DEEP FRIED REUBEN BITES

Inspired by a recent visit to a restaurant. I came home and tried to recreate. It's pretty darn close!! I hope you enjoy them too! cook time is per batch in deep fryer

Ingredients

1/2 cup sauerkraut
1 cup corned beef, finely chopped (I got mine from the deli and whirred it around in my food processor for a few seconds)
3/4 cup swiss cheese, finely grated
1 egg
1/3 cup plain breadcrumbs
thousand island dressing, for dipping
your favorite batter, for deep frying

Steps:

In a small mixing bowl, combine all ingredients well.
Form into small balls, approximately 1" in size.
Roll in flour, and then dip in your favorite batter.
Deep fry until golden brown.

Ingredients

56 Triscuit crackers
1 1/4 cups shredded swiss cheese, divided
1 (8 ounce) can sauerkraut, drained
1/4 lb cooked corned beef, chopped
1 1/2 cups milk
3 large eggs
1/4 cup Dijon mustard (preferably Grey Poupon)
1 tablespoon chopped fresh parsley

Steps:

Preheat oven to 350 degrees F.
Arrange 28 crackers in rows on bottom of greased 13x9 baking dish.
Layer 3/4 cup cheese, sauerkraut, corned beef and remaining cheese over crackers; top with remaining crackers.
Whisk milk, eggs, mustard and parsley in bowl; pour over crackers.
Bake in preheated oven for 40 minutes or until puffed and golden.
Let stand 10 minutes, then cut into squares in between crackers.
Serve warm, with thousand island dressing on the side if you wish.

56 triscuit crackers
1 1/4 c shredded swiss cheese..divided
1 can(s) 8 oz. sauerkraut, drained
1/4 lb corned beef chopped
3 eggs
1 1/2 c milk
1/4 c dijon mustard
1 Tbsp chopped parsley

Steps:

1. Preheat oven to 350
2. arrange 28 crackers in rows in a greased 13 x 9 pan Cover with layers of 3/4 cup of the cheese, the saurkraut, corned beef and then remaining half cup of cheese. Top with remaining crackers
3. Beat eggs, milk, mustard, and parsley with wire whisk until well blended, pour over ingredients in baking dish
4. Bake 40 minutes or until puffed and golden brown.Let stand 10 minutes..Cut into 28 squares, cut between the crackers and serve warm

This is a fun recipe that I found in the April 2001 Ladies Home Journal magazine. It's quick to throw together and is great to munch on while watching football games. We really like spicy, but I have to admit that 4 teaspoons of hot sauce was too much for us. I'm leaving the original amount for those people who have asbestos tongues, but in the future, I will start with 2 teaspoons and then add to taste.

Ingredients

4 ounces boneless skinless chicken breasts, cooked and shredded
4 teaspoons hot sauce
2 tablespoons Dijon mustard
36 garden herb Triscuit crackers
2 tablespoons butter, melted
4 ounces blue cheese, crumbled
2 tablespoons celery, finely chopped

Steps:

Preheat oven to 400ºF.
Mix chicken, hot sauce and mustard.
Spoon about 1 teaspoon mixture on each cracker; place on baking sheet.
Drizzle with melted butter.
Mix blue cheese and celery; spoon about 1/2 teaspoon cheese mixture on each cracker.
Bake at 400ºF for 4 minutes or until cheese melts.
Serve with additional hot sauce.

These are great little appetizers and so easy to make. Prepare in advance and pop in the oven just before serving.

Ingredients

1 loaf rye cocktail bread
1 (16 ounce) can sauerkraut
1/2 lb corned beef, sliced very thin and quartered
1/2 lb swiss cheese, sliced and quartered
thousand island dressing

Steps:

Drain sauerkraut.
Place coctail ryes on cookie sheet in single layer.
Carefully place corn beef on each slice of rye.
Add 1 tablespoon saurerkraut on top of corn beef.
Squeeze a dash of thousand island dressing on top of saurkraut.
Top with swiss cheese.
Preheat oven to 350 degrees.
Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.
