Tropical Lime Parfaits Food

TROPICAL FRUIT PARFAIT

Steps:

• In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
• Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
• Serve immediately garnished with a sprig of fresh mint.

FRUIT GEL PARFAITS

Steps:

• Layer pink cubes, green cubes and whipped cream creatively in tall skinny parfait glasses.
• Get the kids involved in measuring the liquids, squeezing the citrus, cutting the finished gel into cubes, whipping the cream, and layering the parfaits. The combination of pomegranate, lime and cream is delicious!

KEY LIME PARFAITS

Steps:

• Melt butter in heavy small skillet over medium heat. Mix in sugar and stir until bubbling, about 1 minute. Mix in crumbs; stir until color deepens, about 3 minutes. Turn out onto plate and cool.
• Stir condensed milk, lime juice and lime peel in large bowl to blend (mixture will thicken). Using electric mixer, beat cream in medium bowl until firm peaks form; fold into lime mixture.
• Place 1/4 cup lime mousse in each of six 8- to 10-ounce wine goblets. Top each with 1 tablespoon crumb mixture, then 1/4 cup mousse. Top parfaits with remaining crumb mixture. Refrigerate at least 1 hour and up to 4 hours.
