1 can (29 ounces) pumpkin
1 can (12 ounces) evaporated milk
1-1/2 cups sugar
4 large eggs, room temperature
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 package butter recipe golden cake mix (regular size)
1 cup butter, melted
1 cup chopped pecans
Whipped topping, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients; beat on medium speed until smooth. Pour into an ungreased 13x9-in. baking pan. Sprinkle with dry cake mix. Drizzle butter over top; sprinkle with pecans., Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool 1 hour on a wire rack., Refrigerate 3 hours or overnight. Remove from refrigerator 15 minutes before serving. Cut into bars. If desired, serve with whipped topping.

2 cups graham cracker crumbs ((about 15-6 graham crackers))
2 tablespoons packed light brown sugar
Pinch of salt
½ cup unsalted butter (melted)
2 cans (15 ounce) pure pumpkin
2 cans (12 ounce) evaporated milk
4 eggs
1 cup packed light brown sugar
½ cup granulated sugar
2 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon cloves
½ teaspoon salt
Whipped cream for topping (if desired)

Steps:

  • Preheat oven to 350°F. Lightly grease a 9x13 baking dish with cooking spray. Set aside.
  • To make the crust, in a medium bowl, combine graham cracker crumbs, brown sugar, salt, and melted butter. Press firmly into the bottom of the baking dish and bake for 10 minutes. Let cool slightly.
  • To make the filling, in a large bowl, combine pumpkin, evaporated milk, eggs, brown sugar, granulated sugar, cinnamon, ginger, cloves, and salt. Beat until smooth and creamy with an electric hand mixer or stand mixer with fitted paddle attachment.
  • Pour evenly over crust and bake for about 50-60 minutes, or until a toothpick inserted into the center of bars comes out clean. The center should be slightly jiggly.
  • Let cool to room temperature and then refrigerate until ready to serve. Cut into bars and top with whipped cream, if desired.

⅔ cup milk

1/2 cup butter, melted and cooled
3 eggs
1 (16 ounce) can canned pumpkin puree

2 tablespoons sugar
2 tablespoons butter, softened
1 teaspoon ground cinnamon

Steps:

  • Combine cake mix from box, melted butter and one of the eggs; beat until combined.
  • Set aside one cup of the cake-mix mixture.
  • Spread remaining cake mix mixture in an ungreased 13x9-inch baking pan.
  • Press to form an even crust.
