Tropical Fruit Platter with Chocolate Mousse Dip! A delicious mix of freshly cut tropical fruits dipped in a light, airy and decadent chocolate mousse dip. Made by blending cashews, coconut milk, cacao and maple syrup. It's a match made in tropical heaven!

Steps:
- In a blender add soaked cashews (strained), coconut milk, cocoa powder vanilla, maple syrup, almond milk and pinch salt. Blend until smooth. (Optional to add splashes more almond milk to thin -1 teaspoon at a time - if too thick to blend).
- Scoop mousse into bowl, cover and chill in fridge for at least 1 hour.
- Slice up your favourite summer fruits, and decorate onto a serving dish. Divide chocolate mousse between two ramekins for the fruit dip.

- Lop green top off pineapple and place on a cutting board. Slice covering off in strips from the top down. Remove hard pineapple core with a fruit corer or simply by slicing ripe part away from the core. Cut pineapple into wedges. Remove seeds from cantaloupe, watermelon and honeydew and cut ripe part of melon into half moon shapes, or into spheres with a "melon baller," or into any shape you like. Arrange fruit on a platter and garnish with whole strawberries. Can be served with fruit dipping sauce such as yogurt or honey based dressing.
EASY CHOCOLATE DIP
This goes with a recipe for tropical fruit kebabs, but I find it works great with anything needing a chocolate dip. You can use it as fondue, too.
