teaspoon ground cumin
1/2 teaspoon turmeric
1 pinch saffron thread, crumbled

1 cedar plank (soaked overnight or for at least 1 hour)
2 cups tropical fruit, diced (any combination of mango, papaya, kiwi and pineapple)
