- In a large bowl, cream the butter, shortening and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in extract. , In another bowl, whisk the sour cream, apricot nectar and preserves. Combine the flour, baking powder, salt and baking soda; add to creamed mixture alternately with sour cream mixture. Beat just until blended. Stir in pecans. Beat egg whites until stiff peaks form; fold into batter., Fill paper-lined muffin cups three-fourths full. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, cream the butter, cream cheese and extracts until light and fluffy. Beat in preserves. Gradually beat in confectioners' sugar until blended. , Frost cupcakes; sprinkle with coconut. Garnish with cherries.

- Bake the cupcakes as directed on the box. Set aside to cool completely.
- Make the Ambrosia Salad by thoroughly draining all canned fruits. Mix all ingredients together, cover, and refrigerate.
- Core and Fill Cupcakes: once the cupcakes are cool, core the centers out. There are gadgets you can buy to core cupcakes, best gadget I own to date. (Freeze the cores for future use, such as Trifles.). Fill each cupcake to the top only, do not heap. Return Ambrosia Salad to the frig - the remaining Ambrosia Salad can now be enjoyed as a salad on it's own.
- Frosting: using a mixer, blend the butter and vanilla. Add half the powdered sugar and half the whipping cream. Mix well. Add the remaining ingredients and mix on high for 2-4 minutes. Be sure to scrape the bowl often. Pipe onto the cupcakes completely concealing the filling.
- Toast the Coconut: place on a foil lined pan under the broiler or in a toaster oven. Watch carefully, it cooks fast once it starts to turn brown. Remove from heat and stir as the edges may start to brown faster than the middle. Return to heat until a nice golden brown and remove. Sprinkle on top of cupcakes.

TROPICAL HONEYMOON CUPCAKES
Steps:
- For the coconut cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with cupcake liners.
- Whisk 1/4 cup water, the cream of coconut, coconut extract, vanilla extract, egg whites and egg in a large bowl until combined.
- Mix the flour, shredded coconut, granulated sugar, baking powder and salt in a large bowl with an electric mixer on low speed until combined, about 15 seconds. Add the butter 1 tablespoon at a time, continuing to beat on low speed until the mixture forms a ball, about 2 minutes. Stop the mixer and add half the cream of coconut mixture. Beat on low speed until the flour mixture is moistened, about 15 seconds. Increase the mixer speed to medium and beat until the batter is light and fluffy, about 45 seconds. With the mixer still running, slowly add the remaining cream of coconut mixture. Stop the mixer and scrape the sides and bottom of the bowl. Beat on medium speed for 30 seconds.
- Fill the muffin cups two-thirds full with batter. Bake until a toothpick inserted in centers of cupcakes comes out clean, 18 to 20 minutes. Cool the cupcakes in the pan for 10 minutes. Transfer to a cooling rack to cool completely before filling and frosting.
- For the mango filling: Whisk 1/4 cup juice, egg yolks and cornstarch until smooth in a small bowl. Boil the remaining 1 cup juice, granulated sugar and salt over medium-high heat in a saucepan. Slowly add half the hot liquid to the egg yolk mixture, whisking constantly. Add the egg yolk mixture back into the saucepan and reduce the heat to medium. Cook until the filling thickens and boils, stirring constantly. Strain the filling through a fine mesh sieve. Cool the filling before assembling the cupcakes. Yield: about 1 1/4 cups.
- For the orange cream cheese icing: Beat the cream cheese and butter in a large bowl with an electric mixer at medium speed until creamy. Add the confectioners' sugar, 1/2 cup at a time, to desired consistency. Scrape down the bottom and sides of the bowl as necessary. Beat in the orange zest and vanilla extract until fully incorporated. Yield: 3 cups.
- For the garnish: Generously sprinkle the pineapple with sugar. Use a blow torch to caramelize the pineapple, or broil in the oven on low for 1 to 2 minutes, watching carefully so the sugar does not burn. Cool the pineapple before assembling the cupcakes.
- Cook the sweetened flaked coconut in a dry saute pan over low heat, stirring often, until the coconut browns slightly and smells fragrant. Cool the coconut before assembling the cupcakes.
- To assemble: Dig a small hole inside each of the cupcakes using a teaspoon. Fill each hole with the mango filing. Top with the orange cream cheese icing. Garnish with the caramelized pineapple and toasted coconut.

- PINEAPPLE CURD: Bring juice from canned pineapple to boil. Whisk together eggs, yolk, and sugar in medium bowl. Add to pineapple juice, whisking continuously over medium heat until it becomes thick (3-4 minutes). Take off heat, stir in butter and salt. Pour in small bowl, cover with plastic wrap and refrigerate for 1 hour.
- CAKE: Slice cake horizontally into 3 even layers.
- In a mixing bowl, add vanilla frosting, orange juice and orange zest; stir to combine. Place bottom layer of cake on platter, spread 1/2 of orange frosting on bottom layer, top with mandarin oranges.
- Place another layer of cake on top, spread pineapple curd over this layer and top with 4 slices of pineapple rings cut in 1/2.
- Add third layer of cake, frost all around the sides with rest of orange frosting. Frost top with cream cheese frosting.
- Layer 4 pineapple rings on top, cut into 1/4 and second can of mandarin oranges.Press toasted coconut into sides and on top of cake.

I first tasted this at a local market, I finally asked for the recipe. I make it for all our family get togethers, and they love it. I do not use fruit cocktail cans because the pears & grapes turn brown and make the salad sour and bad!

- Drain pineapple, reserving juice; set pineapple aside.
- In a mixing bowl, whip the heavy cream.
- In seperate bowl, combine pineapple juice and pudding mix and beat on low, or hand whisk for 2 minutes or until thickened.
- Fold in whipped cream.
- Stir in pineapple and 3 Tablespoons of the toasted coconut.
- Transfer to serving bowl.
- Garnish with remaining Tablespoon of toasted coconut, cherries and cherry juice.
- Chill for at least 2 hours.
