For my 46th birthday my husband treated me to a one-evening cooking course. It must have been one of the most enjoyable evenings I've ever had. This recipe is from that course. The instructor served this to us before he even began to show us how to cook anything, and it was the perfect start to the whole evening.

30 ml white rum
15 ml passiflora liqueur or 15 ml mango liqueur
15 ml lemon juice
15 ml sugar syrup
crushed ice

Steps:

  • Mix the run, passiflora liqueur, lemon juice and sugar syrup.
  • Add the crushed ice and mix everything in a blender.
  • Serve in a chilled cocktail glass.

2 fluid ounces fresh pineapple-infused gold Barbados rum
1 fluid ounce lime juice
½ fluid ounce orgeat syrup
ice cubes
½ lime slice
1 sprig fresh mint

Steps:

  • Combine Barbados rum, lime juice, orgeat syrup, and ice in a cocktail shaker. Cover and shake until the outside of shaker has frosted. Strain into a coupe glass. Garnish with lime and fresh mint.
