- In a large bowl, mix the cream cheese, coconut cream and sugar
- Put pineapple chunks in blended and blend until smooth
- Add the pineapple into the cream cheese mixture, stir until well blended
- Taste it, add more sugar if desired
- Cover and refrigerated for 1-2 hours
- Garnish with toasted coconut flakes if you wish

- In a blender add soaked cashews (strained), coconut milk, cocoa powder vanilla, maple syrup, almond milk and pinch salt. Blend until smooth. (Optional to add splashes more almond milk to thin -1 teaspoon at a time - if too thick to blend).
- Scoop mousse into bowl, cover and chill in fridge for at least 1 hour.
- Slice up your favourite summer fruits, and decorate onto a serving dish. Divide chocolate mousse between two ramekins for the fruit dip.

- chop up your pineapple and slice you strawberries. (set aside on a plate or in a bowl)
- open your can of coconut milk, drain the water out of the can so you only have the coconut fat part left. (it's white and creamy)
- in a large bowl put the coconut milk, confectioners powdered sugar and vanilla extract and mix with a hand blender 1-2 minutes until smooth and creamy
- assemble in a cup, glass, jar your choice... layer the fruit and coconut cream dip or layer just the fruits and place the coconut dip in a separate bowl for dipping!
