'CHINESE BUFFET' GREEN BEANS
Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

Steps:
- Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

TROPICAL GREENS SALAD
Steps:
- In a small bowl, whisk together the vinegar, orange juice, shallot, salt and pepper. Drizzle in the olive oil, whisking constantly until emulsified.
- In a dry, heavy skillet, toast the pepitas over medium heat for 3 to 5 minutes, or until slightly puffed and golden. Add the soy sauce and stir to mix, then immediately remove from the heat and turn the pepitas out onto a plate to cool.
- Remove any tough stems from the arugula. Scoop out seeds from papaya, slice into eighths and pare off skin. Cut into julienne.
- In a large serving bowl, combine the arugula, papaya, Cabrales, and pomegranate seeds. Drizzle on enough vinaigrette to coat and toss gently. Sprinkle on the toasted pepitas and serve immediately.
ORIENTAL GREEN BEANS
Nice switch for the bean, make it as mild or as hot as you want. You can make this a veggie dish with a Chinese meal but I can assure you it has not seen China

Steps:
- Steam beans for only a few minutes, you want them crisp.
- Dash beans in cold water to stop the cooking (do this the day ahead if you wish) Heat the oils and saute,over low heat, the garlic& ginger until you can smell that wonderful aroma (the garlic will be golden) Add beans, pepper flakes,soy and water.
- Cover cook over high heat for a few minutes until the water evaporates and the oils have coated the beans and they are hot Shake the pan as the beans cook.
- Garnish with sesame seed.

TROPICAL GREEN BEANS (LOW FAT)

- Drain the green beans, and save 1/3 cup of the liquid.
- Combine the liquid, pineapple juice, and vinegar in a saucepan over medium heat.
- Mix the cornstarch, salt and pepper, and then add into the liquid.
- Bring to a boil, and boil for 3-5 minutes, stirring constantly.
- Add the pineapple, beans and butter and serve once heated through.

TROPICAL RED BEANS
During one of our trips to the Caribbean, I had this delightful bean dish and fell in love with the flavor. I was not able to get the recipe from the Chef, so I experimented until I developed this very tasty combination that is very easy and quick to make.

Steps:
- Remove stem ends from tomatoes and discard.
- Add tomatoes (including liquid) to a medium size saucepan or cooking pot.
- Mash tomatoes with a potato masher.
- Add kidney beans (including liquid), coconut milk, chopped parsley, chopped green chili peppers, lemon juice and bring to boil on medium heat.
- Reduce heat to medium-high and cook for about 5 minutes or until beans are softened.
- Add instant potato flakes, stir well and continue to cook for another 3 minutes on medium-high heat.
- Adjust seasonings to taste.
- For a spicier dish, add some cayenne pepper to suit your taste.
