CHOCOLATE CHIP OATMEAL COOKIES

- Set 2 racks in the middle and upper thirds of the oven and preheat to 350 degrees F.
- In a medium bowl, stir the flour, baking powder, baking soda, salt, oats, and pecans together with a whisk or fork.
- In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. With mixer running on medium high, drizzle in the maple syrup, and vanilla until incorporated. Turn the mixer down to its lowest setting and gradually add the flour-oatmeal mixture. Blend just to combine, then mix in the chocolate chips.
- Drop walnut-sized balls of dough onto a nonstick or parchment-lined cookie sheet at 3-inch intervals. With moistened fingers, flatten and round out the cookies a little. Bake for 9 minutes, turning the pan once for even baking. The cookies are done when they are lightly browned on top. Set the cookie sheets on a rack to cool.
OATMEAL CHOCOLATE CHIP COOKIES
Steps:
- Preheat the oven to 300 degrees F.
- Line a sheet pan with parchment paper or a baking mat.
- Put 2 cups of the oats in the food processor and pulverize until finely ground and floury.
- In a mixer fitted with the paddle attachment, cream the butter until soft and smooth. Mix in the brown sugar. Add the eggs and vanilla and mix until well blended.
- In another bowl, stir together both the ground and the whole oatmeal, the baking soda and salt.
- With the mixer running at low speed, add the dry ingredients to the butter mixture and mix until just blended. Add the chocolate chips and mix just until blended. (The cookie dough can be made and kept refrigerated for up to 3 days before baking. Or you can make lumps of dough and freeze them in a locked plastic bag, then take them out for baking a few at a time. Add an extra minute to the baking time.)
- Drop the batter by teaspoonfuls onto the pan, leaving 3 inches between them, as they will spread. Bake until lightly browned, about 13 to 15 minutes. Let cool on the pan, then remove with a spatula.

- 1. Heat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon, baking powder, and salt; add to egg mixture and mix well. Stir in oats, dates, coconut, pecans, and dried cranberries. Mix well with spoon.
- 2. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes, or until golden brown. Cool 1 minutes on cookie sheet; remove to wire rack. Yield: Approximately 4 dozen.
- 3. Glaze: Mix together 1 1/2 cups powdered sugar, 1 to 2 tablespoons of milk (add more if needed for drizzling consistency), 1/2 tsp. of vanilla. Drizzle on top of cookies.

TROPICAL DRIED FRUIT CHOC CHIP COOKIES WITH A CRUNCH
After spotting dried pineapple pieces at the grocery store, I had the idea of baking cookies which were different than the ordinary oatmeal raisin cookie. The rice krispies give them a nice crunch, but they are still chewy and soft with the coconut. Any type of dried fruit can be substituted for the pineapple pieces that I suggest. These cookies are sweet, so you may reduce the amount of sugar used, although I have not tried it. This batter is easily doubled.
